Ginger Chicken Stir-Fry Romaine Wraps With Citrus Soy (Pf Chang) image

Found this on the PF Chang website. I'm hoping it's as tasty as the dishes I've tried at their restaurant. A note on the site said this can also be made with baby shrimp, fish, or beef. Vegetable oil can be used if you don't have soy bean oil.

Yield 8-10 lettuce wraps

Number Of Ingredients 13

1 lb chicken, diced into tiny pieces
3 tablespoons soy bean oil
3 tablespoons fresh ginger, minced
1 tablespoon garlic, minced
1/2 teaspoon dry chili flakes
2 tablespoons soy sauce
1/2 cup fresh orange juice
1 tablespoon fresh lime juice
1 tablespoon fresh lemon juice
1/4 cup soy sauce
1 tablespoon hoisin sauce
2 heads romaine lettuce, cleaned
1 ounce scallion, sliced thin in rings

Steps:

  • Place the chicken in a mixing bowl and add 2 tablespoons soy bean oil, ginger, garlic, chili flakes, and 2 tablespoons soy sauce. Mix together in circular motion until well mixed. Marinate in refrigerator for 2-4 hours.
  • Mix together the citrus juices, soy, and hoisin sauce with a whisk. Reserve until needed. Clean the romaine lettuce, chopping off the stem, peeling each 'spear' and running under clean cold water. Reserve in refrigerator until ready to use. Chop scallions into rings and reserve chilled.
  • Coat a very hot sauté pan lightly with soy bean oil. Sauté the chicken (in a thin layer), searing until crispy and golden brown, about 2 ½ minutes. Once chicken is brown, toss gently in pan and sear another 2 ½ minutes. The pan will appear to "burn", but that is the carmelization and where all the flavor comes from.
  • Add ½ of the citrus soy mixture to the sauté pan and coat well. Let the sauce coat the chicken until it is glazed, and thickens on the chicken. Add more or less depending on how "wet" you want your mixture. Spoon chicken onto a plate.
  • Wrap the chicken mixture onto the romaine lettuce and top with scallion rings. Serve and enjoy!

Number Of Ingredients 12

1 head Romaine Hearts
1-2# chicken breasts, cooked and sliced
1 bunch cilantro
1/3 c pine nuts
3 cloves garlic
1/3 c fresh grated cheese
1/4 c chicken broth
1/2 c oil
1 avocado
2 red roma tomatoes
1 bunch green onions
salt & pepper

Steps:

  • Blend garlic cloves, 1 tsp. salt, cilantro leaves, & pine nuts in a small food processor until you get a creamy texture. Transfer to a bowl & start adding oil while whisking. Bring to desired texture, adding the chicken stock if needed. Finish with salt and pepper to taste. Keep aside. Core and seed tomatoes and cut into strips. Slice green onions and avocado and set aside. Clean romaine and separate lettuce leaves. Mix the chicken with the cilantro pesto. Take a leaf of romaine & put some of the chicken mixture, add avocado slices, tomatoes, onions and top with cheese.

8 oz raw shrimp (weight after shelling and deveining)
3cups sliced romaine lettuce
4 large whole wheat tortillas
Caesar Dressing:
3 tbsp lower-fat mayonnaise
3 anchovies, minced
1 tsp crushed garlic
2 tbsp frehsly squeezed lemon juice
1 tbsp water
3 tbsp grated Parmesan cheese
1 tsp Dijon mustard
1/8 tsp freshly ground black pepp

Steps:

  • 1. Grill or saute the shrimp just until cooked, about 5 minutes. Cool then dice. Place in a bowl. 2. To make the dressing, combine the mayonnaise, anchovies, garlic, lemon juice, water, cheese, mustard, and pepper and whisk until smooth. 3. Add to the shrimp with the lettuce. Divide along the centre of the tortillas. 4. Fold up the bottom of the tortillas, fold in both sides and continue to roll. Cut in half.

This wrap requires you to make the cashew cheese I posted a recipe for in a previous post.

4 - full romaine lettuce leaves
1 cup(s) sprouts
1 - red pepper cut into thin short slices
1 cup(s) cashew cheese (see recipe in previous post)
1 medium cucumber cut into thin short slices
- lemon zest - optional

Steps:

  • Dry off the romaine lettuce leaves with a paper towel. Cut the center vein out of the romain leaves which will leave you with 8 pieces. Spread about 2 tablespoons of the cashew cheese on the leaves. Add a pinch of sprouts and a few slices of freshly sliced red pepper and some cucumber. Roll the leaves up like a burrito and enjoy!
