GARLIC AND ROSEMARY OVEN FRIES

1/4 cup olive oil
8 garlic cloves, smashed
2 rosemary sprigs, plus additional for garnish
6 small russet potatoes, peeled
1 teaspoon paprika
Kosher salt

Steps:

  • Preheat the oven to 450 degrees F with a large rimmed baking pan inside.
  • Put the olive oil, garlic and rosemary in a small saucepan and warm over medium heat until just starting to bubble. Turn off the heat and let steep 20 minutes. Discard the rosemary sprigs and garlic.
  • While the oil is steeping, cut the potatoes into 1-inch-thick wedges. Put the potatoes in a large bowl and toss with the oil, paprika and 1 teaspoon salt.
  • Carefully remove the baking pan from the oven and spread the potatoes on the hot pan in a single layer. Sprinkle with another pinch of salt and roast until the undersides are golden brown, about 20 minutes. Flip the potatoes and continue to cook until golden brown all over, 15 to 20 minutes more.
  • Serve garnished with a rosemary sprig.

Oh my gosh, these are delicious and so tasty and so easy to make. My sister made these to go with Parmesan crusted chicken and I could not stop eating them!! The recipe is from CDKitchen. Much healthier for you.

2 tablespoons olive oil
1 tablespoon butter, melted
4 medium yams
1/2 teaspoon coarse salt
3 teaspoons dried rosemary (chop the rosemary into smaller pieces if children will shy away from eating the rosemary)

Steps:

  • Preheat oven to 410 degrees and line a few baking sheets with foil for easy clean up.
  • Wash the yams and cut them into wedge-like pieces, lengthwise. Put the wedges into a mixture of the olive oil, salt, butter and rosemary. Bake the wedges for 25-30 minutes and then flip wedges over and bake for another 25-30 minutes. They are ready when "the edges of the wedges" have shriveled and browned on the edges some. The yams' sugar seeps out of the yams and caramelizes naturally when ready.
  • I suggest making a double batch as you will be surprised how fast these get eaten!

LOLA FRIES WITH ROSEMARY

Rosemary on potatoes is so good, and hot crispy fries with rosemary and some sea salt are the best. I think of sea salt the way I do extra-virgin olive oil, as something to finish with. I use Maldon, which has a nice flaky texture.There's no better way to ensure crispy fries than to fry them twice: first at 275 degrees F and then later at 360 degrees F. They crisp up even better on their final cook if they've been thoroughly chilled in the refrigerator. This means you can do the first fry well in advance of serving and pop them in the fridge. When you're ready, the fries take about 5 minutes to finish.

2 pounds russet potatoes
Canola oil or lard, for frying
1 teaspoon finely chopped fresh rosemary
1 teaspoon coarse sea salt

Steps:

  • Peel the potatoes and cut them into long fries about 1/4-inch thick. As you cut them, put them in a bowl of cold water to cover.
  • Pour enough oil into a medium pot so that the oil comes 3 inches up the sides. Heat the oil to 275 degrees F.
  • Drain the fries, rinse them of excess starch under cold water, and pat dry. Working in batches if necessary, cook them in the oil for about 5 minutes; they should be soft and pale. Remove them from the oil using a slotted spoon and rinse under cold water to remove excess oil and starch for a crisper fry later. Reserve the pot of oil.
  • Cover a rimmed baking sheet with paper towels and lay the fries on top. Chill completely in the refrigerator. The potatoes can be prepared this way up to 1 day in advance of cooking them.
  • Heat the oil to 360 degrees F.
  • Add the fries, in batches if necessary, to the oil and cook, stirring gently, until the fries are golden brown, about 5 minutes. Remove them from the oil to a large paper-towel-lined bowl and season them with the rosemary and salt, shaking the bowl to distribute the seasonings evenly.

These quick & easy yam fries are a great alternative to french fries {a big weakness of mine!} & are so easy to make! I served them with turkey burgers...Yum!

1 -2 large yam
grapeseed oil
salt & seasoning

Steps:

  • Preheat oven to 375.
  • Just wash your yams well & cut them into pieces of your desired size, I like them a bit thicker.
  • Toss them in 1 tlbs. oil {you can use others but grapeseed oil is best since it doesn't become toxic once it reaches certain temps like oilve oil may}.
  • Lay them out on a cookie sheet, meaty part facing down & season with kosher salt or I used Mrs. Dash since it's salt-less. Bake for 20 mins or until the thickest pieces are tender!
