1 tablespoon olive oil
1 small onion, sliced
1 teaspoon thyme leaves
Kosher salt
Pepper
4 slices (1/2-inch-thick) rye bread
1 tablespoon unsalted butter or olive oil, melted
1 tablespoon whole-grain mustard
2 ounces Gruyère cheese, grated
2 slices roast beef

Steps:

  • Heat olive oil in a medium skillet over medium heat. Add onion, season with 1/4 teaspoon each salt and pepper, and cook, covered, stirring occasionally, about 5 - 7 minutes. Reduce the heat to medium-low, stir in thyme leaves and cook, uncovered, stirring occasionally, until the onions are golden brown, (add 1 tablespoon water to the skillet if the onions start sticking). Brush one side of each slice of bread with butter or oil. Form sandwiches with the bread, whole-grain mustard, Gruyère cheese, roast beef, and the onion mixture. Cook the sandwiches, covered, until the bread is golden brown and crisp and the cheese has melted, 4 to 5 minutes per side.

I modeled this sandwich after one I enjoyed at a little hole-in-the-wall coffee shop in Cardiff by the Sea, in Southern California. It was wonderful and so is this!

4 slices thick sourdough bread
1/3 lb thinly sliced roast beef (I use rare beef purchased at the deli.)
4 slices monterey jack with jalapeno pepper cheese, generous slices
1 teaspoon canned diced green chilis
mayonnaise
melted butter
salt

Steps:

  • Lay sliced bread on bread board.
  • Paint tops of bread slices generously with melted butter.
  • Flip bread slices over.
  • Spread mayonnaise generously on each slice of bread.
  • Assemble two sliced bread pieces with roast beef, cheese and 1/2 teaspoon diced green chilies.
  • Sprinkle with salt. Top sandwiches with other two slices of bread, mayo side down, butter side up.
  • Grill sandwiches on medium high heat griddle, with lots of butter on the grill beneath, until bottoms of sandwiches are golden brown and cheese begins melting.
  • Carefully flip sandwiches over using two utensils and grill again until bottom bread is also golden brown and cheese is melted.
  • Remove two sandwiches from griddle, slice each in half and arrange on two plates. Garnish plates.
  • Serve with dill pickles, yellow mustard, prepared horseradish and lots of napkins.
  • French fries, onion rings and cole slaw make wonderful additions to this meal.

I am a big cheese lover and one of my favorite cheeses is smoked gouda. I was craving something good to eat and thought I'd make up a good grilled sandwich with what I had on hand in the ref. This is what I came up with :) It hit the spot! and was simple to make and have on those spur of the moments.

1 (7 ounce) package oscar meyer slow roasted roast beef, deli thin
4 slices smoked gouda cheese
8 slices multi grain bread
8 tablespoons mayonnaise
butter
pickle (optional)

Steps:

  • Heat a sandwich grill or pan on medium -low heat while preparing the sandwiches.
  • Take 8 pieces of bread and spread 1Tbs. of mayonnaise on each slice.
  • Add roast beef and smoked gouda cheese to 4 slices of bread with mayonnaise. Top with the other 4 slices of bread with mayonnaise.
  • Add butter to pan or top the sandwich with spreadable butter and grill til lightly browned. Repeat til you have 4 sandwiches grilled.
  • Serve with pickles and your favorite chips, if desired.

1/4 cup butter, softened
1 cup caramelized onions
8 slices sourdough bread
1 cup A.1. Original Sauce
1 lb. good quality roast beef
1 pkg. (8 oz.) CRACKER BARREL Extra Sharp Cheddar Cheese (shredded to make 2 cups)

Steps:

  • Butter outside of bread slices, spread inside of each slice of bread with 2 tbsp A1 Sauce. Top one slice with ¼ lb of the roast beef, followed by 4 tbsp caramelized onions, and then finally ½ cup of shredded cheddar cheese. Top with other slice of bread, and repeat to make four sandwiches.
  • Spray a large skillet with cooking spray and heat over medium heat. Carefully place one sandwich (or two if you can fit them) in the hot skillet, brown on one side (about 60 seconds), flip, press slightly, and brown on other side (another 30-60 seconds). Repeat with rest of sandwiches. Cut on diagonal. Dig in!
