3 medium sweet potatoes, peeled and cut into 1-inch pieces
1 large sweet onion, cut into 1-inch pieces
4 medium carrots, cut into 1-inch pieces
2 tablespoons olive oil
1 pound smoked kielbasa or Polish sausage, halved and cut into 1-inch pieces
1 medium yellow summer squash, cut into 1-inch pieces
1 medium zucchini, cut into 1-inch pieces
1/4 teaspoon salt
1/4 teaspoon pepper
Dijon mustard, optional

Steps:

  • Preheat oven to 400°. Divide sweet potatoes, onion and carrots between 2 greased 15x10x1-in. baking pans. Drizzle with oil; toss to coat. Roast 25 minutes, stirring occasionally., Add kielbasa, squash and zucchini to pans; sprinkle with salt and pepper. Roast until vegetables are tender, 15-20 minutes longer. Transfer to a serving bowl; toss to combine. If desired, serve with mustard.

Martha's favorite kielbasa is "chunky, meaty, slightly garlicky, with natural casing and not too much fat." Her two favorite purveyors are Sikorski Meat Market, in Brooklyn's Greenpoint neighborhood, and Chester's Smokehouse, in Albany, New York.

2 pounds kielbasa, preferably fresh-smoked
Prepared horseradish with beets, for serving
Whole-grain mustard, for serving

Steps:

  • Preheat oven to 400 degrees. Line a rimmed baking sheet with foil; top with parchment. Poke holes all over kielbasa. Transfer to sheet, pulling sides of foil up to create a well. Add 1/2 cup water.
  • Roast until skin is crackling and beginning to brown, about 20 minutes. Flip; continue to roast until dark golden brown, about 20 minutes more.
  • Slice and serve, with horseradish and mustard.

1 small red cabbage (about 1 1/2 pounds), cut into 1 1/2-inch-thick wedges
2 small red onions, peeled and cut into 1-inch-thick wedges
2 tablespoons extra-virgin olive oil
5 tablespoons cider vinegar
2 teaspoons caraway seeds
Coarse salt and freshly ground pepper
3 small Gala apples (about 1 1/4 pounds), halved lengthwise and cored
1 1/2 pounds smoked kielbasa, slashed 1/4-inch deep in a few places
Whole-grain mustard, for serving

Steps:

  • Preheat oven to 400 degrees. Toss together cabbage, onions, oil, 3 tablespoons vinegar, and caraway seeds on a rimmed baking sheet; generously season with salt and pepper. Spread into a single layer and roast 25 minutes.
  • Gently turn vegetables. Add apples, cut side down, and kielbasa to baking sheet, keeping everything in a single layer. Roast until cabbage is crisp-tender and apples are tender and slightly collapsed, 20 to 25 minutes. Sprinkle with remaining 2 tablespoons vinegar. Slice kielbasa and divide equally among 4 plates with vegetables and apples. Serve with mustard.

1 ½ pounds Brussels sprouts, trimmed and halved
2 teaspoons olive oil, divided
2 teaspoons smoked paprika, divided
½ teaspoon sea salt
½ teaspoon ground black pepper
1 pound smoked kielbasa sausage, sliced, or more to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Toss Brussels sprouts with 1 teaspoon oil, 1 teaspoon paprika, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a large bowl. Spread on a baking sheet.
  • Roast in the preheated oven until softened, about 15 minutes. Push to 1 side of the baking sheet.
  • Toss kielbasa sausage with remaining 1 teaspoon oil, 1 teaspoon paprika, 1/4 teaspoon salt, and 1/4 teaspoon pepper in the bowl. Arrange cut-side down next to the Brussels sprouts on the baking sheet.

I had this wonderful dish at a church potluck and just had to have the recipe. My family also loves this and I now have to at least double it when I make it for them. Hope you enjoy it as much as we do. It is so easy to prepare.

1 lb Brussels sprout, cut in half lengthwise
1 -2 cup red onion, cut into wedges
8 ounces kielbasa, cut in 1/4 in pieces
2 tablespoons olive oil
salt and pepper
1 dash garlic powder

Steps:

  • Preheat oven to 450.
  • Mix the sprouts, onions and kielbasa in a large bowl with the oil, salt, pepper, and sprinkle of garlic powder.
  • Spread a single layer in a roasting pan and roast 20 to 30 minutes or until sprouts are tender. Stir every 10 minutes.

2 rings of kielbasa, approximately 2 pounds each, preferably fresh smoked
Rye bread, for serving
Prepared horseradish with beets, for serving

Steps:

  • Preheat oven to 350 degrees. Bring a large pot filled three-quarters full with water to a boil over high heat. Reduce heat to a simmer and add kielbasa; cook 15 minutes.
  • Transfer kielbasa to 2 baking sheets. Pour 1/2 cup of the cooking liquid over each ring of kielbasa. Using a fork, poke holes all over the top. Roast until the skin is crackling and just beginning to brown, about 20 minutes.
  • Slice kielbasa on the diagonal into 1/2-inch-thick slices. Serve with rye bread and horseradish.

CREAM SAUCE
1/2 c heavy cream
1/4 c dijon mustard
1 Tbsp honey
1 tsp apple cider vinegar

  • 1. Preheat oven to 450. Toss sprouts, onion and kielbasa in bowl w/ oil, salt, & pepper. Spread on single layer on baking sheet. Roast till browned and tender about 20 mins in oven. o
  • 2. Simmer cream ingredients in sauce pan over low heat for 10mins till slickly thickened. Serve cream over roasted brussel sprouts.
