Quick & easy appetizer (the cook time is actually the time to allow the mixture to firm in the frig, longer is better).

Number Of Ingredients 7

8 ounces cream cheese, softened
1 tablespoon lemon juice
2 teaspoons horseradish (prepared, not cream)
1 small onion, minced
1 (15 ounce) can salmon, drained
1/4 cup chopped parsley (I have also done this with finely chopped green onions)
1 cup chopped pecans

Steps:

  • Mix salmon with cream cheese, lemon juice, horseradish, and onion.
  • Refrigerate until firm.
  • Mix parsley and pecans together.
  • Form salmon mixture into a ball.
  • Roll in pecan-parsley mixture.
  • Serve on a plate with your favorite crackers around it.
  • If you are not fond of horseradish, I would cut it down to 1 teaspoons.
  • (I love the taste of horseradish so I usually add more).

Canned salmon is not only cheep but also very healthy and versatile. It can be used for just about anything. I always have several cans in my pantry, just in case.

1 large can pink salmon, drained and cleaned
1 (8) ounce(s) package cream cheese, softened
2 teaspoon(s) prepared horseradish
1 teaspoon(s) fresh lemon juice
1/8 fluid grated onion
1/4 teaspoon(s) salt
1/2 dash(es) pecans, chopped
1/2 cup(s) fresh parsley, chopped

Steps:

  • Mix all the ingredients except the pecans and parsley, thoroughly and make into a ball.
  • Mix the pecans and parsley.
  • Roll the cheese ball in the pecans, parsley mixture.
  • Wrap in plastic wrap and refrigerate for at least 2 hours. Serve with crackers.
