1 tablespoon finely chopped hot chili pepper
1 tablespoon tamarind paste
1 tablespoon shrimp paste
1 tablespoon oyster sauce
3 tablespoons brown sugar
1/3 cup water

Steps:

  • Place all the ingredients in a small saucepan and mix well, then cook over a low heat until the sugar dissolves and sauce becomes slightly thick.
  • Cool.
  • Then add to salad ingredients and mix well.

1 small jicama, peeled,quartered and thinly sliced (sengkuang)
1 -2 unripe green mango
1 small pineapple, peeled,quartered lengthwise and thinly sliced
1 green apple, quartered,cored and thinly sliced
1 small guava, quartered and thinly sliced (preferably seedless)
1 star fruit, thinly sliced into stars
2 kiwi fruits, peeled and thinly sliced
1 pomegranate, peel and separate seeds
3 tablespoons skinless peanuts, toasted and chopped
1 tablespoon sesame seeds, toasted
1 tablespoon dark soy sauce (sweet)
1 tablespoon light soy sauce
1 tablespoon freshly-squeezed lime juice
1 tablespoon sunflower oil or 1 tablespoon palm oil
3 tablespoons palm sugar, finely chopped (gula melaka)
2 tablespoons white sugar
2 birds eye chiles, finely chopped (cilipadi)

Steps:

  • Soak apple slices for five minutes in a solution of 1 tbsp lime juice mixed with 1 cup water.
  • Layer thinly-sliced fruit into a shallow glass dish, Or you may stack them in layers on individual plates/bowls.
  • Cover and refrigerate until ready to serve (this can be done several hours ahead).
  • Toast peanuts and sesame seeds in 350F oven for 10 minutes, stirring occasionally.
  • To make dressing, combine all the dressing ingredients (apart from the peanuts and sesame seeds) in a small bowl, stirring well.
  • Add the sesame seeds and half the peanuts.
  • Serve in a bowl alongside the salad.
  • The remaining chopped peanuts should be offered as an additional garnish which guests can sprinkle on their salad.

1 mango , slightly under-ripe
1 papaya , not too ripe
1 large tart apple (such as Granny Smith's)
400g prepared pineapple (roughly one small fruit), cut into chunks
½ ridge cucumber , peeled and cut into chunks (available from Waitrose or your local greengrocers)
½ ripe Galia or Ogen melon
30g roasted unsalted peanuts , very roughly chopped
1 tbsp white sesame seeds , lightly toasted
2 tbsp tamarind paste
2 tsp fish sauce (optional)
2 limes , juiced
2 tbsp palm sugar or soft light brown sugar
1 tsp sambal oelek (a chilli paste), or 2 red chillies, deseeded and chopped

Steps:

  • Mix the ingredients for the dressing together. Peel the mango and cut the cheeks from each side of the stone. Remove the rest of the flesh and slice, discarding any squashed or bruised bits (you need firm flesh for this dish). Peel the papaya, halve, deseed and cut the flesh into slices, and do the same with the melon.
  • Peel or leave the skin of the apple intact, whichever you prefer, then halve, core and cut into small chunks, or thin slices. Carefully toss all the fruit together with the dressing (it works best to use your hands). Taste. You may find you need more lime once the dressing is tossed with the fruit. If using this as a relish instead of as a fruit salad, add chopped coriander. Scatter the peanuts and sesame seeds over before serving.

3 -4 large chilies
1 tablespoon palm sugar, grated
1 teaspoon shrimp paste, grated
1/4 teaspoon salt
2 tablespoons tamarind juice
1/2 cup peanuts, coarsely chopped

Steps:

  • Toast shirmp paste on low heat for 1 minute.
  • Blend/process chillies, sugar and belacan to form a paste.
  • Add salt and tamarind juice. Blend briefly.
  • Stir in peanuts.
  • Serve with cucumber, tau kwa (hard bean curd), bean sprouts, green mango or anything really.
