Steps:
- Preheat oven to 425 degrees F.
- Toss together green beans, shallots, garlic, oil and salt and pepper in a medium roasting pan. Roast in the oven until the beans are cooked through and light golden brown. Remove from the oven and stir in the lemon zest and hazelnuts. Transfer to a platter and serve.

- Preheat oven to 375°. Cut stem ends off unpeeled garlic cloves. Place cloves on a piece of foil. Drizzle with 2 teaspoons oil; wrap in foil. Bake 25-30 minutes or until cloves are soft. Unwrap and cool slightly. Squeeze garlic from skins; mash with a fork to form a paste., In a Dutch oven, heat remaining oil over medium-high heat. Add green beans and garlic; cook and stir 2-3 minutes. Add water; bring to a boil. Reduce heat; simmer, uncovered, 7-10 minutes or until beans are crisp-tender and water is almost evaporated, stirring occasionally. Add cashews, salt and pepper; toss to combine.

This fragrant, deeply flavored green bean dish works as an intense side dish for a simple meal or as a meatless main course in its own right. Take care when adding the mustard seeds to the skillet - they can pop and jump out of the pan as they heat, so stand back. If you can't find large flakes of dried coconut (also sometimes called chips), you can substitute shredded coconut, as long as it's unsweetened. But ground coconut will be too fine to add the necessary texture.

- Place a large, dry skillet over medium-high heat. Add coconut flakes and toast, shaking pan occasionally, until golden, about 5 minutes. Transfer flakes to a bowl.
- Heat oil in the same skillet. Add garlic, ginger, mustard seed, turmeric, red pepper flakes and bay leaf. Cook, stirring, 1 minute.
- Stir in basil, green beans and salt. Toss well to coat in oil and seasonings.

ROASTED GREEN BEANS WITH GARLIC AND PINE NUTS
I really LOVE green beans, and this recipe is yet another tasty way to serve them. I belive the recipe called for whole garlic cloves, but I like to smash them with the back of my knife to 1) get the peels off and 2) release some of that wonderful garlic flavor. I enjoy these beans right out the oven as is, but if you're like my husband, go ahead and add the couple tbsp of the vinegar of your choice before serving. These taste great right from the oven, or at room temp.

- Preheat oven to 400 degrees.
- Line baking sheet with foil.
- Place the beans, onions and garlic onto the sheet.
- Drizzle with the olive oil and toss together with your hands to coat evenly.
- Season GENEROUSLY with salt and pepper.
- I like to use some kosher salt, as well as a few shakes of seasoned salt too.
- Bake in oven for 25 minutes.
- Give the beans a quick toss halfway through cook time.
- At the end of 25 minutes, tsate a bean to see if it's tender to your liking.
- If not, put sheet back in for another 5-10 minutes.
- Remove from oven and place in serving bowl.
- Drizzle with vinegar, if using, and check seasonings.
- Top beans with the pine nuts, and serve.
