ROCK SHRIMP WITH SPICY CREAMY SAUCE

Vegetable oil
1/2 cup real mayonnaise
1/4 cup plus 1 tablespoon heavy whipping cream
2 teaspoons Szechuan seasoning
2 cups tempura batter mix (recommended: Hime)
1 1/2 cups ice water
1 pound rock shrimp*
Endives, for garnish
Crispy onions (recommended: French's Original), for garnish

Steps:

  • Add enough oil in skillet to come 2 inches up the side of the pan. Heat oil to 375 degrees F.
  • In a small mixing bowl, whisk together mayonnaise, heavy cream and Szechuan seasoning.
  • Once oil is heated, in a large bowl combine tempura mix and ice water. Mixture will be thick and lumpy. Working in batches, dip rock shrimp in batter (shaking off any excess) and add to oil. Fry for 2 to 4 minutes or until golden brown. Remove shrimp from oil and drain with a slotted spoon. Make sure oil temperature does not fall below 350 degrees F. Skim oil between batches.
  • In a large bowl toss cooked shrimp in sauce until lightly coated. Serve warm on endive leaves. Top with french-fried onions.

1 tablespoon olive oil
1 tablespoon butter
2 Vidalia onions, chopped
Kosher salt and freshly ground black pepper
2 cups sour cream
1/2 cup mayonnaise
Dash hot sauce
1 1/2 teaspoons garlic powder
1/4 cup finely chopped chives
Shrimp Hushpuppies, for serving, recipe follows
1 cup yellow cornmeal
3/4 cup self-rising flour
1 teaspoon kosher salt
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
1/2 small onion, grated
1/4 cup chives, chopped
1/2 pound cooked shrimp, cleaned and tails removed, chopped
1 cup buttermilk
1 egg, beaten
1/4 cup cheddar cheese, grated
Peanut oil, for frying

Steps:

  • Add the olive oil and butter to a large saute pan over medium heat. Add the onions and saute until caramelized, about 20 to 25 minutes. Season with salt and pepper, to taste. Remove from the heat and allow the onions to cool.
  • Blend the sour cream, mayonnaise, hot sauce, garlic powder, and chives together in a medium bowl. Add the onions and stir well to blend. Taste for seasonings. Refrigerate until ready to serve.
  • *Cook's Note: This dip is best made the night before, so the flavors have time to meld.
  • Preheat oil in a deep-fryer or Dutch oven to 350 degrees F.
  • Mix all ingredients in a large bowl. Drop heaping tablespoon-sized amounts of the mixture into the hot oil. Fry in batches for 2 to 3 minutes each. Remove from the oil to paper towels to drain and season immediately with salt and pepper Transfer to a serving platter or bowl and serve with the onion dip.

SKINNY CRISPY ROCK SHRIMP

This recipe is a skinnier version of Nobu's famous fried rock shrimp appetizer that's typically fried and doused in a creamy spicy mayo-based sauce. My version is baked and uses Greek yogurt, sriracha and sesame oil to create a healthier, yet still drool-worthy copycat!

1 lb. frozen rock shrimp (I used pre-coated "Boom Boom Shrimp" by Royal Asia, found at Whole Foods)
1 tsp. paprika
1 tsp. kosher salt
1 tsp. pepper
cooking spray
½ cup greek yogurt (I used 2%)
2 tsp. sriracha sauce (or chili garlic sauce)
1 tbsp. sesame oil
¼ lemon (juice only)
1 egg yolk
¾ cup iced water
½ cup all purpose or gluten free all purpose flour
1 cup panko bread crumbs

Steps:

  • Preheat oven to 400 degrees.
  • If making tempura batter, whisk all ingredients together well.
  • For tempura shrimp: In a bowl, place dethawed rock shrimp and toss with paprika, salt and pepper. Then place shrimp into tempura batter and toss. In another bowl, place panko bread crumbs. With tongs, take a few battered rock shrimp and place into the crumbs to coat. On a sheet pan sprayed well with cooking spray, arrange shrimp into one even layer.For pre-coated shrimp: In a bowl, spray frozen shrimp well with cooking spray. Toss coated rock shrimp with paprika, salt and pepper. On a sheet pan sprayed well with cooking spray, arrange shrimp into one even layer.
  • Meanwhile, in a large bowl mix together ingredients for the creamy spicy sauce, whisking in the sesame oil. Set aside.
  • After 10 minutes in the oven, remove sheet pan and using tongs, flip over each shrimp. Bake for another 10 minutes.
  • After another 10 minutes in the oven, remove shrimp from pan and gently place into the large bowl with the creamy sauce. Toss carefully to coat. Top with green onions and serve immediately!

