ROASTED GARLIC-GLAZED CHICKEN WITH LEMON-HERB SAUCE
Recipe courtesy From Emeril's Kitchens, by Emeril Lagasse. Different way of preparing chicken and best part is that it's all done in 1 or 2 pans depending on how large of an oven proof skillet you have. The herbs and the garlic glaze are just heavenly to smell and devour. This was a huge hit in my home and even the kid enjoyed it. Prep time includes the 1 hour for roasting the garlic as this can be done ahead of time.

Steps:
- For the Roasted Garlic Glaze:.
- Preheat the oven to 325 degrees F.
- Cut off the top third of each head of garlic.
- Put them on a parchment or foil-lined baking sheet, drizzle 2 tablespoons of the oil over the tops, and sprinkle with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper.
- Turn the garlic cut side down and roast until the cloves are soft and golden brown, about 1 hour.
- Remove from the oven and let sit until cool enough to handle.
- Into a food processor squeeze each head of garlic gently to release the flesh.
- Add the egg yolks, lemon juice, and the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper and puree on high speed.
- Add the remaining 1/2 cup of oil in a slow, steady stream and process until the glaze is thick and smooth.
- Transfer to an airtight container and refrigerate until ready to use.
- (The glaze can be made up to 1 day in advance).
- For the Chicken:.
- Preheat the oven to 375 degrees F.
- Separate the legs& thighs.
- Season the chicken on both sides with the Essence.
- Heat 1 tablespoon of the oil in each of 2 large ovenproof skillets over medium-high heat.
- Place the chicken pieces skin side down in the hot pans and sear for 6 minutes.
- Remove from the heat.
- Add 2 tablespoons of the butter and 2 sprigs of thyme to each pan, and place in the oven.
- Roast for 16 minutes.
- Remove from the oven and carefully turn the chicken halves with tongs.
- Brush the skin side of each chicken with the garlic glaze and roast skin side up until the skin is crisp, about 10 minutes longer.
- For the Lemon Herb Sauce:.
- In a small saucepan, bring the chicken stock to a simmer.
- Transfer to a blender or food processor.
- Add the mustard and process on high speed.
- With the motor running, add the lemon juice, olive oil, and herbs, and process until smooth.
- Serve immediately.
GARLIC-AIOLI ROASTED TURKEY WITH LEMON-PARSLEY PAN SAUCE
Steps:
- Roast the turkey:
- Pat turkey dry, reserving giblets and neck. Let turkey stand at room temperature 1 hour to air-dry the skin before roasting.
- Meanwhile, position rack in lower third of oven and preheat to 450°F. Trim 1/4" from top of 3 garlic heads to expose cloves, then place heads on a sheet of foil. Spoon oil over garlic, then wrap tightly in foil to enclose. Transfer to a rimmed baking sheet and roast until very soft, about 40 minutes.
- Carefully unwrap garlic, let cool slightly, and squeeze pulp into a food processor. Add mayonnaise and blend until smooth.
- Place turkey on rack in large roasting pan. Cut remaining 2 garlic heads in half crosswise and stuff cavity of bird with garlic head halves, bay leaves, parsley, and thyme. Loosely tie legs together with kitchen twine. Starting at neck end, slide your hand between skin and breast meat to loosen skin. Rub half of mayonnaise mixture under skin, then half over outside. Season both sides with sea salt and pepper. Turn turkey breast side up and place reserved giblets and neck in pan.
- Place turkey in 450°F oven, then reduce oven temperature to 350°F and roast 1 hour. Rotate pan, wrap wing tips in foil, and continue roasting until an instant-read thermometer inserted into the thickest part of the thigh registers 160°F, 1-1 1/2 hours more.
- Transfer turkey to a cutting board, reserving turkey drippings and juices in pan, and cover loosely with foil. Let rest at room temperature 30 minutes before carving (internal temperature will rise to 165°F and juices will lock in).
- Make the pan sauce:
- Transfer pan drippings and juices to a 2-qt. glass measuring cup, then skim off fat, reserving 2 Tbsp. fat. Add enough stock to pan juices to make 4 1/2 cups total. Combine cornstarch and reserved fat with a fork in a small bowl.
- Set roasting pan across 2 burners. Remove garlic from interior of turkey, then add to pan along with shallot, bay leaf, and thyme. Cook over medium-high heat, stirring occasionally, until shallots begin to brown, about 5 minutes. Deglaze pan with pan juices mixture, stirring and scraping up brown bits, about 2 minutes. Whisk in cornstarch mixture and cook until liquid is reduced by one-third, about 5 minutes. Strain through a fine-mesh sieve into a large bowl and stir in parsley, lemon juice, kosher salt, and pepper.
ROSEMARY, GARLIC AND LEMON ROASTED CHICKEN WITH LEMON WHITE WINE SAUCE
This is a very moist and flavorful chicken. It is simple and most of the ingredients you always have on hand. The wine sauce is an added benefit! My family loved it!

