1 tsp Avocado oil ((or any oil of choice))
2 tbsp Taco seasoning ((store-bought or home-made))
8 oz Romaine lettuce ((chopped))
1 1/3 cup Grape tomatoes ((halved))
3/4 cup Cheddar cheese ((shredded))
1 medium Avocado ((cubed))
1/2 cup Green onions ((chopped))
1/3 cup Salsa
1/3 cup Sour cream

Steps:

  • Heat oil in a skillet over high heat. Add ground beef. Stir fry, breaking up the pieces with a spatula, for about 7-10 minutes, until the beef is browned and moisture has evaporated.
  • Stir taco seasoning into the ground beef until well combined. If you like, you can also add 1/4 cup of water when adding the seasoning and let it simmer a bit.
  • Meanwhile, combine all remaining ingredients in a large bowl. Add the ground beef. Toss everything together.

1 pound ground sirloin beef (90% lean)
2 cans (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, divided
1 pkg (1.25 oz each) 30% less sodium taco seasoning mix
1/3 cup water
12 medium taco shells, warmed
3 cups shredded lettuce
1-1/2 cups shredded Cheddar cheese

Steps:

  • 1. Cook beef in large skillet over medium-high heat about 7 minutes or until crumbled and no longer pink, stirring occasionally; drain. Add 1 can undrained tomatoes and seasoning mix; mix well. Gradually add water, stirring until well blended. Bring to a boil. Reduce heat to low; simmer 10 minutes, stirring occasionally.
  • 2. Spoon meat mixture evenly into taco shells; top with lettuce and cheese.
  • 3. Drain remaining can of tomatoes; spoon evenly over tacos.

1 (1.25 ounce) package taco seasoning mix
1 (16 ounce) can chili beans
1 (16 ounce) bottle French dressing
1 head iceberg lettuce
1 (14.5 ounce) package tortilla chips
2 cups shredded Cheddar cheese
1 cup chopped tomatoes
4 tablespoons sour cream
½ cup prepared salsa

Steps:

  • In a large skillet over medium-high heat, brown the ground beef and drain excess fat. Stir in the taco seasoning, chili beans and French-style dressing. Fill the dressing bottle 2/3 full of water and add to the skillet. Bring to a boil, reduce heat and simmer for 15 minutes.
  • Crush the bag of chips, open the bag, and toss the broken chips into a large bowl with the lettuce, cheese and tomatoes. When the meat mixture is done, combine it with the lettuce, tomatoes, chips and mix well. Then, add salsa and sour cream.

1 tablespoon extra-virgin olive oil
4 10-to-12-inch flour tortillas
Kosher salt
1 teaspoon dried minced garlic or garlic flakes
1 teaspoon dried minced onion or onion flakes
1 teaspoon dried oregano
2 teaspoons ground cumin
2 teaspoons chipotle chile powder
3 scallions, finely chopped
4 teaspoons Worcestershire sauce
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
3/4 pound sirloin steak (about 1-inch thick)
1 green bell pepper, thinly sliced
1 large onion, halved and thinly sliced
1/4 cup mayonnaise
2/3 cup buttermilk
1 English cucumber, quartered lengthwise and sliced
2 romaine lettuce hearts, roughly chopped
1 15-ounce can black beans, drained and rinsed
2 2.25-ounce cans sliced black olives, drained
4 ounces cheddar or Monterey Jack cheese (or a combination), shredded
Fresh salsa, for topping

Steps:

  • Make the tortilla bowls: Position a rack in the lower third of the oven; preheat to 450 degrees F. Put 4 empty cans (labels removed) or small ovenproof bowls upside down on a baking sheet. Drape a square of foil over each can and coat with cooking spray.
  • Fill a shallow bowl with 1/2 inch warm water; whisk in the olive oil. Soak each tortilla in the water until soft, about 5 seconds, then drape over the prepared cans, pleating as needed. Bake until golden, about 5 minutes. Remove from the oven and invert the tortilla bowls onto the baking sheet; remove the cans and foil. Spray the inside of the tortilla bowls with cooking spray, season with salt and continue baking until crisp, 4 to 5 more minutes; let cool.
  • Meanwhile, make the steak: Whisk the dried garlic, onion and oregano, the cumin, chile powder, scallions, Worcestershire sauce, olive oil, 1 1/2 teaspoons salt and 1 teaspoon pepper in a bowl. Put the steak in a shallow dish and rub with 2 tablespoons of the spice mixture (reserve the rest for the dressing). Add the bell pepper and sliced onion and toss. Cover and refrigerate 30 minutes or up to 4 hours.
  • Heat a large cast-iron skillet over high heat. Add the steak and scatter the bell pepper and onion around it. Sear the steak about 5 minutes per side, then transfer to a cutting board. Continue cooking the pepper and onion until just tender, about 3 more minutes. Thinly slice the steak against the grain, then cut into 1-inch pieces.
  • Assemble the salad: Whisk the mayonnaise, buttermilk and the reserved spice mixture in a large bowl until smooth. Add the cucumber, lettuce, beans and olives and toss. Divide the salad among the tortilla bowls. Top with the steak, bell pepper, onion, cheese and salsa.

