There are several recipes in the data base for Thai Iced Tea, but none like this one. Nancie McDermott was credited for this recipe found at "Quick & Easy Thai: 70 Everyday Recipes". From her intro: "Sold in 1 lb cellophane-wrapped packets in Asian markets, this finely chopped black tea is spiced w/cinnamon, star anise & vanilla, & then tinged w/a bit of food coloring to create its gorgeous terra-cotta hue. Like Thai coffee, Thai tea is traditionally sweetened well w/sugar as it brews & crowned w/a generous splash of evaporated milk or half-&-half just before serving. You can brew Thai tea in a teapot, drip coffeemaker or French press (making it very strong & adding sugar while the tea is still very hot). Time has been estimated & does not include cool & chill time. Enjoy!

4 1/2 cups water
3/4 cup Thai tea powder
3/4 cup sugar
crushed ice or ice cube, to fill ea glass
1 -1 1/2 cup evaporated milk (3-4 tbsp per glass) or 1 -1 1/2 cup half-and-half cream (3-4 tbsp per glass)

Steps:

  • In a med saucepan over med-heat, bring the water to a boil. Stir in the Thai tea powder & remove from heat. Stir well to mix in the sugar & then let it cool (stirring occ to dissolve sugar).
  • When the tea has cooled to room temp, strain it thru a fine-mesh strainer or coffee filter into a pitcher & chill until serving time.
  • To serve, fill 4-6 tall glasses w/ice & then add about 3/4 cup Thai tea to ea glass. Top off ea glass w/3-4 tbsp evaporated milk. Serve at once, as the evaporated milk cascades over the ice & swirls languidly into the tea.

Entered for ZWT-9, this is the 2nd of 3 recipes from an article at the Eating Well website titled "Healthy Couscous Recipes". Per the recipe intro: "Thin cuts of beef (such as skirt steak or sirloin steak) cook very quickly when seared in a hot skillet -- Just right for a busy weeknight. We love how the spicy Moroccan flavors of the steak compliment the sweet, roasted pepper-studded couscous. Serve w/an Arugula salad & a glass of Pinot Noir." Prep & Cook times were noted as an identical total, but I have allowed an extra 10 min for ingredient assembly. Enjoy!

2 medium bell peppers
1 teaspoon cumin
1 teaspoon coriander
3/4 teaspoon salt
1/2 teaspoon turmeric
1/2 teaspoon cinnamon
1/2 teaspoon black pepper (freshly ground)
1 lemon (Plus more lemon wedges for garnish)
1 teaspoon olive oil (for couscous)
1 tablespoon olive oil (for steak)
2/3 cup whole wheat couscous
1 lb skirt steak (Or sirloin steak, 3/4 to 1-in thick & trimmed)
2 tablespoons green olives (chopped)

Steps:

  • Position oven rack in upper third of oven & preheat broiler.
  • Place bell peppers on a baking sheet & roast under the broiler (turning every 5 min) until charred & softened (10-15 min). Transfer to a clean cutting board. When cool enough to handle, chop peppers into bite-sized pieces.
  • Meanwhile, combine cumin, coriander, salt, turmeric, cinnamon & pepper in a sml bowl. Grate 1/2 tsp zest from the lemon. Juice the lemon into a 1-cup measure & add enough water to make 1 cup. Pour into a sml saucepan & add the lemon zest, 1 tsp of the spice mixture & 1 tsp olive oil. Bring to a boil. Stir in couscous, cover, remove from heat & let stand.
  • Heat the remaining 1 tbsp oil in a lrg skillet over medium heat until shimmering (but not smoking). Rub the remaining spice mixture on both sides of steak. Cook the steak 2 to 3 min per side for med-rare. Let rest on the cutting board for 5 minute Stir olives & the peppers into the couscous. Thinly slice the steak & serve w/the couscous & lemon wedges as desired.

This spiced chutney made with dried fruit like prunes, apricots, figs and raisins comes from Leetal and Ron Arazi, owners of New York Shuk, a food company specializing in Sephardic and Middle Eastern Jewish cuisines. It's delicious served with chicken, beef or lamb, like the Arazis' lamb shanks with caramelized onions.

1 cup prunes
1 cup dried apricots
1 cup quartered dried figs
1 cup raisins
200 grams sugar (about 1 cup)
1 stick cinnamon
1 whole cardamom pod
1 whole allspice berry
Pinch of dried chile flakes
Pinch of salt

Steps:

  • In a wide, shallow saucepan, combine prunes, apricots, figs and raisins. Add 2 cups hot water, and allow to rest for 15 minutes.
  • Add sugar and remaining ingredients. Place over high heat and bring to a boil. Cook, stirring, for 5 minutes. Reduce heat to low and simmer, uncovered, until water has almost completely evaporated, 45 minutes to 1 hour.
  • Discard cinnamon stick and cardamom pod. Allow mixture to cool; if desired, it may be covered and refrigerated for up to 2 weeks.
