FIRE-ROASTED TOMATO, MUSHROOM AND SHRIMP BISQUE

Fire-Roasted Tomato, Mushroom and Shrimp Bisque image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 1h45m

Yield 8 servings

Number Of Ingredients 15

8 plum tomatoes, halved and seeds removed
2 tablespoons grapeseed oil, divided
1 quart chicken stock
1/2 pound (16/20-size) shrimp, deveined, divided
2 tablespoons butter
1 white onion, diced
2 cloves garlic, lightly crushed with the side of a knife blade, and quartered
1 cup white mushrooms, cleaned, trimmed and sliced (about 3 ounces)
1 cup white rice
1 tablespoon all-purpose seasoning (recommended: Old Bay)
2 cups heavy cream
Salt and freshly ground black pepper
1 tablespoon minced fresh cilantro leaves
1 tablespoon minced fresh mint leaves
2 or 3 slices French bread or garlic bread, toasted and cut into croutons

Steps:

  • Preheat oven to 400 degrees F.
  • Place tomatoes cut-side down on a baking sheet lined with foil for easy cleanup and brush skin with 1 tablespoon of the grapeseed oil, reserving the rest of the oil. Roast tomatoes until charred, about 15 minutes, remove from oven and place in plastic bags to sweat. This will help make it easier to remove the skin.
  • Heat chicken stock in a medium saucepot over medium heat. Peel shrimp and add shells to the pot, reserving the shrimp. Bring the pot of stock and shells to a boil, skimming any impurities which rise to the surface.
  • In a large stockpot, heat the remaining grapeseed oil over medium heat and melt the butter in it, and saute onions and garlic until onions turn translucent. Add the mushrooms and cook until they begin to soften and give up their juices. Strain the chicken stock into the stockpot with the onions and mushrooms and discard the shrimp shells. Remove skin from the roasted tomatoes and add them to the pot. Add the white rice and all-purpose seasoning, bring to a gentle boil, reduce heat to low, cover and let simmer 20 minutes.
  • Chop most of the shrimp, small dice, reserving about 8 whole shrimp. Stir chopped shrimp into pot and add whole shrimp last, without stirring in the whole shrimp. Cover pot and let cook for 5 more minutes. Remove from heat and scoop out whole shrimp and transfer to a utility plate and cover to keep warm. Stir heavy cream into pot and puree with an immersion blender and season with salt and pepper. Spoon into soup bowls and garnish with whole shrimp topped with cilantro and mint. Serve with croutons.

ROASTED YELLOW PEAR TOMATO, YELLOW PEPPER AND BASIL BISQUE

Roasted Yellow Pear Tomato, Yellow Pepper and Basil Bisque image

I realize not everyone can get those little yellow cherry or pear tomatoes. But if you can ... they are wonderful. A good friend grows them and I do as well, and the plants put out hundreds - trust me. Whole Foods often carries them, as well as many local farmers markets. It is worth trying this soup. Amazing!!

Provided by SarasotaCook

Categories     < 60 Mins

Time 50m

Yield 6 Bowls, 6-8 serving(s)

Number Of Ingredients 16

6 -7 cups tomatoes (yellow pear or yellow cherry)
1 large yellow pepper, cut in quarters (or 2 small)
2 tablespoons olive oil
1 1/2 teaspoons dried oregano
salt and pepper
1 large onion, chopped
2 teaspoons minced garlic
2 1/2-3 cups vegetable broth (depends on how thick you like your soup)
3/4-1 cup heavy cream (depends on how creamy you like your soup)
1/4 cup sherry wine
1/4 cup fresh basil, chopped fine
olive oil
salt
pepper
French baguette
goat cheese

Steps:

