1 small head garlic (2 inches in diameter)
1/2 pound plum tomatoes, halved lengthwise
1 large red bell pepper (1/2 pound)
1 teaspoon olive oil
1 1/2 teaspoons fresh lemon juice
1/2 teaspoon balsamic vinegar, or to taste

Steps:

  • Preheat oven to 375°F.
  • Cut off and discard top quarter of garlic head and wrap remainder in foil. Arrange tomatoes, cut sides up, in a foil-lined 13- by 9- by 2-inch baking pan and sprinkle lightly with salt. Add whole bell pepper and garlic (in foil) to pan and roast vegetables in middle of oven 1 hour.
  • Transfer bell pepper to a bowl and cover bowl with plastic wrap, then let stand about 20 minutes. When cool enough to handle, peel pepper, discarding stem and seeds, and transfer to a food processor or blender along with tomatoes.
  • Unwrap garlic and squeeze roasted cloves from skin into food processor. Add remaining ingredients and salt and pepper to taste, then purée sauce until smooth.

3 cloves garlic, chopped
1 small onion, chopped
4 red bell peppers, roasted, peeled, seeded and chopped
2 cups chicken stock

  • In a saute pan, heat oil. Saute garlic and onion until onion is translucent, about 3 to 5 minutes. Add bell pepper. Add stock and bring to a boil. Simmer for 10 to 15 minutes. Take off heat and puree in a blender. Season with salt and pepper.

4 large red or yellow bell peppers, preferably Holland
2 tablespoons good olive oil

Steps:

  • Preheat the oven to 500 degrees.
  • Place the whole peppers on a sheet pan and place in the oven for 30 to 40 minutes, until the skins are completely wrinkled and the peppers are charred, turning them twice during roasting. Remove the pan from the oven and immediately cover it tightly with aluminum foil. Set aside for 30 minutes, or until the peppers are cool enough to handle.
  • Remove the stem from each pepper and cut them in quarters. Remove the peels and seeds and place the peppers in a bowl along with any juices that have collected. Discard the stems, peels, and seeds. Pour the oil over the peppers. Cover with plastic wrap and refrigerate for up to 2 weeks.

For the Peppers:
5 red bell peppers
1 jalapeño pepper
4 cloves garlic - chopped
1 large onion - sliced
2 tablespoons wine
1/2 tsp. red pepper flakes
1/2 tsp. black pepper
1 tsp. dried oregano
1 tsp. salt
2 tablespoons sugar
1 tablespoon vinegar
29 oz. can of crushed tomatoes
1 lb. of your favorite spaghetti
Grated Romano or Parmesan cheese for grating
2 carrots, diced

Steps:

  • Preheat Oven 375 degrees: Wash and dry the peppers. Place on a baking pan and place in the oven until slightly charred. This will take about 25-30 minutes. Remove from the oven and let the peppers cool. When the peppers are cooled, gently remove the stems and try to save the juice from inside the peppers for added flavor in the sauce. Cut the peppers for the sauce. Heat a large frying pan with 2 tablespoons of olive oil. Add the sliced onion, garlic and carrots and sauté until the onion is soft and the garlic fragrant. Add the peppers, vinegar, seasonings and continue to sauté on low. Add the crushed tomatoes and the wine and gently simmer on low while preparing the spaghetti. Lift the spaghetti into the sauce and add an extra drizzle of olive oil, red pepper flakes and grated cheese.

2 large red bell peppers
2 tablespoons extra virgin olive oil
1 medium red onion, finely chopped
1 1/2 cups tomato juice
1 teaspoon drained bottled white horseradish
1/4 cup vodka
Zest and juice of 1 medium lemon
Salt and freshly ground pepper

Steps:

  • 1. Preheat the broiler.
  • 2. Place the bell peppers on the baking sheet and set on the rack closest to the broiler unit. Broil the peppers for 6 to 8 minutes, turning them as necessary, until the skins are puffed and blackened on all sides.
  • 3. Remove the bell peppers from the broiler, place them in a bag, and seal the bag immediately. Allow the peppers to steam for 10 minutes. When they are cool enough to handle, slip off the skins and remove the stems and seeds. Rinse the bell peppers, pat dry, and set aside on paper toweling.
  • 4. While the bell peppers cool, heat the oil in the saucepan over medium heat and sauté the onion until it is translucent, 3 to 4 minutes. Raise the temperature to high, add the tomato juice, and simmer until the juice has reduced by half, about 3 minutes.
  • 5. Transfer the bell peppers, tomato juice, and onion to the bowl of the food processor fitted with the steel blade. Process until the sauce is smooth. Add the horseradish, vodka, lemon zest, and juice, and pulse three times to incorporate the ingredients. Season the sauce with salt and pepper to taste.
