RICH (BUT LOW-CAL) VEGAN HOT CHOCOLATE
I mixed this up late on a cold rainy homework-y afternoon- and it was good, so I thought I'd keep it around ;-) Note: I put their amounts as "scant" but you could just be slightly generous with the other ingredients, if you use the full 2/3 c. each of liquid.

Steps:
- Combine all ingredients in a small saucepan.
- Heat over medium, watching carefully till it's bubbling. Turn down the heat to low and let it simmer very gently, mostly covered, for 3 minutes or so (say, while you fold that batch of laundry).
- Pour into a cup and enjoy.
VEGAN HOT CHOCOLATE
Use oat milk to make a seriously creamy hot chocolate. Try it with maple syrup if you prefer it a bit sweeter, or add a touch of spice or vegan marshmallows

- Heat all the ingredients, except the marshmallows, if using, in a small pan over a low heat, stirring frequently until the chocolate has melted. Remove and discard the whole spices with a slotted spoon, if using.
- Divide the hot chocolate between two mugs and top with the vegan marshmallows, if using, and an extra grating of chocolate.
