AUNT RUTH'S APPLE CAKE
Use any apples you like. I have seen my mother make this cake with apples on the verge on rotting. It seems to be the no fail cake recipe! Different apple varieties will vary the taste.

Steps:
- 1. mix all ingredients together. mixture will be dry. they do not have to be added in any certain order
- 2. spray the bottom of a 13X9 pan with cooking oil spray (i.e. Pam)
- 3. Pack mixture in pan
- 4. Bake for 1 hour at 350 degrees. cake will be moist and golden brown. Serve hot or at room temperature with ice cream or whipped cream!

I looooove apple cake. So when this one came to me in a publication from the Bucoda Improvement District, I tagged it immediately. Have not made it yet but certainly have added it to the list.

Steps:
- Preheat oven to 350 degrees.
- Prepare a large bundt or tube pan with a light coating of cooking spray.
- Mix together the apples, sugar and cinnamon and set aside.
- Add all of the ingredients for the batter to a large bowl and mix at medium speed for one minute. Scrape down the sides of the bowl to make sure all ingredients are being incorporated. Mix for an additional 3 minutes.
- Pour one third of the batter into the baking pan. Cover with a layer using 1/2 the seasoned apples. Repeat with another 1/3 of batter and the remaining apples. Finish with the final 1/3 of batter.
- Bake for 90 to 105 minutes. Remove from oven.
- Cool for 10 minutes then invert onto a serving plate.
- While the is cooling (10 minutes), combine all ingredients for the glaze. Drizzle on top of the cake.

Steps:
- Preheat the oven to 350°. Grease and flour a 9-inch springform pan.
- Mix the flour, wheat germ, salt, and baking powder in a bowl and set aside.
- Peel, core, and slice the apples into eighths and place in another bowl. Sprinkle with lemon juice.
- In a third bowl, beat the eggs until foamy. Add the vegetable oil and 1 3/4 cups of the sugar; beat well. Stir in the vanilla.
- To the egg mixture; alternately add the dry ingredients and the orange juice. Pour half the batter into the prepared pan. Cover with half the sliced apples.
- In a small bowl, mix the remaining 1/4 cup sugar with the cinnamon and sprinkle half over the apples. Cover with the remaining batter.
- Starting at the outside of the pan, neatly place the remaining apple slices in overlapping concentric circles. Sprinkle with the remaining cinnamon sugar mixture.
- Put some aluminum foil on the bottom of the oven in case the batter leaks. Bake the cake on the middle rack for 1 1/4 hours, or until a toothpick inserted in the center comes out clean. Cool on a rack before you carefully remove the cake from the pan.
