Baked Sweet Potato Coins image

Use a spiralizer to bake homemade, healthy sweet potato chips the entire family will love.

2 sweet potatoes
1 teaspoon seasoned salt, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets with cooking spray.
  • Make a lengthwise cut partway through the middle of each sweet potato.
  • Cut potatoes into coins using the slicer attachment on a spiralizer. Arrange coins on the baking sheets. Spray with cooking spray. Season both sides with seasoned salt.
  • Bake in the preheated oven until edges start to curl, 20 to 25 minutes. Season with more salt. Let cool until crisp, about 10 minutes.

3/4 stick unsalted butter
1/2 cup packed light brown sugar
1 tablespoon maple syrup
1 teaspoon ground cinnamon
2 teaspoons pumpkin pie spice
2 cups dried cranberries
3 cups almonds
1/2 cup unsweetened coconut flakes

Steps:

  • Preheat oven to 350 degrees F.
  • Melt butter, brown sugar, and maple syrup in large pot over medium heat. Stir in cinnamon and pumpkin pie spice. Add cranberries, almonds, and coconut flakes and stir to combine.
  • Spread mixture on greased cookie sheet. Bake 20 minutes or until mixture is crunchy and lightly browned. Transfer to a bowl when cooled and serve.

THYME-ROASTED MARCONA ALMONDS



Thyme-Roasted Marcona Almonds image

1 pound roasted, salted Marcona almonds
2 teaspoons good olive oil
2 tablespoons minced fresh thyme leaves
1 teaspoon kosher salt
1 teaspoon fleur de sel

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the almonds, olive oil, thyme and kosher salt on a sheet pan and toss them together. Roast the almonds for 10 to 15 minutes, turning them every 5 minutes with a metal spatula, until they're lightly browned. Watch them carefully; they go from underbaked to burnt very quickly.
  • Sprinkle with fleur de sel, toss and set aside to cool. Serve warm or at room temperature. (Store the cooled nuts in a sealed container at room temperature for a week or two.)

1 cup semisweet chocolate chips
4 teaspoons vegetable shortening
1/2 cup chopped pistachios, for topping
1/2 cup chopped candied orange peel, for topping

Steps:

  • Line a baking sheet with parchment paper and oil the paper. Combine the chocolate chips and shortening in a small microwave-safe bowl. Microwave in 30-second intervals, stirring, until smooth and melted.
  • Spoon the chocolate into 1 1/2-inch circles on the prepared pan. Let cool slightly. Top with the pistachios and candied orange peel. Refrigerate until firm.

If you have trouble finding Marcona almonds, you can substitute regular blanched almonds. Active time: 10 min Start to finish: 1 hr (includes cooling)

1 large egg white
1 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon smoked hot or sweet Spanish paprika
2 cups blanched Marcona almonds (10 ounces)

Steps:

  • Put oven rack in middle position and preheat oven to 350°F. Line a large baking sheet with parchment.
  • Whisk together egg white, salt, cumin, and paprika in a bowl, then add almonds and toss to coat. Spread almonds evenly on baking sheet and roast until golden, about 20 minutes.
  • Transfer nuts on parchment to a rack and cool completely (almonds will crisp as they cool). Loosen nuts from parchment with a spatula and transfer to a bowl.
