This recipe came from Trisha Yearwood, who married Garth Brooks and wrote a cookbook called Georgia Cooking in an Oklahoma kitchen with a forward by Garth Brooks himself! Gotta try these! :) Be sure to use paper liners in the muffin tins and spray them with nonstick spray; otherwise, they will crumble when you peel off the liners. This recipe also makes great mini muffins; just shorten the baking time by 5 minutes. You might also try using oat flour instead of all purpose for a healthier muffin.

1 cup chopped pecans
1 cup brown sugar, packed
1/2 cup all-purpose flour
1 teaspoon wheat germ (optional)
2 large eggs
2/3 cup butter, melted (1 1/3 sticks butter)
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350*F.
  • Place paper(or foil) liners in 9 muffin cups and spray with nonstick spray.
  • In a large bowl, combine the pecans, sugar, flour, and wheat germ(if using). Make a well in the center of the mixture.
  • In a separate bowl, beat the eggs until foamy. Add the melted butter and vanilla, stir to combine. Pour the egg mixutre into the well in the dry ingredients, stirring just until moistened.
  • Spoon the batter into the cups, filling each two thirds full.
  • Bake the muffins 20 minutes, or until a toothpick comes out clean when inserted in a muffin. Remove the muffins from the pans immediately and cool on wire racks. Enjoy!

This is a 3 layer pie: the bottom crust, a creamy cheesecake-like layer, and a delicious pecan pie layer on top. Warning: this is very rich, and definitely NOT diet food. Especially good with a dollop of whipped cream. It might keep up to a week in the fridge, but it's never lasted that long at our house! Dark chocolate pieces may be used in place of semi-sweet chocolate chips. Instead of chopped pecans, trying arranging pecan halves in an eye-pleasing manner on top of pie.

1 (9 inch) deep dish pie crust
1 (8 ounce) package cream cheese, softened
1 egg
1 teaspoon vanilla extract
⅓ cup white sugar
¼ teaspoon salt
3 eggs
¼ cup white sugar
1 cup light corn syrup
1 teaspoon vanilla extract
1 ¼ cups chopped pecans
1 cup semi-sweet chocolate chips

Steps:

  • In a small bowl, blend together cream cheese, 1 egg, 1 teaspoon vanilla, 1/3 cup sugar, and salt. Mix by hand until mostly smooth. Spread mixture into the bottom of the unbaked pie shell. Sprinkle with chopped pecans.
  • In another bowl, slightly beat 3 eggs. Stir in 1/4 cup sugar, corn syrup, and 1 teaspoon vanilla; blend well. Fold in chopped chocolate or chocolate chips. Very CAREFULLY pour corn syrup mixture over pecans. Cover pie crust edge with a strip of foil to prevent excessive browning.
  • Bake at 375 degrees F (190 degrees C) for 35 to 45 minutes, or until center is set. Cool completely. Store in refrigerator.

1 1/2 cups pecans
1 cup semisweet chocolate chips
1 unbaked 9-inch pie shell
4 eggs, beaten
1/2 cup sugar
1/2 cup light brown sugar
1/2 cup corn syrup
1/2 teaspoon vanilla
Pinch salt
1 cup granulated sugar
1/4 cup water
1 cup heavy cream

Steps:

  • Preheat the oven to 375 degrees F. Spread the pecan pieces and the chocolate chips evenly on the bottom of the pie shell. In a mixing bowl, whisk the remaining ingredients together. Pour the filling over the pecans. Bake for about 1 hour or until the filling sets. Cool for 30 minutes before slicing. Cut into individual servings and serve with a drizzle of Caramel Sauce and powdered sugar.
  • In a small, heavy-bottomed saucepan, combine the sugar and water and bring the mixture to a boil, stirring often. Cook, stirring occasionally, until the mixture is a deep caramel color and has the consistency of a thin syrup, 10 to 15 minutes. Remove from the heat. Stir in the cream, return the saucepan to the high heat, and boil the sauce until it regains the consistency of a thick syrup, about 2 minutes. Cool.

1 frozen deep-dish pie crust (9 inch), thawed

  • Bring syrup, sugar and butter to boil in medium saucepan on medium heat; simmer on medium-low heat 5 min., stirring occasionally. Cool slightly.

No-roll Pie Crust:
2 cups all-purpose flour
1 cup sugar
1 teaspoon pure vanilla extract
2 teaspoons finely-grated lemon or lime zest
1/2 teaspoon salt
1 cup (1 stick) chilled unsalted butter, or 1/2 cup butter and 1/2 cup Crisco, cut into chunks
Filling:
1/2 cup coarsely chopped walnuts
1/2 cup coarsely chopped pecans
1/2 cup sliced almonds
3/4 cup firmly packed dark brown sugar
1/2 cup light corn syrup
1/4 cup plus 2 tablespoons (3/4 stick) unsalted butter, melted
3 large eggs, room temperature
2 tablespoons unsulfured (light) molasses
1 teaspoon vanilla extract
1/4 teaspoon salt
1-1/2 cups fresh or frozen and thawed cranberries (about 6 ounces)
Garnish: Whipped cream or vanilla ice cream

Steps:

  • Preheat oven to 400 degrees. Place flour, sugar, vanilla, lime zest and salt in a food processor. Start the processor and through the feed tube add the pieces, one at a time. Process until a ball of dough forms on top of the blade. Remove from machine. Pick up chunks of the dough and press them into a well-greased 9-inch glass pie plate. Smooth the pieces together with your fingertips and bring the rim up a little higher than the pan edge. Flute or scallop it, cover and chill thoroughly. Meanwhile, combine walnuts, pecans and almonds on cookie sheet. Place sheet in the oven and toast about 5 minutes or until golden and crisp. Cool. Dock the chilled crust all over with the tines of a fork and bake 12 to 15 minutes or until pastry is just set. In a bowl, combine and whisk together the brown sugar, corn syrup, butter, eggs, molasses, vanilla extract and salt. Stir in the toasted nuts and the cranberries. Pour filing into prepared crust and bake until is set in the center, about 45 minutes. Cool pie on a rack completely before serving. Top each with whipped cream or vanilla ice cream.

1 cup pecans, Chopped
1 unbaked 9-inch pie shell

Steps:

  • Combine the chocolate chips, evaporated milk, and butter in a small saucepan.
  • Cook over low heat, stirring constantly, until mixture is smooth and creamy.
  • Combine the eggs, sugar, flour, salt, vanilla and pecans in a bowl and mix well.

I begged for this recipe from my next-door neighbor, when I was in jr. high. She and her sisters used to do some catering on the side, and this was one of their most requested items. This recipe utilizes yellow cake mix for the crust, and not a single egg! Rich, gooey, and oh so good! (NOTE: Pillsbury Moist Deluxe is the best cake mix for these.)

1 (18 ounce) box Pillsbury yellow cake mix (Moist Deluxe)
1/4 cup butter (no substitutes)
4 cups pecan halves
1 cup brown sugar
1/2 cup white sugar
1/2 cup honey
1 cup butter
1/4 cup cream

Steps:

  • Grease a 9x13 pan. Preheat oven to 350 F degrees.
  • Cut butter into cake mix. Pat into greased pan.
  • Cover crust with the pecan halves.
  • In a saucepan, cook the brown sugar, white sugar, honey, and butter over medium heat. Bring to a boil, and boil for 3 minutes.
  • Remove from heat, and add the cream.
  • Pour mixture over pecan halves.
  • Bake 17 - 22 minutes or until bubbly.
  • Let cool completely before cutting into squares.
