Rooibos leaves, which are grown in South Africa, resemble tea leaves but come from a different plant and don't have any tannins. They have recently made an appearance on store shelves here. You can substitute black tea in this recipe; add it during the last 5 minutes of simmering.

4 cups water
2/3 cup whole milk
2 cinnamon sticks
2 teaspoons cardamom pods, lightly crushed
1 teaspoon whole cloves
2 slices fresh ginger, quarter-size, lightly smashed
1/4 teaspoon whole black peppercorn
2 tablespoons sugar
2 tablespoons loose rooibos tea leaves or 2 tablespoons black tea leaves

Steps:

  • Combine all of the ingredients in a large saucepan and bring to a boil over moderate heat. Reduce the heat to moderately low and simmer, stirring occasionally, until pale rust colored, about 20 minutes.
  • Strain the chai through a fine sieve and serve hot.

A delicious spice based chai, with a smooth rooibos base, and a kick of cinamon, giner, cardamom, and piquant red peppercorns. Add a strong hint of coconut, for a slightly exotic twist. Serve stright up, or infused in hot milk for a fabulous chai latte. This is my version of David's Tea's Coco Chai Rooibos Tea.

Number Of Ingredients 7

1 cup rooibos tea
1 -2 cinnamon stick, broken up
1 tablespoon peppercorn, pink
1 tablespoon ginger, dried slices or 1 tablespoon ginger, dried chunks
1 tablespoon cardamom pod, crushed
1 tablespoon coconut, unsweetened
4 -6 cloves (optional)

Steps:

  • Mix all ingredients together, store in a sealed container.
  • To make tea, use 1.5 tsp tea per cup, steep 4-6 min in 100C water.

HOMEMADE CHAI ROOIBOS CONCENTRATE(MADAGASCAR)



Homemade Chai Rooibos Concentrate(Madagascar) image

Smooth Madagascar vanilla is added to rich Rooibos red tea to make a refreshing drink you will enjoy, and no caffeine! Rooibos tea has no tannins so will not get bitter. Adapted from the Nourishing Gourmet.

Number Of Ingredients 9

6 cinnamon sticks
15 cloves
15 allspice berries
5 cardamom pods
15 black peppercorns
1/4 teaspoon dried ginger (more to make it spicy. You can also use fresh ginger. For a spicy version, cut 1 inch of plump ginge)
6 tablespoons of rooibos tea leaves
6 cups water
1 tablespoon pure vanilla extract (from Madagascar)

Steps:

  • Crack the spices (excluding the cinnamon sticks and ginger). You can use a mortar and pestle, or a quick whiz in a coffee grinder.
  • . Add to a medium pot with the cinnamon sticks and ginger and add 6 cups of filtered water.
  • Bring to a boil and lower the heat to maintain a low simmer. Simmer for 15 minutes.
  • Strain. Add the vanilla extract.
  • This concentrate will keep up to 10 days in the refrigerator.
  • To serve, combine and heat with milk of choice(I like almond or coconut) in a 1 to 1 ratio (per serving, generally use 3/4 cup of concentrate to 3/4 cup of milk) and sweetener of choice. Or, if you like, just add to water to make tea.
  • Enjoy!

ROOIBOS CHAI SYRUP(SOUTH AFRICA)

Easy to make and you just add a teaspoon(or more to taste) to hot water for an instant great chai tea. You could actually takeit with you when you go to a restaurant, ask for hot water(or milk) and add your own syrup! From Health Food Lover.

Number Of Ingredients 8

2 tablespoons red rooibos tea leaves
1 tablespoon vanilla extract, split open (or 1 vanilla bean) (optional)
1 cinnamon stick
2 teaspoons cinnamon
1 teaspoon ginger powder
3 cardamom pods, split and crushed
2 cups cold water
1/2 cup raw honey

Steps:

  • To make the chai syrup:.
  • Combine all ingredients in a saucepan and cover with a lid. Simmer on medium-low for 1/2 hour to 1 hour or until the mixture reduces to a syrup(mine was not real syrupy, I simmered 1 hour). Then strain the mixture through a fine sieve (discarding solids) into a clean jar with a lid and store in the refrigerator.
  • How to use the chai syrup:.
  • Simply mix 1 teaspoon to up to 1 tablespoon of the chai syrup into hot milk(I use almond milk) and serve. Or mix in a teaspoon to a tablespoon of the syrup into hot water for a great chai tea.
