ORANGE-ROASTED RAINBOW CARROTS

1 pound orange carrots, unpeeled
1 pound rainbow carrots, unpeeled
Good olive oil
Kosher salt and freshly ground black pepper
1 teaspoon grated orange zest (see Cook's Notes)
2 tablespoons freshly squeezed orange juice
1 teaspoon fleur de sel

Steps:

  • Preheat the oven to 450˚.
  • Remove the tops and scrub the orange and rainbow carrots with a vegetable brush. Cut the carrots in long diagonal slices. (You want fairly uniform sticks, about 4 inches long by 1/2 inch wide.)
  • Place the carrots on a sheet pan, drizzle with 3 tablespoons olive oil and sprinkle with 1 teaspoon kosher salt and 1/2 teaspoon pepper. Toss well with your hands and spread out in one layer.
  • Roast for 15 to 20 minutes, turning once, until the carrots are lightly browned and tender. Sprinkle with the orange zest, orange juice and fleur de sel and toss well. Serve hot or at room temperature.

1 serving cooking spray
1 tablespoon butter, melted
1 tablespoon hot honey (such as Mike's Hot Honey®)
1 teaspoon grated orange zest
½ teaspoon ground cardamom
½ pound baby carrots
1 tablespoon freshly squeezed orange juice
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C). Spray the basket with nonstick cooking spray.
  • Combine butter, honey, orange zest, and cardamom in a bowl. Remove 1 tablespoon of the sauce to a separate bowl and set aside. Add carrots to the remaining sauce and toss until all are well coated. Transfer carrots to the air fryer basket.
  • Air fry until carrots are roasted and fork tender, tossing every 7 minutes, for 15 to 22 minutes. Mix orange juice with reserved honey-butter sauce. Toss with carrots until well combined. Season with salt and pepper.

1 lb carrot, peeled and trimmed
2 garlic cloves, smashed
orange zest, 2 orange strips, each 2-inch long and 1/2-inch wide, cut into julianne
1 tablespoon olive oil
1 cinnamon stick, broken in half
2 teaspoons fresh lemon juice
salt and pepper

Steps:

  • Preheat Oven to 400 Degrees.
  • Cut carrots into 2" lengths; halve lengthwise any thick top portions so all the pieces will cook evenly. In a shallow, 9-by-13" baking dish, combine carrots, garlic and orange zest. Drizzle vegetables with olive oil sprinkle with salt and pepper to taste. Add the cinnamon stick, toss to coat the vegetables evenly. Spread in an even layer in the dish.
  • Roast the carrots stirring every 10 minutes, until tender and lightly browned, about 50 minutes.
  • Remove from the oven, transfer to serving dish and sprinkle carrots with lemon juice. Serve immediately.

3 bunches carrots, peeled
2 tablespoons unsalted butter
2 tablespoons honey
Kosher salt
1 teaspoon minced fresh ginger
1 teaspoon grated orange zest
1/2 cup freshly squeezed orange juice
1/2 teaspoon freshly ground black pepper

Steps:

  • Cut the carrots diagonally in 1-inch-thick slices. You should have about 5 cups of carrots. Place 1/2 cup water, the butter, honey, 2 teaspoons of salt, and the ginger in a large saute pan and bring to a boil. Add the carrots, cover the pan, and simmer over medium-low heat for 5 minutes. Remove the lid and continue to cook for about 20 minutes, or until all the water has evaporated. You may want to raise the heat for the last 5 minutes.
  • Add the orange zest and orange juice to the pan, tossing with the carrots. Simmer uncovered for about 5 minutes, until the carrots are al dente (tender but still resistant when you bite) and the sauce glazes the carrots. Add the pepper and another teaspoon of salt, to taste.

2 pounds carrots, peeled and sliced
¼ cup butter, melted
¼ cup orange juice
⅓ cup brown sugar
⅓ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place carrots into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until slightly tender, about 5 minutes. Drain.
  • Whisk butter, orange juice, brown sugar, white sugar, and cinnamon together in a large bowl until sugars are dissolved. Add carrots to the glaze mixture; toss to coat. Transfer carrots and glaze to a 1-quart baking dish.
  • Bake in the preheated oven until carrots are tender, 15 to 20 minutes.
