Number Of Ingredients 12

Salt
1 pound spaghetti
4 tablespoons EVOO (extra-virgin olive oil)
5 to 6 garlic cloves, finely chopped or grated
2 teaspoons fresh thyme leaves
1 small head of frisée lettuce, stemmed and cleaned (about 2 cups)
2 cups baby arugula
1/2 small head of radicchio, shredded (about 1 cup)
Juice of 1 lemon
1/4 cup grated Parmigiano-Reggiano cheese, a handful
Black pepper
3 tablespoons chopped fresh flat-leaf parsley leaves

Steps:

  • Place a large pot of water over high heat to boil for the pasta. When the water reaches a bubble, salt it and drop in the pasta. Cook to al dente according to the package directions and drain. (Heads up: Save a large mug of starchy cooking water to use when cooking the filling.) Reserve.
  • While the pasta is cooking, place a large skillet over low heat with the EVOO. Add the garlic and thyme to the pan and cook until the garlic is tender and very aromatic, 5 to 6 minutes. Increase the heat to medium-high and add the reserved starchy cooking water and the cooked pasta. Add the frisée, arugula, radicchio, lemon juice, Parmigiano, and a good sprinkle of salt and pepper to the pan and cook, tossing frequently, until the veggies have wilted and the pasta has absorbed the water, 2 to 3 minutes. Sprinkle with the parsley and serve.

1 package (16 ounces) whole wheat spaghetti
1 cup frozen shelled edamame
1 teaspoon minced fresh gingerroot
1 cup reduced-fat sesame ginger salad dressing
3 cups cubed cooked chicken breast
1 English cucumber, chopped
1 medium sweet red pepper, chopped
1 small sweet yellow pepper, chopped
1 small red onion, finely chopped
3 green onions, sliced

Steps:

  • Cook spaghetti according to package directions, adding edamame during the last 5 minutes of cooking. Rinse in cold water and drain well. Meanwhile, stir ginger into salad dressing., In a large bowl, combine spaghetti, chicken, cucumber, peppers and red onion. Add dressing; toss to coat. Sprinkle with green onions.

1 package (7 ounces) spaghetti
1 pound ground beef
1 small onion, chopped
1 can (16 ounces) kidney beans, rinsed and drained
1 can (14-1/2 ounces) no-salt-added diced tomatoes, undrained
1 can (4 ounces) mushroom stems and pieces, drained
1/3 cup water
1 envelope chili seasoning
2 tablespoons grated Parmesan cheese
1/4 cup shredded part-skim mozzarella cheese

Steps:

  • Cook spaghetti according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain., Drain spaghetti; add to beef mixture. Stir in the beans, tomatoes, mushrooms, water, chili seasoning and Parmesan cheese. Cover and simmer for 10 minutes. Sprinkle with mozzarella cheese.

My family loves this salad as either a main meal or a side dish. We especially enjoy making it during the hot summer months, using fresh ingredients right out of our garden. It looks terrific with all the different colors!

12 ounces thin spaghetti
1 cup shredded part-skim mozzarella cheese
1/2 cup diced pepperoni
1/2 cup diced fully cooked ham
1/2 cup chopped green pepper
1/2 cup diced tomato
1/2 cup chopped onion
1/2 cup chopped cucumber
1/4 cup sliced ripe olives
1 avocado, peeled and diced, optional
1 bottle (8 ounces) Italian salad dressing

Steps:

  • In a large saucepan, cook spaghetti according to package directions. Meanwhile in a large salad bowl, add the cheese, pepperoni, ham, green pepper, tomato, onion, cucumber and olives. Add avocado if desired. , Rinse pasta with cold water; drain well. Place on top of salad ingredients. Drizzle with salad dressing: toss lightly to coat. Chill until serving.

1 (16 ounce) can petite diced tomatoes
2 (8 ounce) cans tomato sauce
1/2 cup green olives, with juice
1/2 cup black olives, with juice
1/2 cup sliced mushrooms
8 ounces thin spaghetti noodles
1 lb hamburger meat
2 tablespoons olive oil
4 cups water

Steps:

  • brown hamburger meat & drain.
  • mix in water, diced tomatoes, & tomato sauce.
  • bring to a boil then add olives, noodles, mushrooms & olive oil.
  • turn to medium low heat & let cook for 20-25 minute.

This is an easy recipe similar to chili-mac but made with spaghetti. My son loved it and thought it was a neat concept. He even wanted it for breakfast the next day!

1 (8 ounce) package spaghetti
1 pound ground beef
1 small onion, chopped
2 cloves garlic, minced
1 (15.5 ounce) can kidney beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
1 (4 ounce) can mushroom stems and pieces, drained
⅓ cup water
1 (1.25 ounce) package chili seasoning mix
2 tablespoons grated Parmesan cheese
1 cup shredded sharp Cheddar cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 12 minutes; drain.
  • Heat a large skillet over medium-high heat. Cook and stir beef, onion, and garlic in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir spaghetti into the beef mixture; add kidney beans, diced tomatoes, tomato sauce, mushrooms, water, chili seasoning mix, and Parmesan cheese. Place a cover on the skillet, reduce heat to medium-low, and cook at a simmer until hot, about 10 minutes. Top with Cheddar cheese.
