OVEN ROASTED BABY RED POTATOES
Oven Roasted Baby Red Potatoes have a soft and fluffy interior, with a perfectly crisp exterior and with lots of flavor from the fresh herbs!

Steps:
- Preheat oven to 425 degrees F.
- Wash well and scrub the potatoes clean, cut potatoes into 1" to 1 1/2" pieces and place in a large pot half full with warm water.
- Over medium-high heat and bring potatoes to a boil and cook for 7-9 minutes, they should be almost cooked.
- Drain immediately and set aside.
- In a small bowl, mix together the rest of the ingredients, add to the potatoes and gently toss to coat evenly.
- Transfer potatoes to a large rimmed baking sheet, arrange them into one layer.
- Bake for 20 minutes or until the bottom side is golden.
- Serve sprinkled with chopped fresh dill.

Steps:
- Adjust oven rack to lowest position and heat oven to 450 degrees. Toss potatoes with oil, salt and pepper. Arrange, cut side down, on a large lipped cookie sheet or jellyroll pan.
- Roast until tender and golden brown, about 30 minutes (check after 20 minutes). Transfer to a serving dish.

ROASTED SWEET POTATOES WITH SMOKED PAPRIKA
This is a simple way to put an enormous amount of flavor on a plate, and it is particularly delicious with roast chicken - or as a side dish for slab-bacon tacos with burned scallion crema. (Drizzle a little of the crema onto the potatoes just before serving, as if to recall the aioli served with patatas bravas in Spain.) As always when using paprika, smoked or plain, if you can't recall the last time you did so, it is time for a new jar. All spices go stale. Paprika does so quickly.

- Heat oven to 425 degrees. Combine the sweet potatoes, onion and garlic in a large bowl, and drizzle the olive oil over it, then toss to coat. Sprinkle the salt, pepper and smoked paprika over the potatoes, and toss again to coat. Tip the potatoes onto a sheet pan or into a shallow casserole, then cover it with foil.
- Roast the potatoes in the oven, tossing occasionally, until they are soft at the center and beginning to crisp at the edges, approximately 30 to 40 minutes. Serve hot, drizzled with burned-scallion crema if you like.

HERBED NEW POTATOES

- Melt the butter in a Dutch oven or large heavy-bottomed pot. Add the whole potatoes, salt, and pepper and toss well. Cover the pot tightly and cook over low heat for 20 to 30 minutes, until the potatoes are just tender when tested with a small knife. From time to time, shake the pot without removing the lid to prevent the bottom potatoes from burning. Turn off the heat and allow the potatoes to steam for another 5 minutes. Don't overcook! Toss with the herbs, and serve hot.
PAPRIKA ROASTED POTATOES

- Combine all the ingredients in a large roasting pan and toss thoroughly to coat the potatoes with the seasonings. Cover with plastic wrap and let marinate for 30 minutes. Meanwhile, preheat the oven to 350 degrees F. Uncover the pan and roast the potatoes for 35 to 40 minutes, until they are golden and crisp. Serve immediately.;
PAPRIKA PARSLEY POTATOES

- Put the whole smaller potatoes and halved larger potatoes in a pot, cover with water and bring to a boil over medium heat. Salt the water and cook until the potatoes are tender.
- Drain the potatoes and return them to the hot pot on the stove. Add the butter, and when it begins to melt, sprinkle in the paprika and the parsley. Toss to coat the potatoes with the butter mixture and transfer to a serving bowl.

This is a recipe that my grandmother made ever since I can remember (I'm 58). I bake the potatoes like she did and serve them with pork or chicken. It's a favorite of my father-in-law who always asks for them when he comes for dinner.
