Roasted Corn Zucchini Salad image

Roasted Corn Zucchini Salad is an easy but so flavorful vegetable side dish made with fresh corn, zucchini, and onions. A delicious summer salad that will dress up every meal. Read the tips and tricks above before making this recipe!

Number Of Ingredients 11

2 - 3 ears of corn (shucked (or 1 1/2 cups frozen corn))
2 tbsp olive oil
1 tbsp butter
1 garlic clove (minced)
1/2 cup finely diced sweet onion
4 cups small-diced zucchini ((2 medium zucchini))
1/4 tsp dried oregano
1/4 tsp dried thyme
1 lime (juice)
1/4 cup fresh basil leaves (roughly chopped)
Salt and freshly ground black pepper to taste

Steps:

  • Heat a large grill pan or use a grill. Brush the corn with 1 tbsp olive oil and season with salt and pepper. Grill over moderately high heat, turning, until crisp-tender, about 12 minutes. Let cool.
  • Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add garlic to the skillet, and cook, stirring frequently, until fragrant, about 1 minute.
  • Add onion and cook until translucent, about 3-4 minutes.
  • Add zucchini, dried oregano, and thyme. Cook, stirring occasionally until zucchini is tender and cooked through, about 3-4 minutes.
  • Take the pan off the heat and stir in the juice of one lime. Let sit for a minute.
  • Working in a large bowl with an inverted ramekin, use a sharp knife to cut the kernels off the cobs in sections. Remove ramekin and transfer everything from the pan into the bowl. Toss to combine, add basil, and season with salt and pepper to taste.
  • Serve warm or at room temperature garnished with a few basil leaves.

4 tablespoons olive oil, divided
4 ears corn, in husks, soaked in water 10 min.
1 tablespoon Greek seasoning (such as Cavender's®), divided
½ teaspoon ground black pepper
1 medium zucchini, halved lengthwise and seeded
1 medium red bell pepper, quartered and seeded
1 medium jalapeno pepper, sliced in half lengthwise and seeded
¼ cup chopped fresh cilantro
¼ cup lime juice
¼ teaspoon salt
2 medium avocados, diced

Steps:

  • Preheat an outdoor grill to high heat for 10 minutes and lightly oil the grate.
  • Meanwhile peel back corn husks carefully, leaving them attached at the bottom. Drizzle oil over kernels and liberally sprinkle with 2 teaspoons Greek seasoning. Bring husks back up over corn.
  • Grill corn, turning often, about 10 minutes. Add zucchini, bell pepper, and jalapeno to the grill and cook, turning often, to allow grill marks to form on all sides, until vegetables are tender. Carefully peel down corn husks and allow corn to slightly char, developing grill marks. Remove from grill and allow to cool.
  • Remove and discard husks and cut kernels off corn cob. Cut zucchini and bell pepper into bite-sized pieces. Mince jalapeno.
  • Combine corn, zucchini, jalapeno, bell pepper, cilantro, lime juice, remaining 1 teaspoon Greek seasoning, 2 tablespoons olive oil, and salt in a large bowl. Stir in avocado just before serving.

3 ears corn, husks removed, cut in half
1 medium summer squash, halved lengthwise and quartered
1 medium zucchini, halved lengthwise and quartered
3 tablespoons olive oil
1 tablespoon honey
1 tablespoon ground cumin
2 teaspoons kosher salt, plus more for seasoning
1 teaspoon chili powder
1 teaspoon ground black pepper, plus more for seasoning
2 limes, zested and juiced
1 clove garlic, pressed
1 heirloom tomato, sliced 1/4-inch thick
1/3 cup crumbled queso fresco
1/4 cup cilantro leaves

Steps:

  • Preheat a grill or grill pan over medium-high heat.
  • Place the corn, squash and zucchini in a large bowl.
  • To make the dressing, add the olive oil, honey, cumin, salt, chili powder, black pepper, lime zest and juice and garlic to a mixing bowl or small mason jar. Stir or secure the lid and shake to combine. Pour two-thirds of the dressing over the vegetables and toss to coat completely.
  • Grill the vegetables, turning as needed, until really nice grill marks begin to form, about 5 minutes for the squash and 7 minutes for the corn in total. Remove to a baking sheet and cover with foil to keep warm.
  • Arrange the slices of tomatoes around the edge of a large cutting board or platter and season with a pinch or two of salt and pepper. Place the grilled vegetables around the platter thoughtfully, making sure to leave some of the tomato peeking through. Drizzle over the remaining dressing and shower with the queso fresco and cilantro.

½ small white onion, finely diced
3 small zucchinis, diced
3 ears corn, husks and silk removed
sea salt to taste
freshly ground black pepper to taste

Steps:

  • Heat butter in a skillet over medium heat, stirring occasionally, until lightly browned, 1 to 2 minutes. Cook and stir onion in the melted butter until translucent, about 5 minutes.