3/4 cup Chermoula Sauce, recipe follows
2 tablespoons sherry vinegar
1/4 cup vegetable juice or tomato sauce
2 poblano chiles
3 tablespoons vegetable oil
12 ounces button mushrooms, quartered
2 cups corn kernels (about 4 ears corn)
3 to 4 cloves garlic, chopped
1 red onion, chopped
1 teaspoon dried Mexican oregano
1 tablespoon chili powder, such as Gebhardt's
Salt and freshly ground black pepper
Salt and freshly ground black pepper
1/2 cup beer
One 15-ounce can diced tomatoes or tomatoes with green chiles
2 romaine hearts or 1 head of iceberg lettuce, chopped
Tortilla Strips, recipe follows
Crumbled queso fresco or shredded sharp white Cheddar
Pickled jalapeno pepper rings or banana pepper rings
Scallions
1/2 cup fresh basil
1/2 cup fresh cilantro
1/4 cup fresh mint
About 1/2 cup EVOO
2 to 3 jalapeno peppers, seeded and coarsely chopped
1 to 2 cloves garlic, grated or chopped
1 shallot, coarsely chopped
Juice of 1 lime
Salt and freshly ground black pepper

8 corn tortillas
Natural nonstick cooking spray
Ground coriander
Ground cumin

Steps:

  • For the dressing: Whisk up the Chermoula Sauce with the vinegar and vegetable juice. Store in the refrigerator until ready to serve.
  • For the taco topping: Char the poblanos over a flame on a gas burners or char under the broiler until the skins are blackened all over. Place the peppers in a bowl. Cover and cool the peppers slightly. Then peel and seed the peppers, and chop. Reserve for later use.
  • Heat the oil over medium-high to high heat, add the mushrooms and brown a few minutes then add the corn and cook until it starts to brown as well, 5 to 7 minutes more. Add the garlic, onions, oregano, chili powder and some salt and pepper. Cook until the onions are tender crisp, couple of minutes, then deglaze pan with the beer. Add the tomatoes and poblanos, and cook to just heat through. Turn off the heat and cool. Store in the refrigerator for a make-ahead meal. Reheat over medium-high heat until just hot through.
  • To serve, line a serving platter, bowl or individual shallow bowls with the lettuce and fill with the warmed salad. Top with Tortilla Strips, cheese, peppers and scallions. Pour the dressing evenly over top and serve.
  • Place the basil, cilantro, mint, EVOO, jalapenos, garlic, shallots, lime juice and some salt and pepper in the food processor and pulse to finely chop, about the same as a loose pesto.
  • Preheat the oven to 400 degrees F. Cut the tortillas in half and then into thin strips, 1/8- to 1/4-inch thick. Spray lightly with the nonstick cooking spray, then season with salt, and sprinkle with some coriander and cumin. Arrange on baking sheets in a single layer and bake until crisp.

1/4 cup chili powder

1 teaspoon ground cumin

1 (28-ounce) can kidney beans
1 (16-ounce) can garbanzo beans
2 (16-ounce) cans pinto beans with jalapenos
2 tomatoes, roughly chopped
2 heads lettuce, shredded
2 cups shredded low-fat cheddar
8 ounces baked tortilla chips
2 cups nonfat mayonnaise
1/2 cup taco sauce
1 teaspoon hot red pepper sauce

Steps:

  • In a large nonstick skillet, heat the oil and cook the onions over medium heat until soft and translucent. Add the ground turkey and cook for about 7 minutes, until the turkey loses its pink color. Use a wooden spoon to break the meat apart while it cooks. Carefully drain off any liquid, then stir in the chili powder, oregano, cumin, and salt, and cook for 1 minute. Add the olives, kidney beans, garbanzos, and pinto beans and mix well. Stir in the tomatoes.
  • In a large serving bowl, combine the lettuce, cheese, and chips. Add the turkey mixture and toss well.
  • In a small bowl, combine the mayonnaise, taco sauce, and hot red pepper sauce. Pass the dressing at the table with the salad.