- 1. Wash chicken and rub skin and cavity with olive oil. Sprinkle with salt and pepper inside and out.
- 2. Chop the cloves of garlic and make a paste using a chef's knife at an angle to grind the garlic against the salt until smooth.
- 3. Mix this paste with 2 tablespoon of chopped rosemary, 2 teaspoons lemon zest and enough olive oil and lemon juice to wet the ingredients, but not so much they float in the liquid.
- 4. Divide herb mixture in half and gently lift the skin of the chicken and rub flesh with the mixture, make sure to rub legs and back.
- 5. Rub the skin and cavity with the other half of the mixture.
- 6. Stuff the cavity with the lemons you squeezed to get juice and any rosemary you have left.
- 7. Chop the onions and place on the bottom of your roasting pan. Tie the chicken legs together and place it on top of the onions in roasting pan.
- 8. Pour enough white wine to cover the bottom of the roasting pan and add the lemon juice.
- 9. Roast chicken in oven at 400F for 20 minutes. Lower the temperature to 350F and roast until juices run clear, about 1 more hour.
- 10. Remove chicken from roasting pan and cover with foil. Allow chicken to rest at least 10 minutes before carving.
- 11. Strain onions from liquid and reserve liquid. In a pan, melt the butter and gradually add the flour make sure there are no lumps
- 12. Cook a few minutes and gradually add the reserved liquid while stirring constantly to avoid lumps. Bring to a boil until sauce thickens slightly. Adjust seasonings as needed.
- 13. Remove string and lemons from chicken cavity. Serve with sauce on the side.
ROASTED GARLIC AND LEMON BARBECUE SAUCE
Roasting mellows the garlic, and lemon brightens the taste of this sauce.

- Preheat oven to 325 degrees. Top garlic with oil, zest, thyme, salt, and pepper, and wrap in parchment-lined foil. Bake until garlic is golden and soft, 1 1/2 hours. Unwrap, and let cool for 10 minutes. Squeeze garlic from peels, and puree with zest, thyme, and lemon juice in a food processor.
- Combine garlic mixture and barbecue sauce in a medium saucepan over medium heat. Gently simmer for 5 minutes. Let cool, and refrigerate.
GARLIC ROASTED SHRIMP WITH LEMON THYME BUTTER SAUCE RECIPE

- Preheat oven to 400. Rinse shrimp and spread on a baking sheet lined with paper towels. Drizzle with olive oiland season with garlic, salt and pepper, tossing to coat thoroughly. Spread in a single layer and place in oven for about 5 minutes, just until opaque. Do not overcook. Melt the lemon thyme butter in a saucepan over medium heat. Add lemon juice and zest and simmer 5 minutes. Arrange shrimp on platter and serve with sauce for dipping.
MY FAVORITE LEMON-GARLIC SAUCE FOR ROASTED CHICKEN
Chicken is delicious served simply in its own juices, but this sauce is so delicious that you might want to double the recipe.

- 1. Heat oil in a saucepan and add garlic cloves and lemon peel. Saute over medium-low heat, stirring frequently until garlic just starts to brown in a few spots.
- 2. Add broth, water and herbs; simmer to reduce by about half. Discard herb sprigs and lemon peel.
- 3. Transfer broth mixture to a blender; process until smooth. Return garlic puree to the saucepan and whisk in butter over very low heat until smooth. Sauce can be re-warmed before serving.
PENNE WITH SHRIMP AND ROASTED VEGETABLES IN A ROASTED GARLIC LEMON SAUCE

- Roast garlic (see instructions through link above). Preheat the oven to 400 degrees. Line a baking sheet with tin foil and coat it with cooking spray. Heat 1 tsp of olive oil in a large skillet over medium heat, add the onion and saute for 15-20 minutes or until caramelized and tender. While the onions are cooking, place a small dry skillet over medium heat and toast the pine nuts for 3-4 minutes or until golden brown, set aside. Once the onions are cooked, add the shrimp to the same skillet and cook for 3-4 minutes or until cooked through. When the onions are nearly cooked, place the baking sheet with vegetables in the oven and roast for about 5-7 minutes or until tender yet still a bit crisp. Cook the pasta per instructions, drain and put back into large pot. While the pasta is cooking and the vegetables are roasting, gently remove the skin from the roasted garlic and chop half for the pasta, set aside and place the other half in a small bowl. To the half in a small bowl, add lemon juice, lemon zest, butter, 1 tsp olive oil, sea salt and fresh cracked pepper; mix thoroughly. Add the roasted vegetables, sauteed onions and shrimp, roasted garlic chunks, lemon juice mixture, Parmesan cheese, fresh parsley and basil; mix thoroughly, taste and re-season if necessary. Enjoy.
ROASTED GARLIC LEMON SAUCE
Steps:
- Roast two heads of garlic with olive oil and salt in foil on 400 degrees for 25-30 minutes or until golden brown.Mash cloves in a bowl and add to a sauce pan with the stick of butter.Whisk until smooth.Season and add lemon juice.You may need to add more lemon juice depending on your desire.Whisk vigorously until very smooth.Serve hot on seafood or poultry.
