ITALIAN HERB BREAD I



Italian Herb Bread I image

This aromatic bread can be served with dinner, or the dough can be used for pizza.

2 (.25 ounce) packages active dry yeast
2 cups warm water (110 degrees F/45 degrees C)
2 tablespoons white sugar
¼ cup olive oil
1 tablespoon salt
1 tablespoon dried basil
1 tablespoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
½ cup grated Romano cheese
6 cups bread flour

Steps:

  • Mix yeast, warm water, and white sugar together in a large bowl. Set aside for five minutes, or until mixture becomes foamy.
  • Stir olive oil, salt, herbs, garlic powder, onion powder, cheese, and 3 cups flour into the yeast mixture. Gradually mix in the next three cups of flour. Dough will be stiff.
  • Knead dough for 5 to 10 minutes, or until it is smooth and rubbery. Place in an oiled bowl, and turn to cover the surface of the dough with oil. Cover with a damp linen dish towel. Allow to rise for one hour, or until the dough has doubled in size.
  • Punch dough down to release all the air. Shape into two loaves. Place loaves on a greased cookie sheet, or into two greased 9 x 5 inch loaf pans. Allow to rise until doubled in size, about a 30 minutes.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes. Remove loaves from pan(s), and let cool on wire racks for at least 15 minutes before slicing.

1 1/8 Cups Milk (lukewarm) (- 259 milliliters)
4 Tablespoons Unsalted Butter ((softened) - 57 grams)
3 Cups Bread Flour ((not all purpose flour) - 360 grams)
1 1/2 Tablespoons White Granulated Sugar (- 19 grams)
1 Tablespoon Italian Herbs Seasoning (- 15 milliliters)
1/2 Teaspoon Onion Powder ((optional) - 2.5 milliliters)
1 Teaspoon Salt (- 5 milliliters)
1 Teaspoon Bread Machine Yeast (- 5 milliliters)
1 1/2 Cups Milk ((lukewarm))
6 Tablespoons Unsalted Butter ((sliced & softened))
4 Cups Bread Flour
2 Tablespoons Sugar
1 1/2 Tablespoons Italian Herb Seasoning
1 Teaspoon Onion Powder ((optional))
1 1/2 Teaspoons Salt

Steps:

  • Bread Machine settings - 1.5 or 2 pound loaf, light color and "basic" bread setting
  • Make sure the bread machine is unplugged and remove the bread pan from the bread machine.
  • Pour the milk into the bread pan and then add the other ingredients (including the Italian herb seasoning). Place the bread machine yeast in last and the yeast should not touch the liquid (until the bread machine is turned on and the ingredients start to be mixed together).
  • Place the bread pan back in the bread machine and plug in the bread machine.
  • Enter the correct settings into your bread machine (i.e. 1.5 or 2 lb, light color & basic setting) and press the "start" button.
  • After the bread machine has finished baking the bread, unplug the bread machine. Remove the bread from the bread pan and place it on a cooling rack. Use oven mitts when removing the bread pan from the bread machine as it will be very hot!
  • In our Sunbeam bread machine, the baking takes about 3 hours for a 2 pound bread (and 2:53 hours for a 1.5 lb bread loaf) at the light color & basic bread settings. However, some machines can differ and you don't want to be away from home when the bread machine "finished" alarm goes off! Your bread machine should show you the length of the baking time after you have entered the settings into the machine. This will allow you to know when to be in the kitchen in order to remove the bread.

A cheesy Italian style bread. Try making the dough in the machine and baking it in a log shape in the oven. When cool make it into garlic bread, Oh Yeah! or anything else that appeals. I used this today for making some great sandwich buns. I made a couple of them round but the rest of the 8 that this recipe made were the longer type buns. When you have great tasting bread anything that you put with it is also marvelous. I made a wonderful tasting sandwich with just a fried egg and some very thinly sliced sweet onion with a small skiff of mayo, some pepper and salt. I find that this bread doesn't rise a lot until you hit it with the baking temp then it pops up like crazy.

This is a HUGE hit at any of our dinner parties when I make it as bread. It's absolutely fabulous as pizza dough and is the single most requested recipe in my repertoire.

1 cup water
2 1/2 tablespoons olive oil
1 1/4 teaspoons salt
2 1/2 tablespoons grated parmesan cheese
2 teaspoons oregano
3 cups bread flour
3 tablespoons nonfat dry milk powder
1 1/2 teaspoons yeast

Steps:

  • Place all ingredients in order in your bread machine using the regular bread cycle.
  • If you want pizza dough, use the"dough" setting and roll out flat on a floured surface.
  • Preheat your oven to 400.
  • Spray your cooking pan with Pam.
  • You can also sprinkle a little cornmeal on the pan if you wish.
  • Lay dough out on your pan and cover with cling film OR apply a little extra olive oil over the surface of the dough.
  • Let rise for 1/2 hour.
  • Bake for 15-20 minutes.
  • Remove from oven, apply toppings and continue baking until toppings are done.
  • If you wish to make a freeform loaf: Preheat oven to 350°F.
  • Form loaf on a prepared baking sheet, cover with cling and let rise until doubled.
  • Bake until golden brown and sounds hollow when thumped (about 30 minutes).
  • Remove to a cooling rack and lightly coat with butter while still hot for a tender crust.

4 cups unbleached all-purpose flour
1 tablespoon light brown sugar
1 ⅓ cups warm water (110 degrees F/45 degrees C)
1 ½ teaspoons salt
1 ½ teaspoons olive oil
1 (.25 ounce) package active dry yeast
1 egg
1 tablespoon water
2 tablespoons cornmeal

Steps:

  • Place flour, brown sugar, warm water, salt, olive oil and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
  • Deflate the dough and turn it out onto a lightly floured surface. Form dough into two loaves. Place the loaves seam side down on a cutting board generously sprinkled with cornmeal. Cover the loaves with a damp cloth and let rise, until doubled in volume about 40 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • In a small bowl, beat together egg and 1 tablespoon water. Brush the risen loaves with egg mixture. Make a single long, quick cut down the center of the loaves with a sharp knife. Gently shake the cutting board to make sure that the loaves are not sticking. If they stick, use a spatula or pastry knife to loosen. Slide the loaves onto a baking sheet with one quick but careful motion.
  • Bake in preheated oven for 30 to 35 minutes, or until loaves sound hollow when tapped on the bottom.
