We tested with Mount Gay rum, made in Barbados since 1703. If you can't find it, just use your favorite gold or amber rum. Be sure to purchase a good-quality, low-sugar ginger ale, such as Fever-Tree, because the kick of spice works in concert with lime to balance the sweetness.

Yield Serves 4 (serving size: about 2/3 cup)

Number Of Ingredients 5

1/4 cup gold rum (such as Mount Gay)
2/3 cup pineapple-coconut juice (such as R. W. Knudsen)
1/4 cup fresh lime juice
6 tablespoons ginger ale
Fresh lime or pineapple slices (optional)

Steps:

  • Combine first 3 ingredients in a large pitcher. Cover, and chill until ready to serve.
  • Divide rum mixture among 4 ice-filled glasses. Stir 1 1/2 tablespoons ginger ale into each serving. Garnish with fresh lime or pineapple slices, if desired.

1 oz. Captain Morgan Original Spiced Rum
.25 oz. triple sec
1 oz. lime juice
. pineapple juice
1 slice lime 2 oz
1 slice pineapple

Steps:

  • Add Captain Morgan Original Spiced Rum, triple sec, lime juice, and pineapple juice in a blender with crushed ice
  • Blend until smooth and pour into glass
  • Garnish with lime slice and pineapple slice
