1 (about 2 pounds) top or bottom round beef roast, tied
Coarse salt
freshly ground pepper
2 tablespoons vegetable oil
6 small onions, halved lengthwise
1 cup sour cream
1/4 cup grated peeled fresh horseradish, or prepared horseradish
1 tablespoon fresh lemon juice

Steps:

  • Preheat oven to 375 degrees. Sprinkle beef with 1/2 teaspoon salt, and season with pepper. Heat oil in a large ovenproof saute pan over high heat until hot but not smoking. Add beef; brown on all sides, about 5 minutes total. Remove pan from heat.
  • Place onion halves in pan, cut sides down. Transfer pan to oven. Cook beef and onions until an instant-read thermometer inserted into center of beef registers 140 degrees (for medium-rare), 35 to 40 minutes. Transfer beef to a wire rack set over a rimmed baking sheet, and let stand 10 minutes before carving. Reserve onions.
  • Stir together sour cream, horseradish, lemon juice, 1/4 teaspoon salt, and pepper to taste in a small bowl. Serve beef with horseradish sauce and roasted onions.

1/4 cup extra-virgin olive oil
1/2 cup finely chopped fresh rosemary leaves
6 garlic cloves, minced
1 teaspoon finely grated lemon zest
Coarse salt and ground pepper
1 top round beef roast (3 pounds), trimmed and tied
2 pounds small potatoes, halved or quartered if large
Horseradish Sauce

Steps:

  • Preheat oven to 400 degrees. In a small bowl, stir together 3 tablespoons oil, rosemary, garlic, and lemon zest; season with salt and pepper. In a large ovenproof skillet, heat 1 tablespoon oil over medium-high. Pat beef dry and add to skillet. Increase heat to high and cook, turning with tongs, until beef is browned on all sides, about 10 minutes.
  • Brush or spoon rosemary mixture over roast and place in oven. Roast 20 minutes. Remove from oven and place potatoes around roast, tossing in pan juices. Roast until potatoes are tender and beef is medium-rare (an instant-read thermometer inserted in thickest part of roast should read 120 degrees to 125 degrees), 30 to 35 minutes. Transfer roast to a cutting board, loosely tent with foil, and let rest 10 minutes. Toss potatoes with pan juices; tent with foil. Thinly slice meat against the grain and serve with potatoes and horseradish sauce.

1 (4 lb) boneless sirloin tip roast, trimmed and cut in half
olive oil flavored cooking spray
1/3 cup beef broth (I use low-sodium) or 1/3 cup beef bouillon (I use low-sodium)
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon thyme
1 teaspoon salt
1/2 teaspoon ground pepper
2/3 cup low-fat sour cream
1/4 cup light mayonnaise
2 tablespoons prepared horseradish
1 teaspoon grated lemon rind
1/2 teaspoon Worcestershire sauce
1 garlic clove, minced

Steps:

  • Rub halves of roast all over with herb rub, then coat them with cooking spray.
  • Heat a nonstick skillet over medium high heat and brown roast halves on all sides; remove roast halves to a 3 1/2-qt crock pot.
  • Add broth to the skillet and heat, stirring to scrape up any browned bit sticking to the pan; pour over beef.
  • Cover crock pot and cook on high setting 1 hour.
  • Turn to low setting and cook 6-8 hours more.
  • Remove roasts from pot, let stand 15 minutes, then slice thinly across the grain diagonally.
  • Spoon pan juices over beef slices.
  • Pass around Horseradish Sauce to spoon over beef.

2 1/2 kg sirloin beef
black pepper
125 g plain flour
1/2 teaspoon salt
2 eggs
1/2 pint milk
1 tablespoon cold water
60 g horseradish root, shredded
1/4 pint double cream
1 teaspoon sugar
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/2 teaspoon white pepper
2 teaspoons white wine vinegar

Steps:

  • Put the beef in a roasting tin, without adding fat. Sprinkle with pepper. Roast in a hot oven at 220 C / 425 F for 15 minutes. Lower the heat to 190 C / 375 F for the rest of the cooking time, allowing 15 minutes per 500g / 1lb. Baste the mean frequently with pan juices. The beef should be served underdone and left to rest 15 minutes before carving.
  • To make the Yorkshire pudding, sieve the flour and the salt together in a mixing bowl. Add the eggs and stir. Add half the milk slowly and stir until the mixture is smooth. Add the remaining milk slowly and beat the batter well, then beat in the cold water. About 15 minutes before the beef is ready, pour 2 tbsp of its fat into a 25cm / 10" square tin. Put the tin in the oven, and when the fat is sizzling hot, pour in the pudding batter and bake it at the top of the oven for 30 minutes. (The meat should be removed 15 minutes earlier to rest before carving). The pudding should be well risen, puffy, crisp and brown on the top and bottom, and should be served cut in square straight from the in in which it was baked.
  • To make the horseradish sauce, whip the cream until it forms stiff peaks, and fold in the horseradish, sugar, mustard, salt, pepper and vinegar. Serve cold.

1 c Kosher salt
1 6-7 lb beef top round roast
HORSERADISH SAUCE
1 c sour cream
1/2 c prepared horseradish
1 Tbsp Kosher salt
1 Tbsp freshly ground pepper

Steps:

  • 1. Set a rack over a baking sheet. Rub 1/2 cup of the salt all over the roast and let stand for 10 minutes.
  • 2. Repeat with another 1/2 cup of the salt.
  • 3. Transfer the roast to the rack and refrigerate uncovered for 2 days. Bring to room temperature 3 hours before roasting.
  • 4. Preheat the oven to 450 degrees F. Season the meat with pepper and roast for 20 minutes.
  • 5. Reduce the oven temperature to 225 degrees F and roast for about 1 hour and 30 minutes longer, until an instant-read thermometer inserted in the center of the roast registers 120 degrees F. Let the meat rest for 30 minutes. *I use an in oven internal thermometer for perfect temp.
  • 6. In a bowl, mix the sour cream with the horseradish and the remaining 1 tablespoon of salt and pepper.
  • 7. Slice the roast and serve with the horseradish cream.

1 teaspoon fennel seed, crushed
1 teaspoon dried rosemary, crushed
1 teaspoon each dried basil, marjoram, savory and thyme

3 fresh rosemary sprigs
HORSERADISH SAUCE:
3/4 cup sour cream

  • Instructions Preheat the oven to 350 degrees. In a medium bowl combine the horseradish sauce by mixing the horseradish, mayo, lemon juice, Worcestershire sauce, pepper, and salt.