• 1 c. yellow cornmeal
• 3/4 c. self rising flour
• 1 tsp. salt
• 1 tsp. cayenne pepper
• 1/2 tsp. paprika
• 2 tbsp. sugar
• 1 tsp. onion powder
• 1 small sweet Vidalia onion, minced
• 3 stalks celery, minced
• 1/4 c. chives, minced
• 7 oz. cooked deveined shrimp
• 1 c. milk
• 1 egg
• Peanut or Canola oil for frying
• salt and pepper to taste

Steps:

  • Cut the shrimp into small pieces and place on a plate or leave on cutting board. Season with salt and pepper and set aside so the flavor can seep in.
  • Meanwhile, add the corm meal, flour, salt, cayenne, paprika, and whisk together. Add the milk and the egg and stir. Now add the onions, celery, chives, and shrimp and stir in with a wooden spoon. The batter should be thick.
  • Preheat the oil to 350 degrees. Once the oil is ready, use a mini cookie scooper and scoop some of the batter in the spoon and into the hot oil. Allow to cook for 3-5 minutes or until golden brown and turn to a plate lined with paper towels to absorb the excess oil. Sprinkle with a little seasoned salt, if you have it. When ready, eat!

1 clove garlic, mashed
1 tablespoon peppercorn
1 tablespoon chili flakes
1 tablespoon smoked paprika

Oil for deep-frying
2 cups of cornstarch (Recommended: Maizena)
1/2 cup flour
Salt and freshly ground pepper
4 eggs, beaten
2 pounds of rock shrimp
Lemon wedges

Steps:

  • Chuck Hughes' golden popcorn rock shrimp served with spicy honey are the perfect game day appetizer.
  • For the spicy honey: In a saucepan, on medium heat, bring the honey, garlic, peppercorn, chili flakes, smoked paprika, and salt to a boil and let simmer for 2 minutes. Let cool, strain and transfer to a squeezable bottle. Keep aside.
  • For the popcorn shrimp: Preheat the deep-fat fryer to 360 degrees F.
  • In a bowl, mix together the cornstarch, flour, salt and pepper. Place the eggs in a bowl add the shrimp and coat. Remove the shrimp, letting the excess egg drip back into the bowl, then add the shrimp to the cornstarch mixture. Gently add to the fryer, turning until golden. Drain on paper towels and season with salt and pepper.
  • Serve immediately after frying and drizzle with the spicy honey and garnish with lemon wedges.

1 large egg, beaten
2 scallions, finely chopped
Vegetable oil for frying

Steps:

  • Using a fine-meshed sieve over a large bowl, sift together the cornmeal, flour, sugar, baking powder, baking soda, salt, and cayenne. Using a rubber spatula, stir in the buttermilk, egg, and scallions, until a batter is formed. (Take care not to over-mix the batter or the hushpuppies will be dense.)
  • Pour the oil for frying into a large heavy-bottomed pot to a depth of 2 inches. Place over medium heat and heat to 375 degrees F. Working in small batches, using a greased teaspoon, drop spoonfuls of batter into the oil, turning once, frying until golden brown and cooked through, about 4 minutes per batch. Using a slotted spoon, transfer the hushpuppies to a paper towel-lined plate and sprinkle with salt. Serve immediately.
  • Cook's Note: Using a greased spoon (vegetable oil spray works well) helps to release the batter from the spoon. Additionally, if you drop the batter off of the tip of the spoon it will form ball shapes; if dropped off the side it will form oblong shapes.

Steps:
