Many cooks are intimidated by cooking fresh fish and, as a result, miss out on the heart-healthy, brain-boosting, omega-3 fatty acids in salmon. Never fear, though; This fast fish recipe is foolproof.

4 (4 ounce) salmon fillets, skin removed
1 tablespoon lime or lemon juice
½ cup panko (Japanese bread crumbs, available in the Asian food aisle), or substitute dry bread crumbs
¼ cup flaked sweetened coconut
Salt and freshly ground pepper, to taste
Cooking spray

Steps:

  • Preheat oven to 425 degrees.
  • Place salmon fillets on a non-stick baking pan. Brush juice on salmon.
  • In a shallow dish, combine panko, coconut, salt and pepper. Dredge each fillet in the mixture and return to baking pan. Spread leftover crumbs on top of each fillet. Coat with cooking spray.
  • Bake for 12 to 15 minutes. If desired, put under broiler until crust is golden brown.

Another great recipe from the 'Good Food' magazine (January 2003). This dish was created by Sara Buenfeld as part of a New Year's day buffet with a touch of Indian glamour. The recipe for this lightly spiced salmon serves 8, but can easily be adapted to serve any number really. It can be part of a buffet or served on individual plates. It is great for entertaining because it's impressive, not much work is involved, and you can prepare the salmon up to a day ahead. I will soon post the suggested side dishes to the salmon (Potato salad with curried mayo / Chicory and orange salad with ginger dressing).

2 ounces butter (50g)
8 green cardamom pods, seeds removed and finely crushed
3 tablespoons desiccated coconut
1 plump fresh red chili pepper, seeded and finely chopped
1 tablespoon grated fresh gingerroot
2 garlic cloves, finely chopped
1 teaspoon ground coriander
1 pinch ground turmeric
8 slim boneless skinless salmon fillets
2 tablespoons finely chopped fresh coriander

Steps:

  • UP TO A DAY AHEAD:.
  • Melt the butter in a medium pan, add the cardomom and coconut and stir non-stop for 2-3 minutes until the coconut starts to toast. Stir in the chilli, ginger, garlic, ground coriander and turmeric. Cook for another minute then leave to cool.
  • Arrange the salmon in a single layer, spaced slightly apart, in 1 large or two smaller buttered ovenproof dishes. Scatter on the coriander and spread the coconut mixture on top. Cover in cling film and chill (for up to one day) UNTIL ONE HOUR BEFORE COOKING.
  • TO SERVE:.
  • Turn the oven to conventional 200°C (390°F)/gas 6/fan 180°C (390°F). Roast the salmon for 13-15 minutes until cooked, but still moist. If this is for a buffet, bring to the table in the dish(es).

SPICED ROAST SIDE OF SALMON

Serve salmon with paprika, ginger and honey mustard glaze for an Indian-inspired, original roast

1½ kg side of salmon, skin on
1 tbsp olive oil, plus extra for brushing
½ tsp ground ginger
1 tsp paprika
½ tsp coarsely ground black peppercorns
1 tbsp wholegrain mustard
1 tsp honey
1 lemon, cut into wedges, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line a big roasting tin with baking parchment or foil - this helps to prevent the fish from sticking to the tin as it cooks. Brush the salmon skin with oil and place it, skin-side down, on the paper.
  • Mix the ground ginger with the paprika, pepper, mustard, honey and 1 tbsp olive oil. Spread it evenly over the fleshy side of the fish.
  • Roast, uncovered, for about 20 mins until the salmon is cooked through - check by poking a knife into the fillet and making sure the fish flakes easily.
  • Serve directly from the tin, or use a couple of fish slices to carefully lift the salmon onto a big plate. Slice into portions and serve with lemon wedges on the side.

Cooking whole sides of salmon for a centrepiece is a sociable and special way of eating

Number Of Ingredients 6

1 x 2kg/4lb 8oz salmon , filleted to give two sides, skin on
1 lemon , sliced
good handful mixed herbs such as parsley , dill, chervil or tarragon
2 bay leaves
1-2 shallots , thinly sliced
splash white wine

Steps:

  • Heat oven to 200C/180C fan/gas 6. Sit one of the salmon fillets, skin-side down, on a large sheet of foil or baking parchment. Scatter with the lemon slices, herbs, shallots and seasoning, then sit the second fillet on top - skin-side up. Tie in 2-3 places with string to secure, splash with wine and fold up the foil or paper to seal. Can be chilled for up to 3 hrs.
  • Place on a baking sheet and bake for 50 mins-1 hr until the salmon is cooked through - check by poking a knife into the fillets and making sure the flesh flakes easily. Serve in foil or paper on a serving plate, or carefully lift out using a couple of fish slices. Slice into portions and serve with the Lemon & chive mayonnaise and New potatoes 'Lyonnaise' (see 'Goes well with' recipes) and half-steamed broccoli (see below).
