1/2 cup butter
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
1 (11 ounce) can rotel
1 (12 ounce) bag Doritos
3/4 lb Velveeta cheese

Steps:

  • Saute onions in butter. Add soups & tomatoes.
  • Cube Velveeta, add & simmer until it melts.
  • Add chicken.
  • Crumble Doritos in bottom of casserole (save a few for top of casserole).
  • Add chicken mixture and top with remaining Doritos.
  • Bake at 350 for 30 minutes.

1 bag(s) tortilla chips, crushed
1 can(s) rotel tomatoes, undrained for spicier result, use the hotter rotel
1 can(s) cream of chicken soup
1 can(s) chopped green chiles
1 lb velveeta or american cheese, shredded or cubed in order to melt easier

Steps:

  • 1. Cook and dice your chicken. Mix together your Rotel, Soup, Green Chiles, and cubed Cheese. Heat this mixture in a microwave till melted and then add your chicken.
  • 2. In a casserole pan layer 1/2 your chips and 1/2 your cheese mixture. Repeat these layers and top with a few crushed chips. Bake at 350 degrees until hot and bubbly.

1 (10 3/4 ounce) can condensed cream of mushroom soup

1 (10 ounce) can ro*tel diced tomatoes and green chilies
2 cups cubed cooked chicken
12 corn tortillas, torn into bite-sized pieces
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 325 degrees F. In a large saucepan, cook pepper and onion in melted margarine until tender, about 5 minutes.
  • Add soups, RO*TEL and chicken, stirring until well blended.
  • In a 13 x 9 x 2-inch baking pan, alternately layer tortillas, soup mixture and cheese, repeating for three layers. Bake 40 minutes or until hot and bubbling. Serves 8.

  • Boil chicken breast, reserve broth water. Cool and cut up. In reserved broth, cook pasta, reserve 3/4 of broth water for later. Drain. Saute pepper, onion, and mushrooms in butter. When tender, add velveta until melted. Add rotel tomatoes, chicken and worcestershire sauce. Stir until mixed.

I made this up on the fly tonight, and it ended up surprisingly delicious! The creamy chicken and rice with rotel flavors blend to a tasty treat. I also think this would work great as a cheese-free chicken enchilada filling. Good for one of those nights you need something filling for a few, but not much time for prep!

4 chicken tenderloins
1 can(s) cream of chicken soup
1 can(s) rotel mild
2 c instant rice
1 can(s) water
2 pinch pepper
1 Tbsp italian seasoning
1 tsp garlic powder

Steps:

  • 1. Preheat oven to 375 degrees. Into 8 inch round pan, stir together chicken soup, rotel, water, and rice.
  • 2. Add 4 chicken tenderloins and sprinkle pepper, Italian seasoning, and garlic powder over the top. Stir slightly to settle it into the pan.
  • 3. Place cake pan in center of pizza pan to catch any drips. Bake 35-45 minutes.

5 boneless skinless chicken breasts (or more, if desired)
2 onions, diced
2 carrots, sliced
2 stalks celery, sliced
salt (to taste)
pepper (to taste)
10 cups water (or more)
8 -10 cups broth (or more)
16 ounces spaghetti or 16 ounces vermicelli
2 onions, diced
2 bell peppers, diced or
3 hot bananas, peppers. seeded and diced
olive oil
2 lbs Velveeta cheese
2 (10 ounce) cans Rotel Tomatoes
2 (15 ounce) cans English peas, drained
2 (10 3/4 ounce) cans cream of mushroom soup
1 tablespoon Worcestershire sauce

Steps:

  • Simmer chicken and vegetables for 30 minutes over low heat or until chicken and vegetables are tender.
  • Remove chicken from broth and boil noodles according to package directions in 8 to 10 cups broth. Try to get the onion in the broth. You almost can't have too much onion in this dish. The carrot and celery don't hurt anything, either. When finished, noodles should still be slightly soupy. Add an extra cup or so of broth if they are not.
  • Saute onion and peppers in a little olive oil until tender.
  • Over medium high heat, add Rotel, cream soup, onions, peppers, english peas,and worchestershire to noodles.
  • Reheat and reduce to simmer.
  • Add cubed Velveeta and stir until melted. May bake for 20 to 30 minutes to combine flavors, but this is not essential. We usually eat it right out of the pot.

2 tablespoons taco seasoning mix
10 ounces Rotel Tomatoes, extra hot preferred
2 chicken breast halves, cooked and cubed

12 small corn tortillas
1/4-1/3 cup vegetable oil
2 chicken bouillon cubes
2 cups skim milk
3/4 lb monterey jack cheese, grated
sour cream, and
jalapeno, slices

Steps:

  • Season cubed chicken with taco seasoning. Saute onion and chicken in 1 teaspoon oil until done. Set aside.
  • Soften tortillas in oil and drain well on paper towels. Set aside.
  • In food processor add chicken and onion. Pulse two times. Add rotel tomatoes and pulse twice again.
  • Dissolve bouillon in milk in microwave.
  • Take tortillas and fill generously with chicken mixture along with a little cheddar. Roll up and place in Pam sprayed casserole seam side down.
  • Pour milk mixture over all. Top with monterey jack.
  • Bake at 350 degrees for 30 minutes. If made ahead and refrigerated increase cooking time.

1 large onion, minced
2 garlic cloves, minced
4 cups chicken broth
2 (16 ounce) cans great northern beans, rinsed and drained
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1 (10 1/2 ounce) can Rotel tomatoes & chilies
4 cups baked corn tortilla chips (optional)
1/2 cup shredded reduced-fat sharp cheddar cheese (optional)
sour cream (optional)

Steps:

  • Heat oil in large pot over medium-high heat.
  • Add chicken and cook until no longer pink.
  • Remove chicken and set aside.
  • Add onion and garlic to skillet and cook until tender.
  • Place chicken, onion, and garlic in pot.
  • Add chicken stock, beans, Rotelle tomatoes salt and pepper.
  • Cook about 30 minutes on medium heat or until the chicken is the desired tenderness.

2 c cooked chicken, shredded
3/4 c chicken broth
10 oz diced rotel tomatoes with green chilies
8 oz spaghetti noodles
1 small onion, chopped and sauteed in butter
16 oz velveeta cheese

Steps:

  • 1. Cook chicken your desired method. I used tenderloin pieces cooked in butter and extra virgin olive oil seasoned with spices mentioned above then shredded it. Saute onions in butter. Cook noodles according to directions. Melt Velveeta and Rotel in microwave until smooth. Add cheese/Rotel mixture to cooked noodles along with broth, chicken and onions. Mix well. Place in a greased 9x12 oblong glass casserole dish. Bake at 350 degrees for 20 minutes. Let stand 15-20 minutes before serving.
