1 (3.4 ounce) package instant vanilla pudding mix
¼ cup vodka
½ cup coffee-flavored liqueur (such as Kahlua®)
1 (8 ounce) container frozen whipped topping (such as Cool Whip®), thawed

Steps:

  • Beat milk and pudding mix together in a bowl using an electric mixer until pudding is thickened. Stir vodka and coffee-flavored liqueur into pudding; fold in whipped topping. Pipe or spoon pudding mixture into shot glasses. Freeze until ready to serve.

Steps:

1 cup low-fat yogurt or 1 cup mascarpone cheese
1/4 cup brown sugar
mint, for garnish

Steps:

  • Preheat broiler.
  • Divide the berries among 4 individual oven proof dishes.
  • Top each with 1/4 of the yogurt (or mascarpone cheese) and sprinkle with 1 tablespoon of brown sugar.
  • Broil for about 3 minutes or until the sugar melts and caramelizes on the top.

3 large eggs
50 g sugar
500 g Polish twarog (cottage cheese)
120 ml milk
50 g melted butter
4 tbsp semolina or plain flour
100 g blueberries or raisins

Steps:

  • Heat the oven to 180 C. Grease an oven proof dish with butter.
  • Beat eggs with sugar, add twarog, milk, mix well, then add melted butter, fold in semolina or flour, mix well again. Add blueberries or raisings, stir a little. Pour the mixture into the oven proof dish and bake in the oven for 60 min. Let it cool down a bit before serving.

6 tablespoons brown sugar
2 tablespoons butter
1 lemon, juice and zest of
4 tablespoons cornstarch
2 tablespoons sugar
2 1/2 cups milk
1 egg, beaten
ground nutmeg, to garnish

Steps:

  • Place apples in a 9-inch pie plate.
  • Add brown sugar, butter, lemon peel and juice; mix well.
  • Microwave at HIGH for 3 minutes, stirring once.
  • In a small bowl, combine cornstarch and sugar.
  • Gradually add milk stirring well.
  • Microwave at HIGH for 6 to 8 minutes or until thickened, stirring three times.
  • Gradually stir in egg; mix well
  • Pour custard over fruit mixture; mix well.
  • Sprinkle with ground nutmeg.
  • Microwave at 30%(medium-low) for 6 minutes, rotating dish twice.
  • Let stand 5 minutes.

1 c fresh whipped cream, lightly sweetened
30 small chocolate cups or other edible container

Steps:

  • 1. Mix pudding and milk with an electric mixer
  • 2. Add alcohol, and mix well
  • 3. Make whipped cream separately
  • 4. Refrigerate to set pudding
  • 5. Put whipped cream and chocolate pudding into separate pastry bags.

A delicous and healthy fruit pudding that is easy to make. My grandmother passed this recipe to me over 60 years ago, however, I made some adjustments to the recipe. Grandmother made this pudding from the dried fruit that she prepared when the fruit was in season.

1 cup water
1 cup dried cranberries
12 cups water
1 cup dried apricot, quartered
2 cups dried prunes, pitted
1 cup golden seedless raisins
1 cup dried apple
1 cup dried pear
1 cup dried peach
1 cup dried, pitted dates
2 cups granulated sugar
1/4 cup all-purpose flour
1/4 cup whole wheat flour

Steps:

  • In a medium size saucepan, add 1 cup of water and cranberries and cook until tender; mash and set aside.
  • In a large cooking pot, add 12 cups of water, apricots, prunes, raisins, apples, pears, peaches, dates; bring to boil, then reduce heat to simmer, cover and cook for 1 hour or until all fruit is soft; stirring occasionally.
  • Add sugar and mashed cranberries and cook for 5 minutes.
  • Remove 1 cup of liquid from cooked fruit and stir in all-purpose and whole wheat flour to form a smooth, thin paste.
  • Add flour paste to cooking pot and stir until well blended.
  • Reduce heat to low and continue cooking for another 10 minutes, stirring frequently so the fruit does not settle to the bottom of the pot.
  • Remove from heat and let cool before serving.
  • Serve fruit pudding as is.
  • If desired, you can serve with ice-cream or whipping cream.

3 tablespoon(s) butter
3 - egg yolks
1/3 cup(s) confectioners' sugar (powdered)
1/2 teaspoon(s) salt
2 cup(s) all purpose flour
2 cup(s) milk

Steps:

  • In a large bowl, cream 2 Tbsp. of the butter until white. In another bowl mix the egg yolks and confectioners' sugar (do not use granulated!). Stir until the sugar and eggs are white.
  • Combine the butter with the sugar-and-egg mixture. Add the salt. Add the flour in gradually, adding milk as you go. Beat thoroughly. The batter should be medium thick, depending on the type of flour. You may need a little less than 2 cups of milk.
  • In a heavy pan heat the remaining Tbsp. of butter, but don't let it bubble. Pour in the batter. Bake in a preheated 400-degree oven for 10 minutes. Lower heat to 350 degrees and continue baking for 20 minutes more.
