I wanted to make a roasted garlic bread with cheese and couldn't find a recipe I liked, so I sort of made one up by combining a couple I found on the internet and after tweaking a little it turned out pretty good.

Number Of Ingredients 8

1 1/4 cups warm water
2 tablespoons light olive oil
4 cups bread flour
1 teaspoon dried thyme
1 1/2 teaspoons salt
2 teaspoons bread machine yeast
4 ounces jalapeno jack cheese, grated
10 -15 roasted garlic cloves

Steps:

  • Add all ingredients to bread machine in order listed (or as recommended by your machine's manufacturer). Select dough cycle and press start.
  • When complete, turn dough out onto a floured surface and knead a few times, then divide dough in half.
  • Shape each half into a round or oval loaf, put on a greased pan and let rise until about double.
  • Bake at 350°F for about 25-30 minutes until golden brown and sounds hollow when tapped. Cool on wire racks at least 15 minutes before slicing. Great served with a steak dinner or as an appetizer with dipping oil.

2 medium heads of garlic
2 teaspoons olive oil
1 (1/4 ounce) package active dry yeast
1 cup warm water (110 F-115 F)
1 tablespoon sugar
1 teaspoon salt
2 1/2-3 cups all-purpose flour
2 tablespoons minced fresh sage or 2 teaspoons rubbed sage
2 teaspoons minced fresh marjoram or 3/4 teaspoon dried marjoram
1 teaspoon minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
2 tablespoons grated parmesan cheese
1 tablespoon butter, melted

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off garlic bulbs; brush with oil. Wrap each bulb in heavy-duty foil. Bake at 425°F for 30-35 minutes or until softened. Cool for 10-15 minutes. Squeeze softened garlic into a small bowl; set aside.
  • In a large mixing bowl, dissolve yeast in warm water. Add the sugar, salt, and 1 cup flour; beat until smooth. Stir in enough remaining flour to form a soft dough.
  • Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with nonstick cooking spray, turning once to coat top. Cover and let the dough rise in a warm place until doubled, about 45 minutes. Meanwhile, add the sage, marjoram, and rosemary to the reserved roasted garlic. Mash with the back of a spoon to form a paste.
  • Punch dough down. Turn into a lightly floured surface; divide in half. Roll each portion into a 10" x 8" rectangle. Spread each with half the garlic mixture to within 1/2" of edges. Sprinkle each with 1 tablespoon Parmesan cheese. roll up jelly-roll style, starting with a long side; pinch seam and ends to seal.
  • Coat a baking sheet with nonstick cooking spray. Place loaves seam side down on pan; tuck ends under. With a sharp knife, make several slashes across the top of each loaf. cover and let rise until doubled, about 30 minutes.
  • Bake at 375°F for 20-25 minutes or until golden brown. Remove to wire racks; brush with butter.

4 heads garlic
1/3 cup extra-virgin olive oil
3 sprigs thyme, plus 1 tablespoon finely chopped
Grey salt and freshly ground black pepper
8 tablespoons unsalted butter (1 stick), at room temperature
1 loaf of good, crusty bread, cut into slices

Steps:

  • Preheat oven to 350 degrees F.
  • Cut top from each head of garlic, exposing the cloves. Place heads of garlic (cut side up), on a piece of heavy duty aluminum foil. Pour olive oil over them, and top with thyme springs. Season with salt and pepper. Wrap the foil tightly. Place in a small ovenproof pan, and bake until the cloves begin to pop out, about 1 hour. Remove from the oven and cool.
  • To remove the cloves, open the foil and squeeze the lower part of the head of garlic. In a small bowl, mash the cloves to form a paste. (At this point the paste can be used or stored in the refrigerator or freezer.)
  • Add butter and chopped thyme to the bowl, stirring to combine. Season with salt and pepper, to taste.
  • Toast both sides of the bread, using a hot grill, grill pan, or broiler. Spread the roasted garlic butter paste onto the toasted bread. Serve immediately.

  • Gather the ingredients.
  • Prepare roasted garlic . After squeezing garlic out of cloves, mash slightly and measure 1/4 cup.
  • In a small microwave-safe dish, combine butter and minced garlic. Microwave on high for 1 to 2 minutes until the garlic is fragrant.

  • Add mashed garlic at the Raisin/Nut signal or 5 to 10 minutes before the last kneading cycle ends. Select the Basic/White cycle and use Medium or Light Crust Color. Do not use delay cycles.

2 tablespoons olive oil
1 (1 pound) loaf Italian bread
½ cup butter
1 tablespoon chopped fresh parsley
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Slice the tops off of garlic heads so the tip of each clove is exposed. Place garlic on a baking sheet and drizzle with olive oil. Bake until garlic is soft, about 30 minutes.
  • Set the oven to broil. Slice the loaf of bread in half horizontally, and place cut-side up on a baking sheet.
