ROASTED STRING BEANS WITH SHALLOTS

Steps:
- Preheat the oven to 400°F.
- Toss the beans and shallots with the oil and salt on a baking sheet. Roast, stirring twice during roasting, until the shallots have caramelized and the beans are beginning to brown and wilt, about 25 minutes. Sprinkle with pepper and serve hot.
- Variation: Roasted Asparagus
- Substitute asparagus and roast about 10 minutes.
ROASTED STRING BEANS
Here is a delicious side dish that goes great with steak. The shallots and garlic start to caramelize adding a depth to the dish. These green beans certainly are not your typical beans. If you really want to add something to dish roast some cherry tomatoes along with the beans, they add a great burst of flavor. I hope you enjoy!

Steps:
- Cook bacon.
- Preheat oven to 350 degrees.
- Wash and trim string beans.
- Slice shallot and garlic.
- Combine all ingredients, except bacon, in a baking dish and toss well. Make sure everything is evenly coated evenly.
- Place in oven and cook for about 20 minutes, if you like a more tender bean cook for 25 minutes.
- When beans are done place in serving dish and toss with crumbled bacon.
- Serve hot.

I enjoy roasted vegetables very much. This is a quick and easy way to add some vegetables to compliment a nice main course. This one tends to be a crowd pleaser and is so fun for kids because you can eat it with your fingers.

- 1. Preheat oven to 400 degrees.
- 2. Rinse beans. Shake off excess water, pat dry with paper towels if too wet.
- 3. Put beans in a rimmed baking sheet. Drizzle oil over the top. Sprinkle salt, pepper, and garlic. Stir to combine (I tend to just use my hands, washed of course). Sprinkle cheese over the top.
- 4. Roast for 20 - 25 minutes.