  • Tomatoes and Peppers -- Add the tomatoes and peppers to a baking sheet lined with parchment paper or just sprayed with non stick spray like Pam. Drizzle with the olive oil, salt, pepper, and oregano and toss lightly. Bake in a 400 degree oven until the peppers soften and to start to brown and the tomatoes just begin to pop. About 15-20 minutes.
  • Broth Base -- As you roast the vegetables, start the base for the soup. In a large pot, add the olive oil, garlic and onion and saute on medium heat.
  • Vegetables -- Add all the tomatoes to the onion mixture and add in 2 cups of the broth, and sherry wine. The peppers, you want to put in a small bowl and cover with plastic wrap. After 10 minutes, the skin should peel right off. Rough chop and add to the rest of the soup.
  • Puree and Finish -- Use your immersion blender, or you can use a regular blender, and puree until smooth. I like to leave a little texture to mine. Return to the pot if using a regular blender. Season with salt and pepper, then add any additional broth if desired, and the cream. Bring to medium heat. Right before serving, check for seasoning one more time, and add in the fresh basil. I like lots of fresh ground pepper in mine.
  • Enjoy this beautiful creamy pale yellow soup. It is sweet and fresh tasting, and it absolutely delish! I garnish mine with a toasted baguette slice with goat cheese.

ROASTED TOMATO-BASIL BISQUE RECIPE - (4.6/5)

Roasted Tomato-basil Bisque Recipe - (4.6/5) image

Provided by winefoot

Number Of Ingredients 14

8 Roma tomatoes - cut in half lengthwise
Extra Virgin Olive Oil
1/2 cup of fresh basil
5 strips of thick-cut bacon (I prefer the Hempler's natural bacon)
3/4 cup of heavy cream or half-n-half (if you prefer less fat)
32 oz of Organic chicken stock
3-4 cloves of fresh garlic
1-teaspoon of red pepper flake
1 medium white or yellow onion
A few sprigs of fresh thyme
1 bay leaf
Kosher Salt
Fresh cracked pepper
Optional: 1/8 teaspoon of baking soda to help cut down on the acidity

Steps:

  • After you get the tomatoes cut into halves, lay them out on a sheet pan, season with the kosher salt and pepper - then drizzle each with some of the olive oil. Roast in the oven at 400-degrees for 45-minutes or 20-minutes if you have a "convection oven". I use kitchen shears to cut the strips of bacon into small pieces and render those down on medium heat until cooked. After you get the desired doneness, pull bacon and set aside, leaving the drippings. Put in the onion, thyme, garlic and red pepper flake - season with salt/pepper. Allow to sauté until nice and caramelized. Pull the tomatoes from the oven and place into the stock pot along with the bay leaf and chicken stock. Bring to a boil and then reduce to a slow simmer and cook that way for 30-minutes. This is also the time to add the baking soda if you so choose. After the 30-minutes, add the cream and basil, then use an immersion blender and blend until smooth. You can use a standard blender if you in small batches (*warning, blending larger batches of hot liquids can have undesirable, scalding results) - to a blender and blend on high until smooth. Garnish with a sprig of fresh basil and the bacon. I served mine with a toasted-cheese sandwich that I made using American Cheddar and a nice pugliese bread. Paired really nice with a 2010 Hartford Court "Four Hearts Vineyards" Chardonnay.

ROASTED TOMATO BISQUE FROM THE SANDWICH KING

Roasted Tomato Bisque from the Sandwich King image

This recipe has a twin! French Onion Grilled Cheese- it should be a law that both of these are served together. This is far and away the best tomato soup you will have. I love tomato soup and I've experimented with many recipes, but this one simply takes the cake. Simple ingredients make a great, complex tasting, yet still 100% comforting soup. It is wonderful!! I must say to serve it with the French Onion Grilled Cheese sandwich. Two doses of comfort food that are a perfect pair! I also want to say that I normally shy away from cooking sherry- it really makes this dish so go ahead and use it!

ROASTED TOMATO AND BUTTERMILK BISQUE

Roasted Tomato and Buttermilk Bisque image

Intended to be served chilled, this soup can also be served warm. For best flavor, use the best quality vine-ripened tomatoes you can find. Summer heirloom tomatoes would be ideal for this soup! Roasting the tomatoes really brings out their sweetness, too. From Healthy First Courses.

