ROASTED VEGETABLE GRILLED CHEESE SANDWICH



Roasted Vegetable Grilled Cheese Sandwich image

This gourmet grilled cheese combines multiple cheeses with oven roasted vegetables to create the best grilled cheese ever!

4 slices Multi-Grain bread
1/3 cup brussels sprouts (sliced thinly)
1/3 cup asparagus (cut in 1 inch pieces)
1/3 cup mushrooms (sliced thinly)
1/3 cup fresh spinach leaves
2 Tbsp roasted red peppers (diced)
2 oz goat cheese
1 Tbsp low fat cream cheese
1 Tbsp low fat mayonnaise
1 Tbsp olive oil
butter
1/2 tsp salt
1/2 tsp pepper

Steps:

  • Preheat your oven to 350 degrees. On a baking sheet, spread asparagus, brussels sprouts, and mushrooms. Drizzle olive oil over the top, and then sprinkle the salt and pepper over the top as well. Using your hands, mix everything together; coating evenly. Place in oven and roast for 20 minutes, mixing veggies after 10 minutes. Remove from oven, set aside.
  • While roasting the veggies, prepare your goat cheese spread: in a microwave safe bowl place goat cheese, cream cheese, and mayo, microwave for 30 seconds. Remove and mix with a fork until completely mixed together.
  • Spread butter on one side of each slice of bread (this buttered side will be on the outside of the sandwich). On the unbuttered sides, spread goat cheese mixture (all slices). Then top on top of the goat cheese mixture, add half of the roasted veggies and half of the spinach. Top with the other slice of bread, so that the veggies are enclosed with goat cheese mixture and the butter is on the outside of the sandwich. Repeat for second sandwich.
  • In a large skillet over medium heat, add the sandwiches. Cook for 3-5 minutes on the first side, or until browned and crisp (watch closely because this will depend on your heat level- do not cook on high heat, slower is better when it comes to grilled cheese). Once browned, carefully flip the sandwich over with a spatula, and cook for 2-3 minutes on the other side, or until browned. Cut in half and serve immediately.

Fresh Dates With Brie image

Not quite sure this is a recipe.....but it sure is a wonderful way to enjoy your dates and Brie Cheese! We can get the most wonderful fresh dates from nearby markets and I usually add them to my cheeseboard. you can really use most soft cheeses with your dates....Brie is just my fave. You can prepare some as a snack and as optional extras...drizzle them with honey and add in some crushed walnuts or pecans with the cheese

18 -20 fresh dates
125 g brie cheese

Steps:

  • Remove seeds from the dates.
  • Cut through the dates on one side and open them up. Remove the seeds.(Dont cut all of the way through).
  • Cut Brie into small wedges and fill the dates. CLose the dates back over.
  • Enjoy!

3 slices marbled rye bread, toasted
4 slices swiss cheese
2 tablespoons cream cheese, softened
2 tablespoons guacamole
1 cup assorted vegetables (cucumbers, peppers, mushrooms, red onions, eggplant, tomatoes, etc.)
1/2 teaspoon herbs (fresh chives, basil, thyme or marjoram)
1 bunch alfalfa sprout

Steps:

  • Combine softened cream cheese with the herbs and spread on one piece of the toast.
  • Lay a single layer of veggies, such as cucumber, on top the cream cheese, followed by another layer of veggies.
  • I usually layer mushroom on the cucumber.
  • Top with two slices of Swiss cheese, followed by the next slice of toast.
  • Add another two layers of veggies, tomato and red onion are excellent, two more slices of swiss cheese, and top with sprouts.
  • Spread the guacamole on the final piece of toast to form a triple layer sandwich and serve.

2 slices sourdough bread (or bread of your choice)
1 ounce brie cheese, room temperature
1 tablespoon baked cranberry sauce (try Baked Cranberry Sauce)
1 tablespoon butter, softened

Steps:

  • Softened butter works best on a grilled cheese. Just let it sit out and then smear it all over the bread. You only need to butter one side of each slice. This is the side that will be grilled.
  • Smear the brie and roasted cranberries onto the side of the bread that is not buttered. And sandwich it with another buttered slice(with butter on the outside). All this butter and cheese is making me hungry!
  • In my opinion, a grilled cheese sandwich is best done in a iron skillet. You don't need it to be very hot. Turn the stove to a medium-high heat, and once the skillet is warmed, add the sandwich. Let it sit for two minutes and then flip it. It should come out perfect every time!
