EASY RUSSIAN RYE BREAD (RZHANOVI KHLEB)



Easy Russian Rye Bread (Rzhanovi Khleb) image

This easy Russian rye bread recipe does not require a starter and contains no eggs or oil. Simply made with rye flour, corn syrup, yeast, and water.

2 packages active dry yeast
1 cup warm water (105 to 115F)
1/3 cup dark corn syrup
4 1/2 to 5 1/2 cups dark rye flour (see note below)
2 teaspoons salt

Steps:

  • Gather the ingredients.
  • If you are uncertain about your yeast, proof it before starting. In a large warmed bowl or the warmed bowl of a stand mixer , dissolve yeast in water. Stir in corn syrup and set aside for 5 minutes or until yeast foams.
  • Add 2 1/2 cups dark rye flour and beat with a spoon until smooth. Stir in salt. Cover and let rise about 30 minutes.
  • Add 2 more cups flour, gradually, mixing after each addition. When dough becomes difficult to stir, knead by hand or by machine, adding up to 1 cup additional flour, if needed, until dough is stiff but slightly sticky. Form dough into a ball and place in a clean, dry, warmed bowl (do not coat with cooking spray). Cover and let rise until almost doubled, about 2 1/2 to 3 hours.
  • Punch down dough and, with floured hands, form into a loaf. Place in a 9 x 5-inch loaf pan that has been coated with cooking spray. Cover tightly with plastic wrap and let rise for 1 hour (it probably won't rise above the pan).
  • Preheat oven to 350 F.
  • Bake 30 to 35 minutes or longer or until an instant-read thermometer registers 190 F. (If you've used all rye flour, the top won't brown much, so don't measure doneness by that. Turn out onto a wire rack to cool completely.)
  • Serve and enjoy!

1 1/4 cups raw unsalted nuts (such as walnuts, pecans and/or almonds)
1 cup boiling water, cooled slightly
1 1/4 cups dried fruit (such as cranberries, cherries, raisins and/or chopped figs)
2 cups bread flour
1 cup rye flour
1 teaspoon instant yeast
2 tablespoons molasses
2 tablespoons vegetable oil, plus more as needed
1 1/2 teaspoons kosher salt
Rolled oats, for topping

Steps:

  • Preheat the oven to 350˚ F. Spread the nuts on a baking sheet and bake until lightly toasted, about 10 minutes. Let cool, then roughly chop.
  • Pour the hot water over the dried fruit in a bowl; let soak until softened, about 15 minutes. Drain the fruit, reserving the soaking liquid. Add more water to the liquid to equal 1 cup. Let the liquid cool to room temperature.
  • Stir the bread flour, rye flour and yeast in the bowl of a stand mixer with a wooden spoon. Make a well in the center and add the 1 cup soaking liquid, molasses and vegetable oil. Stir with the spoon until the mixture forms a stiff shaggy ball (there might be some patches of dry flour). Cover the dough with a lightly damp kitchen towel and let sit until the liquid is absorbed, about 20 minutes.
  • Sprinkle the salt evenly on the dough. Knead with the dough hook on medium speed until the dough pulls away from the bowl and is very smooth and elastic, about 7 minutes. With lightly oiled hands, mix the nuts and dried fruit into the dough. Press down on the dough to remove any air pockets. Lightly oil the top. Cover with a lightly damp kitchen towel and let rise at room temperature until doubled in size, about 2 hours.
  • Lightly oil a 9-by-5-inch loaf pan. With oiled hands, gently deflate the dough in the bowl and transfer to the pan, pressing down until smooth and even. Push down and submerge any visible fruit or nuts on the top of the dough to keep them from burning during baking. Cover with a lightly oiled piece of plastic wrap and set aside until the dough rises 1 to 1 1/2 inches above the top of the pan, about 1 1/2 hours.
  • Position a rack in the middle of the oven; preheat to 375˚ F. Brush the top of the loaf with water. Sprinkle some oats on top. Bake until the crust is dark brown and a thermometer inserted into the middle of the bread registers 200˚ F, 35 to 40 minutes (tent the bread with foil if it starts getting too dark). Remove the loaf from the pan and transfer to a rack to cool completely.

Optional but really tasty in this bread is nigella ( ni-JELL-uh ) also known as black onion seeds/kalonji/calonji/ habasoda/ketza/Better known as black caraway. This has a subtle flavor that's often used to enhance vegetable dishes.

1 1/4 cups warm water
2 tablespoons honey, dark
1/4 cup olive oil
3 cups bread flour
1 1/2 cups rye flour
2 teaspoons salt
2 teaspoons fast rising yeast
1/2 tablespoon nigella seeds (black caraway seeds)
1/3 cup dried cranberries
1 tablespoon caraway seed

Steps:

  • Place all ingredients except seeds and cranberries in the bread machine pan in the order suggested by the manufacturer.
  • Select dough cycle and start machine. Add the seeds and caraway when the machine beeps.
  • At end of cycle take dough out and punch dough down; divide into half. Shape each half into a round loaf. Place loaves on greased cookie sheet. Cover; let rise until double, about 1 hour.
  • Preheat oven to 350 degrees F.
  • Brush each loaf with egg. Sprinkle with rye seeds if desired. Bake until loaves are dark brown and sound hollow when tapped, about 1 hour; cool on wire racks.

3 3/4-4 1/4 cups all-purpose flour
1/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 (1/4 ounce) package active dry yeast
3/4 cup milk
1/2 cup butter or 1/2 cup margarine, cut up
3 eggs
1 cup dried sweetened cranberries
1 egg white, beaten
3/4 cup powdered sugar
1/4 teaspoon vanilla extract
1 -2 tablespoon milk

Steps:

  • Combine 1 1/2 cups flour, sugar, salt, cinnamon and yeast in a large mixing bowl; mix well.
  • Combine 3/4 cup milk and butter in a small saucepan; cook over medium heat until very warm (120 to 130°F.). Add warm liquid and eggs to flour mixture; mix on low speed until blended. Beat on medium speed for 3 minutes. Stir in 2 1/4 to 2 3/4 cups additional flour by hand until dough forms and pulls away from side of bowl. Stir in cranberries.
  • Turn dough out onto lightly floured surface. Knead dough for 5 to 6 minutes or until smooth and elastic. Place dough in a lightly oiled bowl and roll it around to coat. Cover and let rise in a warm place until doubled in size, 50 to 60 minutes.
  • Lightly grease a large cookie sheet. Punch down dough; divide into 24 equal pieces. Shape each piece into a smooth ball; place 1 1/2 inches apart on prepared cookie sheet. With scissors, snip a cross in top of each roll. Cover; let rise until doubled in size, 20 to 30 minutes.
  • Heat oven to 375°F Brush rolls with egg white.
  • Bake for 12 to 15 minutes or until rolls are golden brown. Cool slightly. Combine glaze ingredients in a small mixing bowl, adding enough milk for desired consistency. Using a decorating bag or spoon make a cross on top of each roll with glaze.

1 cup warm water
2 packages dry yeast (2 scant Tbs.)
1 cup sour cream
1 tablespoon salt
1/2 cup molasses
1/4 cup sugar
1/4 teaspoon allspice
1/4 teaspoon clove
2 cups fresh cranberries, ground
1/2 cup chopped walnuts
3 cups rye flour
4 1/2-5 cups white flour

Steps:

  • Dissolve yeast in warm water.
  • Add sour cream, salt, molasses, sugar, allspice, cloves, cranberries, walnuts and rye flour.
  • Mix on low speed to blend then mix on medium speed for 5 minutes.
  • Add enough white flour to make a soft dough.
  • Knead for 5 minutes.
  • Place in a greased bowl and let rise until doubled.
  • Punch down and divide in two.
  • Let rest for 10 minutes.
  • Grease two 9" by 5" loaf pans.
  • Shape dough to fit into pans then let rise until double.
  • Bake at 375 degrees for 35 to 40 minutes until deep golden brown.
  • Remove from pans immediately and cool on wire racks.
  • Brush with butter while still warm if desired.