Provided by COOKGIRl

Categories     Vegetable

Time 40m

Yield 6 serving(s)

Number Of Ingredients 14

2 tablespoons olive oil
2 medium leeks, white part, finely sliced
2 medium shallots, peeled and chopped
1 medium carrot, peeled and chopped small
2 celery ribs, with leaves sliced
2 lbs ripe tomatoes
3 tablespoons tomato puree
2 tablespoons unbleached white flour
4 cups vegetable stock or 4 cups chicken stock
2 tablespoons fresh basil, cut into ribbons (NOT dried basil)
1 tablespoon fresh basil, cut into ribbons (NOT dried basil)
salt, to taste
fresh ground black pepper, to taste
1/3 cup buttermilk

Steps:

  • Preheat oven to BROIL.
  • Place the tomatoes on a baking sheet and broil for 15 minutes or until tomato skin is blistered, turning every few minutes for even broiling.
  • Put the tomatoes in a clean paper bag, seal and sweat for 15-20 minutes or until the skin has loosened.
  • Once cool enough to handle, remove the skin and seeds and discard. Chop the tomatoes coarsely. Set aside.
  • Warm the olive oil in a sauce pan over low-medium heat. Add the leeks, shallots, carrots and celery. Sauté the mixture, stirring occasionally for about 5 minutes or until vegetables are softened.
  • Next add the roasted tomatoes and tomato puree. Sprinkle the flour on the tomatoes and stir to incorporate well.
  • Add the stock, cover and simmer until slightly thickened, approximately 20 minutes.
  • Once soup has been allowed to thicken, using an immersion blender, puree the soup until smooth. (Alternatively, the soup can be cooled and pureed in a food processor.) Stir in 2 tablespoons of the fresh basil.
  • Transfer the soup to a non-reactive large serving bowl. (If you wish the soup can be pureed even further using a sieve and pressing the mixture into the bowl with the use of a wooden spoon).
  • Cover soup and refrigerate until well chilled or serve hot.
  • To serve, transfer the soup to individual bowls. Divide and add the buttermilk, lightly stirring in leaving a "swirling" effect on top of the soup serving.
  • Garnish each serving with a few ribbons of fresh basil.

Provided by grinder

Number Of Ingredients 1

2 tablespoons dry sherry

Steps:

  • Preheat oven to 400°F. In a mixing bowl, combine the drained whole tomatoes, olive oil, light brown sugar, carrots and shallots and toss to coat. Season the vegetables with salt and pepper. Place vegetables on a silicone or parchment-lined baking sheet and roast until caramelized, about 30 minutes. Heat a soup pot over med-heat. Add butter and cook until foaming. Add crushed red pepper and garlic and sauté 1 minute. Add tomato paste and cook 1-2 minutes. Then add the sherry. Cook until all the liquid has evaporated and the alcohol has cooked off, 1-2 minutes. Add the roasted vegetables, crushed tomatoes and 1 cup chicken stock. Season with salt and pepper and bring to a simmer. Let simmer 15 minutes. Add heavy cream and, using an immersion blender, puree the soup until uniform in texture. Add more chicken stock to adjust the consistency to how you like it.

TOMATO BISQUE WITH ROASTED LOBSTER

TOMATO BISQUE WITH ROASTED LOBSTER image

Categories     Soup/Stew     Fish

Yield 8 people

Number Of Ingredients 17

Lobster
Two 8 oz (250 g) lobster tails, defrosted if frozen
2 tsp (10 mL) butter
Soup
8 sun-dried tomatoes
4 cups (1 L) turkey or chicken stock or broth
2 lb (1 kg) very ripe plum tomatoes, about 12 medium
2 large sweet red peppers
2 shallots or 1 small onion
1 large garlic clove, unpeeled
1 tbsp (15 mL) olive oil
½ tsp (2 mL) salt
¼ tsp (1 mL) cayenne
2 tbsp (25 mL) dry sherry
1 cup (250 mL) whipping cream
2 tbsp (25 mL) finely chopped fresh parsley
Baguette

