1 egg yolk
1 teaspoon white wine vinegar
1 teaspoon Dijon mustard
1 cup grapeseed oil
1 head garlic, roasted*
Kosher salt and freshly ground black pepper
Juice of 1 lemon
12 baby artichokes (poivrade variety, which are the tiny ones)
1 to 2 lemons
Kosher salt
2 to 3 tablespoons olive oil

Steps:

  • To make the aioli: Beat the yolk with the vinegar and mustard in a bowl. Whisk in the oil, drop by drop, to make a thick mayonnaise. Squeeze the garlic out of the roasted cloves into the mayonnaise and whisk smooth. Season the aioli with salt, pepper, and lemon juice, to taste.
  • To prepare the artichokes: Trim the artichokes, rubbing with lemon as you go, until you are down to the core with a bit of stem attached. Halve. While you're trimming, bring a pot of water to the boil. Squeeze the juice of a lemon into it and salt it. Drop in the artichokes and cook until tender, about 10 minutes, depending on the size. Drain, and pat dry. Heat the olive oil in a skillet and brown the artichokes on all sides. Transfer to paper towel to drain. Serve with the aioli.

Artichokes were one of those vegetables that really intimidated me. They just seemed so hard to prepare. But, once you get the hang of it, it's really easy. I like to serve mine with a lemon-garlic aioli for dipping.

2 lemons
2 medium artichokes
Nonstick cooking spray, for the baking dish
1/4 cup olive oil
Kosher salt and freshly ground black pepper
1/2 cup panko breadcrumbs
Zest of 1 lemon
2 tablespoons shredded Parmesan
1 tablespoon chopped fresh parsley
1 cup mayonnaise
2 tablespoons lemon juice
2 cloves garlic, minced
Kosher salt and freshly ground black pepper

Steps:

  • For the artichokes: Preheat the oven to 475 degrees F. Cut the lemons in half and squeeze the juice into a bowl. Add water.
  • Trim the top 1 inch off the tops of the artichokes. Use kitchen shears to trim the pointy edges off the leaves. Trim the ends of the artichokes. Cut the artichokes in half through the centers. Use a spoon to scoop out the fuzzy chokes and the purple leaves. Place the artichokes in the lemon water as you work to prevent them from browning.
  • Shake off the water from the artichokes and place, cut-sides down, in a small baking dish coated with cooking spray. Drizzle with 2 tablespoons olive oil and sprinkle with salt and pepper. Bake until the artichokes are tender, 25 minutes.
  • Meanwhile, heat the remaining 2 tablespoons olive oil in a small skillet. Add the panko and cook until toasted, about 2 minutes. Remove to a small bowl and let stand until room temperature, about 10 minutes. Stir in the lemon zest, Parmesan and parsley.
  • Make the lemon-garlic aioli: Stir together the mayonnaise, lemon juice and garlic in a small bowl. Season with salt and pepper.
  • To serve, turn over the artichokes and sprinkle with the panko mixture, stuffing some between the leaves. Drizzle or dip with the aioli.

2 artichokes
1/4 tsp lemon zest
1/4 cup good mayo (for vegan option use egg free mayo)
1/4 tsp finely minced garlic
1/4 tsp lemon juice
1/2 lemon
1/2 tsp dijon mustard
1/2 tsp salt divided
2 tbsp extra virgin olive oil

Steps:

  • Preheat oven to 400 degrees.
  • Trim artichoke leaves by snipping just the tops with scissors. Cut stem and leave about 1-2". Cut artichokes in half and rub with lemon half and squeeze juice all over the artichoke halves. Sprinkle both sides with salt and pepper and drizzle with olive oil.
  • Lay artichokes face down on parchment paper lined roasting sheet and roast for 35-40 minutes until tender.
  • Meanwhile, combine mayo, mustard, pinch of salt, garlic, lemon zest and lemon juice in small mixing bowl and stir well to combine.
  • When artichokes have finished cooking, remove one leaf at a time and dip bottoms in aioli and enjoy!

Keep in mind baby artichokes don't have the big inedible thistle, so that doesn't have to removed here. If you are using regular artichokes, prepare accordingly.

5 tablespoon(s) fresh lemon juice, divided
12 - baby artichokes
5 teaspoon(s) extra virgin olive oil, divided
1/4 teaspoon(s) kosher salt
1/8 teaspoon(s) freshly ground black pepper
1/4 teaspoon(s) mayonnaise
1 teaspoon(s) garlic, minced
1/2 teaspoon(s) lemon rind, grated

Steps:

  • Preheat oven to 425 degrees.
  • Combine 6 cups water and 4 tablespoons lemon juice in a large bowl. Cut off the top 1/2 inch of each artichoke. Cut off the stem of each artichoke to within 1 inch of base; peel stem. Remove bottom leaves and tough outer leaves, leaving tender heart and bottom. Cut each artichoke in half lengthwise. Place artichokes nin the juice mixture.
  • After 2 minutes, drain artichokes; pat dry with paper towels. Combine artichokes, 1 tablepoon oil, salt and pepper; toss well. Arrange in a nsingle layer on a baking sheet. Bake at 425 degrees for 10 minutes.
  • Combine remaining 1 tablespoon juice, remaining 2 teaspoons oil, mayo, garlic, and lemon rind in a small bowl. Serve with artichokes.

8 trimmed and stemmed large globe artichokes
1 whole head of garlic
1 cup water
1 cup mayonnaise
1 tablespoon finely grated lemon zest
2 tablespoons fresh lemon juice
1/4 teaspoon white pepper
A pinch of sugar
A pinch of salt

Steps:

  • Pack artichokes upright in a large pot. Add garlic. Pour in water. Bring to a boil. Reduce heat. Simmer, covered, for 35 minutes. Transfer to a plate; let cool. Peel and mash 4 steamed garlic cloves (reserve remainder for lamb). Stir in mayonnaise, zest, lemon juice, pepper, sugar, and salt. Remove artichoke leaves (reserve hearts for stuffing). Refrigerate leaves and aioli separately until ready to serve.
