This is fabulously easy and delicious!! My step-mother gave me the recipe from Maryland. The recipe calls for Creamy Russian dressing, well in MN we seem to only have plain Russian dressing. So I add 1/4-1/2 cup of light Mayo to the dressing mix to make it creamy. I have made it without the mayo and it definitely needs it if you cant find the creamy Russian dressing! Served best over Jasmine Rice!

3 -4 chicken breasts
1 (12 ounce) bottle creamy Russian salad dressing (if not creamy Russian, then plain Russian with 1/4-1/2 cup of light Mayo)
8 ounces apricot jam
1 1/4 ounces French onion soup mix
jasmine rice

Steps:

  • Mix the Russian dressing, apricot jelly, (mayo if applicable) and french onion soup.
  • Stir until well combined in separate bowl.
  • Place chicken in glass baking pan.
  • Pour dressing mix over chicken and bake uncovered at 350°F for 40-50 minutes, until chicken is cooked through.
  • Served best over Jasmine rice.
  • Enjoy!

Steps:

  • Melt butter in a large saucepan over medium heat. Add chicken and brown on all sides, about 5 minutes. Add potatoes, carrot, and onion; cook and stir until vegetables begin to soften, 6 to 8 minutes.
  • Stir tomato paste into the saucepan and season with salt and pepper. Pour enough water to cover and continue to simmer until chicken is no longer pink in the center and vegetables are tender, about 15 minutes. Garnish with fresh parsley.

5 slices home style bread, crust trimmed off (4 oz)
1/4 cup milk
2 lbs ground chicken breasts (or 1 lb ground chicken & 1 lb lean finely ground veal)
8 tablespoons unsalted butter, softened (1/4 lb)
3/4 teaspoon salt
1/2 teaspoon white pepper
1 egg, beaten
2 cups fresh breadcrumbs, pulverized in a blender or shredded with a fork
10 tablespoons unsalted butter, cut into small pieces

Steps:

  • Soak bread slices in the milk in a small bowl for 15 minutes, then squeeze the bread dry.
  • Combine the bread with the meat (grind together if you have a meat grinder), and gradually beat in the softened butter, along with the salt& pepper, until the mixture is smooth.
  • Make 6 oval patties from this mixture (about 1 1/2" thick), then dip each in egg and then in the bread crumbs, thoroughly coating both sides.
  • Clarify the remaining 10 tbsp butter by, without letting the butter brown, melting it slowly in a heavy skillet over low heat and skimming off the foam as it rises.
  • Remove the butter from heat and let it sit for 2-3 minutes so they whey can settle out, then spoon off the clear butter and discard the milky solids at the bottom of the pan, and return 6 tbsp of the butter to the skillet.
  • Place over a medium-high heat and when the butter is very hot fry the patties for about 5-6 minutes on each side or until the outside is golden brown and the inside doesn't look pink when pierced with the tip of a knife.
  • Pour remaining clarified butter over the patties and serve immediately.

1 stick butter, softened
1/2 tsp finely shredded lemon peel
1 Tbsp lemon juice
freshly ground black pepper
6 large boneless skinless chicken breasts
1 egg
1 Tbsp water
1 c all purpose flour
2/3 c breadcrumbs

Steps:

  • 1. In a medium bowl, cream the butter till light and fluffy. Add lemon peel, lemon juice, and pepper. Mix thoroughly. Reserve 1/4 cup of the mixture.
  • 2. In a separate bowl, beat egg and water together. Place flour in another bowl, and breadcrumbs in a third bowl. Coat each chicken breast in flour, then dip in egg mixture. Coat with breadcrumbs.
  • 3. Heat the butter mixture, all but 1/4 cup, in a large skillet over medium heat. Add chicken and cook on all sides 10 to 15 minutes, turning gently.
  • 4. Place the chicken and drippings in a 9x13-inch baking dish that has been sprayed with cooking spray. Bake in a preheated 400-degree oven for 15 to 20 minutes. During the last 5 minutes of baking, baste the chicken pieces with 1/4 cup of butter mixture. Serve hot with lemon butter sauce spooned over chicken.

  • Reduce the heat to medium, and melt the remaining butter in the pan. Stir in the garlic, and onion, and cook for 2 minutes, stirring constantly until the onion has begun to soften. Stir in the flour, and continue cooking 5 minutes more. Add the vodka, and bring to a simmer over medium-high heat, stirring constantly. Allow to simmer for 2 minutes, then stir in the tomato paste, chicken broth, salt, pepper, parsley, sour cream, and feta cheese. Reduce heat to medium-low, and simmer 20 to 30 minutes stirring frequently.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour the hot sauce over the chicken breasts, and bake in preheated oven until the top has browned, about 20 minutes.

CHICKEN:
1/4 c butter,softened
2 Tbsp fresh parsley,minced
1/4 tsp dried rosemary
1/8 tsp garlic powder
4 medium chicken breasts, boneless and skinless
3 Tbsp milk
1/4 c fine italian seasoned bread crumbs
1 medium fresh lemon, cut into wedges
round wooden toothpicks
RUSSIAN MUSHROOM SAUCE:
1/4 c butter
1/2 c onions,minced
2 clove garlic, minced
1 lb button mushrooms, thinly sliced
3 Tbsp lemon juice
1 tsp salt and pepper
1 c dairy sour cream
8 oz pkg. fine noodles, cooked and drained

Steps:

  • 1. Preheat oven to 400^. Chicken: Combine margarine, parsley,rosemary,garlic and pepper to taste in a small mixing bowl. Shape margarine mixture into four 2 inch long sticks; freeze until firm. --- Place each chicken breast half between 2 sheets of waxed paper and flatten to 1/4 inch thickness with a meat mallet or rolling pin. Place 1 margarine stick in the center of each chicken breast; fold ends over margarine and roll beginning with long side. Secure each end with wooden toothpicks. Dip rolls into the milk and coat thoroughly with breadcrumbs. --- Bake at 400^ for 25 minutes or until browned. Arrange chicken on a serving platter, spoon juices from pan over the top, garnish with lemon wedges. Serve with cooked noodles, steamed vegetables or cooked rice.
  • 2. Mushroom Sauce: Melt butter in large skillet over medium heat; add onion and garlic and cook 2 minutes. Add mushrooms; sprinkle with lemon juice, salt and pepper. Cool 5 minutes or until mushrooms are tender, stirring occasionally. Remove from heat. Stir in sour cream. Mix half the sauce with noodles. Spoon onto large silver platter. Remove chicken from oven. Remove tooth picks. Arrange chicken on noodles. Garnish with parsley. Serve with remaining sauce.

1 onion, chopped
2 hard-boiled eggs, peeled

1 pomegranate, seeds only, or more to taste

Steps:

  • Place potatoes, beets, and carrots into a large saucepan and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and let cool, at least 15 minutes.
  • Heat oil in a skillet over medium heat. Add onion; cook and stir until softened, about 5 minutes.
  • Peel potatoes, beets, and carrots. Coarsely grate vegetables and eggs into separate, individual bowls. Season with salt and pepper.
  • Place a small glass in the middle of a serving plate. Russian chicken & mushroom pies with soured cream & dill image

Packed with rice, chicken, veggies and a creamy sauce, these Russian-influenced pies are great for using up leftovers

125g long grain rice
50g butter
250g mushroom , roughly chopped
175g oyster mushroom
1 onion , finely chopped
2 garlic cloves , finely chopped
2 tbsp plain flour
300ml milk
425g cooked chicken
juice ½ lemon
150ml pot soured cream
pack dill , finely chopped
375g pack ready-rolled puff pastry
1 egg yolk , to glaze

Steps:

  • Boil the rice in enough water to just cover until the rice is al dente and the liquid has been absorbed - about 10 mins. Season, then set aside.
  • Heat a large frying pan, then add the butter. Once melted, fry the mushrooms and onion until golden. Season, add the garlic, then cook for another couple of mins. Stir in the flour and cook for 1-2 mins, turning the vegetables over in it. Now take the pan off the heat and gradually add the milk, stirring to incorporate every addition before you add any more. Once done, put the pan back on the heat and bring to the boil, stirring all the time as the sauce thickens. Season well and let the sauce simmer so that the flour gets cooked. Stir in the cooked chicken and add the lemon juice, soured cream and dill.
  • Spread the rice in the bottom of 6 buttered individual pie dishes, then spoon the meat and sauce on top. Leave it to cool a little. Roll out the pastry a little and cut to fit your dishes, then pop on top and press the pastry down. Trim off the excess. You can finish the pie crusts by making a long strip of pastry with the leftovers, twisting it like a rope. Moisten the edges of the pastry on the pies with water, then press on the rope of pastry. Otherwise just crimp the edges.
  • Heat oven to 200C/180C fan/gas 6. Make 3 slits in the centre of the pies, then brush the tops with egg yolk. Bake for 10 mins, then turn the heat down to 180C/160C fan/gas 4 and cook for a further 20-25 mins, until the pastry is golden and cooked.