Steps:

  • 1. Preheat oven to 350ºF (180ºC). 2. Using scissors, cut lobster tails along the back almost to the tail; turn over and cut along each side to prevent tail from curling. Place back-side up (the side with the single cut) on a small ungreased baking sheet or shallow pan. Force sides together so lobster meat protrudes from shells. Dot with butter; roast 15 to 20 minutes or until shell is red and centre of lobster is hot and no longer grayish. Cool; then remove and discard shells. Coarsely chop lobster. (If serving later, cover and refrigerate for up to a day.) 3. To make soup, increase oven to 400ºF (200ºC). 4. Coat a large baking sheet with nonstick spray. Cut sun-dried tomatoes into strips and soak in stock while vegetables roast. Core unpeeled tomatoes; seed and cut in half. Cut peppers in half; core and seed. Peel and cut shallots in half or onion into quarters. Place vegetables cut-side down on a large baking sheet with sides; place unpeeled garlic clove in centre area of pan. Drizzle with olive oil. Roast, uncovered, for 30 to 35 minutes or until tomatoes are lightly browned and very soft. Remove peels from roasted tomatoes, garlic and peppers; discard. 5. Purée roasted vegetables and sun-dried tomatoes with stock in a food processor or blender. Whirl in salt, cayenne and sherry; add additional stock if needed for correct texture. Taste and adjust seasonings as needed. (Soup can be covered and refrigerated up to 3 days.) 6. Pour soup into a large saucepan; stir in cream. Heat over medium-low heat until very hot, but not boiling. Meanwhile divide lobster among warmed soup bowls; ladle in hot soup and garnish with a sprinkling of chopped parsley. Serve right away with baguette slices.

CREAM OF ROASTED TOMATO BISQUE

CREAM OF ROASTED TOMATO BISQUE image

Here's another recipe that I've been making for many moons. I especially love making it when tomatoes are at their best. I've made it at other times of the year and it is still good, just make sure your tomatoes are ripe enough. This bisque is really a treat.

Yield 6 serving(s)

Number Of Ingredients 14

1 1/2 lbs plum tomatoes, ripened
2 garlic cloves, minced
1 teaspoon dried oregano, crumbled
1/2 teaspoon dried basil, crumbled
1/2 teaspoon black pepper, freshly ground
1 medium onion, finely chopped onion
1 cup chicken broth
5 tablespoons olive oil
1/4 cup dry red wine
3/4 cup evaporated milk
1/2 cup tomato paste
sugar, if needed
3 tablespoons parmesan cheese, freshly grated
salt and pepper

Steps:

  • Preheat oven to 475 degrees.
  • Halve tomatoes lengthwise and lay them cut sides down in a jelly-roll pan.
  • Brush generously with 3 tablespoons oil and sprinkle oregano, basil, and pepper.
  • Roast tomatoes for 10 minutes. Sprinkle minced garlic over tops and continue roasting for an additional 5 to 12 minutes until tomato edges are charred, looking cooked and releasing their juices. Be careful not to over-roast so garlic won't burn. Scrape tomatoes, oil, and herbs from pan into food processor.
  • Process until not quite smooth (leaving small chunks and charred black specks).
  • In a saucepan cook onion in remaining 2 tablespoons oil until translucent. Whisk in roasted tomato puree, broth, and wine. Then whisk tomato paste.
  • Heat the cream and whisk into the tomato mixture.
  • Taste and add sugar if necessary (the sugar helps cut the acidity of the tomatoes if they happen to be acidic).
  • Stir in Parmesan. Add salt and pepper to taste and bring soup to a simmer.
  • NOTE: The type of tomatoes used in this recipe is important. The best are when in season, however store bought vine ripened is also a good selection. The large hard tomatoes found in Supermarkets usually have no taste and will yield an unsatisfactory result. Make sure they are nicely ripened.
