1 16oz can roasted red peppers, drained
1lb goat cheese
1/4 cup Parmesan, grated
Pinch of sugar
1/4 cup parsley, chopped
Salt and pepper to taste

Steps:

  • Put peppers into work bowl of a process bowl and puree. Add all other ingredients and pulse until combined. Season with salt and fresh ground pepper to taste.

8oz block part-skim cheddar cheese, shredded
4T miracle whip, depending on desired creaminess
5oz 1/3 fat cream cheese
2-3 chipotle peppers, with sauce (super spicy)
S+P
1T paprika
3t Worcestershire sauce
1T crushed red pepper
2 roasted red peppers, drained and patted dry, diced small
5 pitas, cut in 16ths, toasted on both sides in 400 oven

Steps:

  • Combine all except red peppers in processor. Process until smooth. Add peppers and stir. Serve with pita toasts.

Some ladies I know use to make a pimento cheese spread and sell it at the Augusta National Golf Course during Masters week. The only thing I knew about their recipe was that they used bell peppers instead of pimentos. I figured the rest out on my own. My family devours it every time I make it. Serve this with crackers, or spread it on bread for a tasty sandwich.

1 (16 ounce) package shredded sharp Cheddar cheese
¾ cup mayonnaise
½ cup diced roasted red bell peppers
2 teaspoons Worcestershire sauce

Steps:

  • Blend the shredded cheese with the mayonnaise in a bowl. Stir in the roasted peppers and the Worcestershire sauce and blend thoroughly. Cover, and chill for at least 4 hours or overnight.

This is a wonderful cheese spread that becomes the perfect little appetizer when paired with your favorite crackers.

2 package(s) 8 oz. cream cheese
1 package(s) 8 oz. finely shredded sharp cheddar cheese
1/4 cup(s) roasted red pepper, drained and chopped
1/2 teaspoon(s) garlic powder
1 1/2 teaspoon(s) worcestershire sauce
1 dash(es) cayenne pepper or paprika

Steps:

  • Mix everything except roasted red peppers together with a hand mixer until smooth.
  • Stir in roasted red peppers.
  • Either form a into a ball and cover with plastic wrap or place mixture in a small plastic storage bowl with a lid.
  • Chill for at least 2 hours.
  • Serve with your favorite crackers.