2 slices good-quality white bread, crusts removed
1/4 cup half-and-half
1 lb ground chicken
1 egg
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/2 teaspoon dried dill
5 tablespoons butter, 3 of them at room temperature
1 cup dry breadcrumbs
2 tablespoons cooking oil

Steps:

  • Break the bread into pieces.
  • In a large bowl, soak the bread in the half-and-half until the liquid is absorbed, about 2 minutes.
  • Mix in the chicken, egg, salt, pepper, dill and the 3 tablespoons room-temperature butter.
  • Put in the freezer for about 10 minutes to firm up.
  • Remover the chicken mixture from the freezer; it will still be very soft.
  • Form the mixture into four oval cutlets and coat them with the bread crumbs.
  • In a large nonstick frying pan, heat the remaining 2 tablespoons butter and the oil over moderate heat.
  • Cook the cutlets until golden brown and just done, 4 to 5 minutes per side.
  • Variation for Italian-Style Chicken Cutlets: Omit the dill.
  • Use half bread crumbs, half grated Parmesan cheese to coat the cutlets.

8 tablespoons (1 stick) unsalted butter, room temperature
1 teaspoon dried parsley
1 teaspoon dried tarragon
1 teaspoon kosher salt, plus extra for seasoning chicken
1/4 teaspoon freshly ground black pepper, plus extra for seasoning chicken
4 boneless, skinless chicken breast halves
2 large whole eggs, beaten with 1 teaspoon water
2 cups Japanese bread crumbs ( panko), plus 1/4 cup for filling
Vegetable oil, for frying

Steps:

  • Combine butter, parsley, tarragon, 1 teaspoon salt, and 1/4 teaspoon black pepper in the bowl of a stand mixer. Place mixture on plastic wrap or waxed paper and roll into small log; place in freezer. Place chicken breasts, 1 at a time, between 2 pieces of plastic wrap. Squirt chicken lightly with water and squirt the top of the plastic wrap as well. Pound to no less than 1/8-inch thickness. Season each piece of chicken with salt and pepper.Lay 1 chicken breast on a new piece of plastic wrap and place 1/4 of the compound butter and 1 tablespoon bread crumbs in the center of each breast. Using the plastic wrap to assist, fold in ends of breast and roll breast into a log, completely enclosing the butter; roll very tightly. Repeat with each breast. Place chicken in refrigerator for 2 hours, or up to overnight.Place egg and water mixture in 1 pie pan and 2 cups bread crumbs in a different pie pan. Heat 1/2-inch of vegetable oil in a 12-inch saute pan over medium-high heat until oil reaches 375 degrees F.Dip each breast in the egg mixture and then roll in the bread crumbs. Gently place each breast in oil, sealed-side down, and cook until golden brown, approximately 4 to 5 minutes on each side, until the internal temperature reaches 165 degrees F. Remove to a cooling rack set in sheet pan and allow to drain for 5 to 10 minutes before serving.

A very tender and succulent chicken dish. This recipe was suggested to me by my Russian friend. I modikfied and improvised and added some different spices than the original. It is delicious, and you should try it.

2 lbs boneless skinless chicken breasts (6 chicken halves)
1 cup butter, at room temperature
1/2 teaspoon black pepper
1 teaspoon granulated garlic powder
2 large eggs
3 tablespoons cold water
1/4 teaspoon black pepper
1/4 teaspoon granulated garlic powder
3/4 teaspoon dried dill weed
1/2 cup all-purpose flour
3/4 cup fine dry breadcrumbs or 3/4 cup saltine crumbs
1/2 medium lemon, sliced
1/4 cup finely chopped fresh parsley
2 cups vegetable oil or 2 cups extra virgin olive oil

Steps:

