1/2 batch Danish pastry
1/2 stick butter
1/2 cup light brown sugar
3/4 cups chopped pecans or walnuts
Cinnamon
Egg wash
Water icing

Steps:

  • Roll dough to a 12 by 20-inch rectangle. Spread with soft butter and sprinkle with brown sugar, pecans, and cinnamon. Roll up from 20-inch side, and cut into 12 pieces. Place pieces, cut side up, in muffin pans lined with paper muffin cups. Proof percent and egg wash. Bake at 375 degrees about 25 minutes. Cool and drizzle with water icing.

Flank Steak with Red Wine Vinegar and Greens image

2 tablespoon extra-virgin olive oil
2 pounds flank steak, cut into 4 equal pieces
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
1/4 cup red wine vinegar
2 tablespoons chopped fresh oregano leaves or 1 teaspoon dried oregano
2 tablespoons unsalted butter
10 ounces (1 bag) Italian salad blend

Steps:

  • Heat the olive oil in a large skillet over medium heat. Season both sides of the steaks with salt and pepper. Cook in 2 batches if necessary. When the oil is hot and shimmering, add the steaks and cook, tuning each once, until seared and rich mahogany, about 6 minutes per side for medium-rare. Transfer the steaks to a plate.
  • Add the garlic to the pan and cook, stirring occasionally, until aromatic, about 1 minute. Pull the skillet from the heat, add the vinegar, and use a wooden spoon to scrape up any brown bits that cling to the pan. Stir in the oregano, butter, and any juices from the steak, until the butter melts. Add the greens to the skillet, season with salt and pepper, and toss until they begin to wilt, about 30 seconds.
  • Slice the meat against the grain into thin slices, divide between 4 plates, top with the greens and the pan juices. Serve.

2 cups rice wine vinegar
1 sprig fresh rosemary
2 strips orange zest
2 cloves garlic

Steps:

  • Pour the rice vinegar through a funnel into a 20-ounce bottle. Gently add the rosemary, orange zest and garlic cloves to the bottle until completely submerged. Add a tight-fitting spout with a rubber stopper. You can use the vinegar right away or refrigerate it for up to 1 month to allow the flavors to marry and infuse the vinegar. The longer the vinegar sits, the more the flavors will infuse.

We love to use this marinade on tri-tip, but it goes well with a variety of meats. Try sprinkling crumbled blue cheese on your finished steak! Marinate your meat for at least 30 minutes.

  • Shake vinegar, 1/4 cup rosemary and 3 garlic cloves in tightly covered glass jar or bottle. Let stand in cool, dry place 10 days.
  • Place 1 sprig rosemary in clear glass bottle. Thread 2 garlic cloves and the chilies alternatly on bamboo skewer; place in bottle.
  • Strain vinegar mixture; pour into bottle. Store at room temperature.

1 cup fresh rosemary leaves plus long sprigs for garnish, rinsed and drained well
8 large garlic cloves, halved
2 cups red-wine vinegar

Steps:

  • In a very clean 1-quart glass jar combine the rosemary leaves, the garlic, and the vinegar and let the mixture steep, covered with the lid, in a cool dark place for at least 4 days and up to 2 weeks, depending on the strength desired. Strain the vinegar through a fine sieve into a glass pitcher, reserving the garlic and discarding the rosemary leaves, and pour it into 2 very clean 1/2-pint glass jars. Add a rosemary sprig and some of the reserved garlic to each jar and seal the jars with the lids.
