Steps:
- In a medium saucepan, combine brown sugar and butter. Bring to a boil over medium heat. Reduce heat, and stir in cream and rum; simmer for 4 minutes. Remove from heat, and stir in vanilla. Let cool.
- Store in refrigerator for up to 2 weeks.
PINEAPPLE RUM TOFFEE SAUCE
Steps:
- Combine the pineapple, sugar, cream, butter, vanilla and rum in a heavy saucepan and boil for 3 minutes. Transfer the sauce to sterile jars, cover and let cool. Store the sauce in the refrigerator until ready to use. Warm in a saucepan before serving.
