1/4 cup all-purpose flour
1/4 teaspoon freshly ground pepper
1 pound beef stewing meat, trimmed and cut into inch cubes
5 teaspoons vegetable oil
2 tablespoons red wine vinegar
1 cup red wine
3 1/2 cups beef broth, homemade or low-sodium canned
2 bay leaves
1 medium onion, peeled and chopped
5 medium carrots, peeled and cut into 1/4-inch rounds
2 large baking potatoes, peeled and cut into 3/4-inch cubes
2 teaspoons salt

Steps:

  • Combine the flour and pepper in a bowl, add the beef and toss to coat well. Heat 3 teaspoons of the oil in a large pot. Add the beef a few pieces at a time; do not overcrowd. Cook, turning the pieces until beef is browned on all sides, about 5 minutes per batch; add more oil as needed between batches.
  • Remove the beef from the pot and add the vinegar and wine. Cook over medium-high heat, scraping the pan with a wooden spoon to loosen any browned bits. Add the beef, beef broth and bay leaves. Bring to a boil, then reduce to a slow simmer.
  • Cover and cook, skimming broth from time to time, until the beef is tender, about 1 1/2 hours. Add the onions and carrots and simmer, covered, for 10 minutes. Add the potatoes and simmer until vegetables are tender, about 30 minutes more. Add broth or water if the stew is dry. Season with salt and pepper to taste. Ladle among 4 bowls and serve.

1 lb lean beef
1 tablespoon butter
1 tablespoon olive oil
1/2 lb fresh mushrooms, sliced
1/2 large onion, sliced
2 garlic cloves, minced
1 cup crushed tomatoes in puree
1/2 cup chopped parsley
1/2 teaspoon dried oregano leaves
1/4 teaspoon black pepper
salt
1/2 cup red wine
1/2 cup beef broth
1/2 cup grated parmesan cheese

Steps:

  • Cut meat into 1-in cubes and brown in butter and oil over medium heat using a large pot. Remove.
  • Sauté mushrooms for 3-4 minutes. Remove. Sauté onion and garlic 3-4 minutes. Add tomatoes, parsley and seasonings. Simmer 5-19 minutes.
  • Add wine, broth, and cheese. Simmer 5 minutes longer. Stir in meat and mushrooms.
  • Cover and cook for 1 hour. Add a little water or broth if needed.
  • Good served with either rice cooked in broth or oven-roasted potatoes, broccoli and crisp rolls.

2 lbs rump steak, top rump,cut into cubes
1/2 cup flour, with salt and pepper to taste
1 tablespoon olive oil
6 ounces bacon
1 whole onion, thinly sliced rings
2 cloves garlic, crushed
2 stalks celery
1 teaspoon marjoram
1 cup red wine
1/2 cup beef stock
2 tablespoons tomato paste

Steps:

  • Coat the beef cubes in the seasoned flour.
  • Heat the oil in a large casserole dish.
  • The dish must be flame proof.
  • Add the bacon pieces and fry until they are crisp.
  • Transfer them to kitchen towels to drain.
  • Add the onion, garlic and celery to the casserole and fry until the onion is soft.
  • Add the beef cubes and fry until evenly browned.
  • Stir in the marjoram and bacon, and pour over the wine and stock.
  • Bring to the boil, reduce the heat to low and simmer the stew, uncovered, for 30 minutes.
  • Moisten the meat with a little more stock if it becomes too dry.
  • The stew is done when the beef is tender and the sauce very thick and dark.
  • Serve at once.

2 pounds beef stew meat, cut into 1-inch cubes
1 to 2 tablespoons canola oil
1-1/2 cups chopped onions
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (10-1/2 ounces) condensed beef broth, undiluted
3 tablespoons quick-cooking tapioca
1 garlic clove, minced
1 tablespoon dried parsley flakes
1 teaspoon salt
1/4 teaspoon pepper
1 bay leaf
6 medium carrots, cut into 2-inch pieces
3 medium potatoes, peeled and cut into 2-inch pieces
1 cup sliced celery (1-inch lengths)

Steps:

  • In an oven-safe Dutch oven, brown beef in batches in oil; drain. Return all meat to the pan. Add onions, tomatoes, broth, tapioca, garlic, parsley, salt, pepper and bay leaf. 1 boneless beef chuck roast (2 pounds), cut into 1/2-inch cubes
1 tablespoon canola oil
1 large onion, chopped
5 cups water
1 teaspoon seasoned salt
1/2 teaspoon pepper
2 to 3 teaspoons salt, optional
5 to 6 medium potatoes, peeled and cut into 1/2-inch cubes
5 medium carrots, cut into 1/4-inch slices
1 medium rutabaga, peeled and cut into 1/2-inch cubes
1 cup sliced celery (1/2-inch pieces)
1/2 medium head cabbage, finely sliced
1/4 cup all-purpose flour
3/4 cup cold water
2 teaspoons browning sauce, optional

Steps:

  • In a Dutch oven over medium-high heat, brown meat in oil. Add the onion, water, seasoned salt, pepper and salt if desired; bring to a boil. Reduce heat; cover and simmer for 2 hours. , Add the vegetables; cover and simmer for 30 minutes or until the meat and vegetables are tender. 3 lbs beef stew meat, cut into 1-inch cubes
3 tablespoons olive oil
4 garlic cloves
2 cups celery, sliced
1 medium onion, peeled and sliced
1 teaspoon salt
1 1/4 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1 1/4 teaspoons pepper
1/8 teaspoon ground allspice
1/8 teaspoon ground nutmeg
14 1/2 ounces diced tomatoes, undrained
1/2 cup dry red wine

Steps:

  • In a large skillet, brown the beef in the oil over medium-high heat (do this in batches). Transfer the beef to your slow cooker.
  • Add the garlic ,celery and onion slices to the slow cooker, then sprinkle the salt, cinnamon, cloves, pepper, allspice, and nutmeg over the beef and vegetables.
  • Pour the tomatoes and the wine over the beef and vegetables.
  • Cover the slow cooker, and cook on low for 7 to 8 hours.
  • If you want a thicker sauce, stir in some cornstarch mixed with water at the end of the cooking time.

This rich, comforting stew was brought to The Times by Regina Schrambling in 2001, in the dark days immediately following the attacks on the World Trade Center. The accompanying article was an ode to the therapeutic benefits of cooking and baking: "Whoever said cooking should be entered into with abandon or not at all had it wrong. Going into it when you have no hope is sometimes just what you need to get to a better place. Long before there were antidepressants, there was stew." This one, while complex in flavor, is not difficult to prepare, but it cannot be rushed. Make it when you have the time to indulge in the meditative qualities of chopping, sautéing, reducing, braising, waiting and tasting. You will be rewarded with an exceptionally flavorful dish that is just as satisfying to eat as it was to cook.

1/4 pound salt pork, diced
1 large onion, finely diced
3 shallots, chopped
2 to 4 tablespoons unsalted butter
2 pounds beef chuck, in 1-inch cubes
2 tablespoons all-purpose flour
Kosher salt and black pepper
1/2 cup Cognac
2 cups beef stock
1/2 cup Dijon mustard
4 tablespoons Pommery mustard or other whole-grain Dijon mustard
4 large carrots, peeled and cut into half-moon slices
1/2 pound mushrooms, stemmed, cleaned and quartered
1/4 cup red wine

Steps:

  • Place salt pork in a Dutch oven over low heat, and cook until fat is rendered. Remove solid pieces with a slotted spoon, and discard. Raise heat, and add onion and shallots. Cook until softened but not browned, 10 to 15 minutes. Use a slotted spoon to transfer to a large bowl.
  • If necessary, add 2 tablespoons butter to the pot to augment fat. Dust beef cubes with flour, and season with salt and pepper. Shake off excess flour, and place half the cubes in the pot. Cook over medium-high heat until well browned, almost crusty, on all sides, then transfer to a bowl with onions. Repeat with remaining beef.
  • Add Cognac to the empty pot, and cook, stirring, until the bottom is deglazed and the crust comes loose. Add stock, Dijon mustard and 1 tablespoon Pommery mustard. Whisk to blend, then return meat and onion mixture to pot. Lower heat, partly cover, and simmer gently until meat is very tender, about 1 1/2 hours.
  • Add carrots, and continue simmering for 30 minutes, or until slices are tender. As they cook, heat 2 tablespoons butter in a medium skillet over medium-high, and sauté mushrooms until browned.
  • Stir mushrooms into stew along with remaining mustard and red wine. Simmer 5 minutes, then taste, and adjust seasoning. Serve hot.
