1 egg, beaten
1 can (10-1/2 ounces) condensed French onion soup, undiluted, divided
1/2 cup dry bread crumbs
1/4 teaspoon salt
Pinch pepper
1-1/2 pounds ground beef
1 tablespoon all-purpose flour
1/4 cup water
1/4 cup ketchup
1 teaspoon Worcestershire sauce
1/2 teaspoon prepared mustard
6 cups hot cooked egg noodles
Chopped fresh parsley, optional

Steps:

  • In a large bowl, combine egg, 1/3 cup of soup, bread crumbs, salt and pepper. Add beef; mix gently. Shape into six oval patties. Brown in a skillet over medium heat for 3-4 minutes on each side. Remove and set aside; discard drippings. In the skillet, combine flour and water until smooth; add the ketchup, Worcestershire sauce, mustard and remaining soup; bring to a boil. Cook and stir for 2 minutes. Return patties to skillet. Cover and simmer for 15 minutes or until meat is no longer pink. Serve patties and gravy over noodles. Garnish with parsley if desired.

Onion Gravy
1 large red onions, thinly sliced
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1 1/2 cups low-sodium beef broth
1/4 cup dry red wine (optional)
Salt and pepper
Meat Patties
1/2 pound lean ground beef
1/2 cup bread crumbs
1 egg yolk
1/2 teaspoon salt
1/8 teaspoon pepper
1 clove minced garlic
1 teaspoon Worcestershire sauce
1 1/2 tablespoons chopped parsley
1/4 teaspoon dried thyme
1/2 tablespoon olive oil

Steps:

  • Directions: 1) To make gravy: Heat butter in a large sauté pan. Add onions and cook over medium-high heat, until onions start to brown, stirring occasionally. When onions are slightly softened and turning a deep honey brown, add 1/4 cup broth. Reduce heat, cover and continue cooking, adding more broth as needed to prevent caramelized bits at the bottom of the pan from burning. It should take at least 25 to 30 minutes to properly caramelize onions. Stir in flour and cook for about 2 minutes. Add wine and reduce by half. Stir in remaining beef broth.Simmer for 10 minutes. Add salt and pepper to taste. Reduce heat to low and keep warm. 2) To make patties: Mix ground beef,bread crumbs, egg yolk, salt, pepper, garlic, Worcestershire sauce, parsley and thyme in a bowl. Shape into 4 oval patties about 3/4-inch thick. Heat olive oil in a large nonstick skillet set over medium-high heat. Sear patties about 3 minutes per side, or until a brown crust forms. Pour gravy over patties and simmer for an additional 10 minutes. Serve warm with mashed potatoes or noodles. Yield: 4 Servings.

Steak Patties:
3 lbs ground beef
2 packages powdered onion soup mix (such as Lipton brand)
2 egg yolks
2 tbsp Worcestershire sauce
Mushroom Gravy:
1/2 stick butter
1 lb button mushrooms
1/2 stick butter
3 tbsp flour
2 cups beef stock
1/2 cup heavy cream
2 tbsp Worcestershire sauce
Salt & pepper to taste
Caramelized Onions:
3 yellow onions
2 tbsp butter
2 tbsp white or red wine, vegetable or chicken stock, balsamic vinegar, or water
Salt to taste

Steps:

  • Start by getting the onions caramelizing: Trim the tip and root from the onions, cut them in half and remove the skins. Slice the onion from root to stem into thin slices. Place a skillet over medium heat and melt the butter. Add all the onions to the pan and stir them gently to coat with butter. Cook the onions over the medium heat until caramelized to your liking (usually 30 minutes or so) stirring them every 5-10 minutes. When the onions have finished cooking, pour 1/4 cup wine, broth, balsamic vinegar, or water into the pan and scrape up any drippings and stir it into the onions. Salt the onions to taste. Make the mushroom gravy: Melt ½ stick of butter in a deep skillet and add the mushrooms. Coat the mushrooms in the butter and cook them down over medium-high heat until they are soft and golden. Salt and pepper them to taste and remove from the pan. In the same pan, add the other ½ stick of butter and let it melt over the medium-high heat. Once melted, add the flour and whisk together until a loose paste forms. Cook off the flour flavor for 1 minute. Add the beef stock, heavy cream and Worcestershire sauce to the pan and whisk to incorporate the butter/flour mixture (roux). Raise the heat a tad and continue whisking until the sauce is thickened, about 5-6 minutes. Add the mushrooms and salt and pepper to taste. Reduce heat to low and keep warm, stirring occasionally. Make the steak patties: Preheat the broiler to 500 degrees. Combine the ground beef, onion soup mix, egg yolks and Worcestershire sauce in a large bowl until all ingredients are mixed together very well. Form into patties about 1 inch thick. Place the patties on a broiler pan and broil them close to the heat source for 5-6 minutes per side for a medium cooked temperature. To serve: Place a steak patty on the plate and top with the mushroom gravy followed by a scoop of the caramelized onions. I like to serve these with garlic mashed potatoes and green beans almondine. Yummy!!

1/4 cup safflower oil
1 large onion, grated (about 1 1/3 cups)
2 slices white bread
1/2 cup whole milk
2 pounds ground sirloin
2 garlic cloves, minced (1 1/4 teaspoons)
1 large egg
2 tablespoons chopped flat-leaf parsley
2 teaspoons plus a dash of Worcestershire sauce
Coarse salt and freshly ground black pepper
1 teaspoon cornstarch, plus 1/4 cup for dusting
1 1/2 cups beef broth

Steps:

  • Heat a medium saute pan over medium heat. Add 2 tablespoons oil and 1 cup onion. Reduce heat to medium-low, and cook, stirring occasionally, until onions are golden brown and caramelized, about 35 minutes. Set aside.
  • Soak bread in milk, flipping once. Finely chop. In a large bowl, combine the remaining 1/3 cup onions, the sirloin, garlic cloves, bread, egg, parsley, 2 teaspoons Worcestershire sauce, 2 teaspoons salt, and 1/4 teaspoon pepper. Mix with your hands to combine. Divide meat mixture into 6 oblong patties (about 5 inches long and 3/4 inch thick). Dust with cornstarch.
  • Heat a large skillet over medium-high heat. Add remaining oil, and reduce heat to medium. Cook patties, 3 at a time, for 6 minutes, without moving them. Flip, and cook until cooked through, about 9 minutes. Set aside on a plate. Repeat with remaining patties.
  • Make the gravy: Add cooked onions and 1 teaspoon cornstarch to same skillet, and stir for 1 minute. Raise heat to medium-high. Pour in broth and a dash of Worcestershire sauce, and whisk until broth is clear and slightly thickened, about 3 minutes. Remove pan from heat, and return patties and juices to skillet, spooning sauce on top.
