BAKED NECTARINES WITH GREEK YOGURT AND HONEY
Steps:
- Preheat oven to 375 degrees F.
- Core the nectarines and cut into 8ths. Take 4 (12-inch) pieces of foil and divide the nectarines in the middle of each foil sheet. Drizzle the nectarines with the honey and fold foil over creating a packet. Place packets on a baking sheet and in the oven for 10 minutes. Once nectarines are soft remove the nectarines from the packet. Serve on a 4 plates and top with 1/4 cup Greek yogurt. Drizzle with honey and serve.

- Set oven temp to 350 degrees.
- Remove stones and place cut nectarines on the parchment paper in an oven proof dish or pan facing up. (The parchment may be molded into a black iron skillet, large enough to hold the peaches and may be served straight from the pan.) Drizzle honey, vanilla and sprinkle brown sugar over the top.
- Bake for 15 minutess, scoop up the juices from the bottom of the pan and coat nectarines and bake for an additional 15 minutes or until golden and sticky. Serve with yoghurt, drizzled with honey.

- Preheat oven to 350°. Grease a 9-in. cast-iron skillet., In a large bowl, beat butter and honey until blended. Add eggs, 1 at a time, beating well after each addition. Beat in yogurt and vanilla. In another bowl, whisk flour, baking powder and salt; add to butter mixture. Transfer batter to prepared skillet., Bake until a toothpick inserted in center comes out clean, 30-35 minutes. Cool completely in pan on a wire rack. Serve with fruit, additional honey and, if desired, chopped pistachios., Freeze option: Securely wrap cooled cake in foil; freeze. To use, thaw at room temperature and top as directed.

AMARETTO NECTARINES
This is a recipe I saw on a cooking show but I have "tweeked" it a lot. Everyone who I have made this for rants and raves about it. You can omit the amaretto or substitute another liquor if you like. I sometimes use a soy ice cream substitute for my lactose intolerant friends. If I have them on hand, I throw in a few blueberries or blackberries for color. Very easy recipe with lots of kudos for the cook!!

Steps:
- Cut nectarines in half around the center.
- Dig out pit with a spoon.
- Place cut side up on a baking sheet.
- Drizzle the honey and lime juice over the nectarine edges and in the pit cavity. Bake in a 325 oven for 30-45 minutes depending on the ripeness of the nectarines (check often).
- Remove from oven and place in individual serving bowls.
- Let cool a few minutes.
- Add a scoop of ice cream to each bowl and a splash of amaretto.
- Grate chocolate over top.
- Enjoy!

BAKED NECTARINES (OR PEACHES)

- Cut up nectarines into bite sized pieces. (Figure about 1-1/2 nectarines per person.).
- Place in bottom of baking dish.
- Sprinkle with brown sugar (I usually use no more than a tablespoon per nectarine) and cinnamon (as much as you want).
- Then crush graham crackers over the top, about one whole graham cracker per nectarine.
- Then, randomly place small pads of butter over the top -- you don't need much, but it keeps the top moist.
- Then, bake at 400 for 15 minutes or until desired softness.
- Let it cool for a little bit, then scoop over ice cream.
- You can use peaches instead of nectarines if you can't find them, but I have found that nectarines turn out sweeter and juicier.

- Preheat the oven to 425°. Line a large baking tray with baking paper.
- Place the nectarine halves cut side up on the prepared tray, then drizzle each with a little olive oil and season generously with pepper. Bake for 25-30 minutes until the edges of the fruit are browned and the flesh is cooked through and tender. Remove from the oven and leave to cool.
- Select a large platter and spread the labneh or strained Greek yogurt all over the surface, then arrange the roasted nectarines on top. Drizzle with a little olive oil, season with a little salt and sprinkle over the toasted flaked almonds, followed by the oregano and pul biber. Drizzle all over with the honey and, finally, scatter over the mint ribbons. Take to the table to serve.
BAKED NECTARINES & RASPBERRIES WITH ALMONDS & HONEY

- Mix the wine and honey, and stir to dissolve. Halve and stone the nectarines, and place them, flesh-side up, in a medium ceramic baking dish. Crush the biscuits well, then add the yolk, 2 tbsp of the wine mixture and the flaked almonds. Mix together, then spoon into the nectarines where the stones were. Use all of the mixture.
- Scatter the sugar over the nectarines, then top each mound of biscuit mixture with a little knob of butter. Pour the remaining wine and honey around - but not over - the fruit, add 1 tbsp water, then tuck in the vanilla pod. Can now be chilled for up to 4 hrs.
- Heat oven to 180C/160C fan/gas 4. Bake the nectarines for 30 mins until the fruit is soft and the biscuit filling is crisp and golden. Carefully stir the raspberries through the pan juices, then leave to cool for 15 mins before serving with cream.