  • Remove all fat from chicken and discard.
  • If chicken breasts are in one piece, split them into two pieces.
  • Place each chicken breast in a large zip-loc bag that has been sprayed with a vegetable oil. Using a mallet, or a small frying pan, carefully pound the chicken until about 1/8 inch thickness. The oil helps the chicken to slide while pounding.
  • DO NOT POUND TOO HARD SO THE CHICKEN BREAKS UP.
  • Place on a dish, cover and set prepared chicken breasts aside.
  • In a small mixing bowl, mix together butter, black pepper, granulated garlic powder and mix to combine well.
  • Form butter into a 2" x 3" rectangular shape on a 6 inch square piece of aluminum foil; thickness should be about 1/4".
  • Place in freezer compartment of refrigerator for about 1/2 hour until butter mixture hardens.
  • Cut butter into 6 equal pieces (1/2" x 3").
  • Place one piece of butter at the front of each prepared chicken breast.
  • Fold in edges just to catch the edges of the butter on each side, then roll the chciken breast to encase the butter completely.
  • This is necessary so that the butter does not run out while deep-frying.
  • Secure chicken rolls with skewers or toothpicks.
  • In a bowl, beat eggs with water.
  • In a separate mixing bowl, mix together black pepper, garlic powder, dill weed and flour.
  • In another separate bowl, measure the bread crumbs.
  • Completely coat each rolled chicken into the flour mixture.
  • Dip flour coated chicken into the egg mixture.
  • Now roll and coat the chicken in the bread crumbs mixture.
  • Place chicken in a shallow dish and chill for about 30 minutes in the refrigerator.
  • In a medium size frying pan, add vegetable oil and heat to medium-high heat.

1 (1 1/4 ounce) package Lipton Onion Soup Mix
1/4 cup white wine

  • Cut chicken into bite-size pieces.
  • Combine all ingredients except the rice in a slow cooker.
  • Set for 8 hours on low.

Oven-fried chicken breasts made delicious and moist by covering the breasts in Russian dressing prior to rolling in bread crumbs.

1/2 cup Russian salad dressing (any brand)
3 minced garlic cloves
4 boneless chicken breasts
1/2 cup panko breadcrumbs
1/4 cup parmesan cheese

Steps:

  • Put the Russian dressing in a bowl. Mix garlic in with the dressing. Place the chicken in the mixture and cover chicken liberally. Use a fork to poke holes in the chicken to allow the mixture to seep into the chicken.
  • Put in the refrigerator for 20 minutes to "meld" :).
  • Mix bread crumbs and cheese in a small bowl. After the 20 minutes are up in the refrigerator, take the chicken out of the Russian dressing mixture, coat the chicken with the bread crumb mixture and place on a baking sheet (slathered with olive oil) or Silpat.
  • Bake at 425 F for 30-35 minutes. Enjoy!

My mother found this recipe in a Russian cookbook. It is a different take on chicken salad, but I find it very nice for lunch or supper. You make the ingredients very chunky so it is not really a sandwich chicken salad but more of a salad.

4 skinless chicken breasts (steamed or boiled and shredded)
2 cucumbers (peeled, chopped)
3 hard-boiled eggs
1 medium onion (chopped)
6 -8 red potatoes (boiled, chopped)
3/4 cup sour cream
3/4 cup mayonnaise
2 tomatoes (cut in wedges)

Steps:

  • Combine chicken breast, cucumber, eggs, onion and potatoes in large bowl.
  • In small bowl combine sour cream and mayo.
  • Blend chicken mixture with the dressing mixture.
  • Place on a couple leaves of Romaine or Boston lettuce and garnish with tomatoes.
  • Enjoy.

4 oz butter (one stick)
1/2 tsp finely shredded lemon peel
1 tbsp lemon juice
freshly ground black pepper, to taste
6 whole large chicken breasts skinned, and boned
1 egg
1 tbsp water
1 cup all purpose flour
2/3 cup breadcrumbs

Steps:

  • In mixing bowl cream the butter till light and fluffy. Add lemon peel, lemon juice, and pepper. Mix thoroughly. Reserve 1/ 4 cup of the mixture. Shape the remaining mixture into 6 sticks; freeze till firm. Place 1 chicken breast at a time and pound to flatten. Sprinkle lightly with a little salt. Place 1 stick of the butter mixture on each breast. Roll up. Seal carefully with wooden picks. Beat egg and water together. Coat chicken lightly with flour; dip in egg mixture, then coat with breadcrumbs. Heat the reserved butter mixture in skillet over medium heat. Add chicken and cook on all sides 10 to 15 minutes, turning gently. Place chicken in a baking dish and bake in 400 degree oven for 15 to 17 minutes. Remove wooden picks. If desired, trim with parsley.
