RITZ CHICKEN CASSEROLE
This recipe came from my friend Amanda, who loved to cook for us when we were roommates in college. This is another simple and delicious recipe- definitely a great comfort food!

Steps:
- Mix sour cream and soup in a bowl, place inside the refrigerator.
- Boil chicken breasts until tender; drain and let stand 10 minutes or until cool enough to handle.
- Spread cubed chicken evenly over the bottom of a sprayed 9X13 casserole dish.
- Salt and pepper chicken to taste.
- Remove sour cream and soup mixture from refrigerator and spread over the chicken in the casserole dish.
- Crush Ritz crackers inside of its plastic sleeve and then spread evenly over the casserole.
- Spoon melted butter over the top of all.
- Bake at 350°F until golden brown and bubbling, approximately 20-30 minutes.
- Enjoy.
POPPY SEED CHICKEN & RITZ CASSEROLE
I cannot remember for sure where this recipe came from, however it may have been a Southern Living Magazine. It is fast easy and always pleases the family. A nice do ahead meal that I have used for buffets or just having friends over for a quick get together.

Steps:
- In large pot, place chicken breast. Cover with water until covered by 2 inches. Bring to a boil, and simmer low for 20minutes. Drain and cool.
- When chicken is cool, shred or cut chicken into small pieces.
- In a bowl combine green onions, soup, sour cream, sherry, garlic powder, salt and pepper. Stir well.
- In another bowl combine crushed crackers, poppy seeds and butter. Mix well.
- In a greased casserole dish, lay chicken in bottom layer. Next pour soup mixture over top as next layer. Top casserole with cracker mixture.
- Bake in preheated 350°F oven for 30 minutes.
- (For do ahead, assemble with all but cracker mixture. Top with cracker mixture before baking. May be made 24 hours in advance and refrigerated. Bring to room temp before baking).

TANISE'S CHICKEN CASSEROLE WITH RITZ AND RICE
I have had several variations of chicken casserole but this one beats the band! I just experimented until it was what my family liked. You will see how it differs and how rich and creamy it is by adding just a few more ingredients. Rice makes it go farther. Makes enough to feed 10 people with leftovers! You can add water chestnuts or slivered almonds to add crunch. Cooking time does not include time to boil boneless chicken breasts. Looks delish!!! No calories skimped on here.

- If using boneless breasts, boil just until cooked through. Do not overcook as chicken will be tough. If using whole roasted chicken, just shred meat.
- Mix two kinds of soup and sour cream with chicken. Add in rice.
- Spread mixture into 9x13 baking dish sprayed with Pam.
- Melt margarine and mix with cracker crumbs. Spread cracker mixture evenly onto chicken mixture.
- Bake at 350 for 30 minutes or until bubbly. Do not overcook. I serve with greenbeans, rolls and nice southern iced tea!

- Mix together the chicken, soup, sour cream, and cheese in a bowl. Pour the mixture into a baking pan and spread evenly. Add crushed Ritz crackers all over the top of the mixture. Melt butter completely; spoon over the top of the cracker crumbs. Bake in a 350° oven for about 35 minutes, or until casserole is heated through and the cracker topping is nice and crispy. Serve and hope your family/guests/loved ones don't devour it in one sitting =) Such a ridiculously simple recipe -- I can't believe I haven't made it sooner, but I have a feeling it will become a staple. RITZ CHICKEN CASSEROLE
This homemade Ritz Chicken Casserole is a hearty and flavorful family favorite that's ready in less than 30 minutes, making the perfect weeknight dinner. Soft egg noodles are mixed with a creamy chicken and vegetable filling, and topped off with a crunchy Ritz cracker topping!

- Preheat the oven to 350 degrees. Spray a 9x13 baking dish with nonstick spray.
- In a 4-quart Dutch oven, add olive oil, bell pepper, onion, celery and cook over medium-high heat until onion is translucent and pepper/celery are becoming tender (about 5-6 minutes).
- Add minced garlic and cook for 30 seconds, stirring to prevent garlic from burning.
- Reduce heat to medium and add cream of chicken soup, half and half, then stir to combine.
- Once heated through, add cheese. Continue to stir to melt.
- Add cooked egg noodles and shredded chicken once the cheese is all melted.
- Season with parsley, salt, and pepper.
- Remove from heat and pour into the prepared 9x13 baking dish.
- Place the Ritz crackers in a ziplock bag and crush with a rolling pin. Add crackers to a medium bowl.
- Stir in melted butter and 1 cup shredded cheddar.
- Spread topping over casserole dish.Place the dish in a preheated oven uncovered and bake for 15 minutes or until cheese is melted.
"PUTTIN' ON THE RITZ" CHICKEN CASSEROLE
Steps:
- Fill an extra large pot 1/2-3/4 with water and bring to a slight boil. Place chicken breasts in the pot, reduce heat, cover and simmer until cooked through and the chicken pulls apart easily. Save 1 cup of the chicken broth for the mixture below and drain the rest. Pull apart chicken into extra small chunks. Preheat oven 350. Grease a 9x12 baking dish. In a medium bowl, mix the cracker crumbles and butter thoroughly. Layer half of the cracker mixture on the bottom of the baking dish. Layer all of the chicken chunks on top of the cracker crumbles. In a large bowl, mix soup, yogurt, and chicken broth. Layer over the chicken chunks and top with remaining cracker crumbles. Bake 45-60 minutes depending on how "brown and crispy" you like it. Enjoy!
