SWEET BELL PEPPER RICE



Sweet Bell Pepper Rice image

Normally a pepper and rice dish has a Mexican or Spanish kind of flair to it. I wanted something a little more Italian, and this is what I came up with.

2 cups water
1 cup long grain rice
1 tablespoon olive oil
1 small sweet onion, finely chopped
3 cloves garlic, minced
1 small green bell pepper, chopped
1 small red bell pepper, chopped
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon ground black pepper
1 tiny pinch salt
1 splash dry white wine
1 tablespoon grated Parmesan cheese

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, 20 to 25 minutes.
  • Heat oil in a large skillet over medium-high heat. Cook and stir onion in the hot oil until tender, about 3 minutes. Add garlic and continue to cook and stir until onion is translucent, 2 to 3 minutes more. Stir green bell pepper and red bell pepper into onion mixture; cook until tender, about 5 minutes. Season with basil, oregano, black pepper, and salt.
  • Pour wine into vegetable mixture and reduce heat to medium low. Simmer until liquid is reduced, about 5 minutes. Stir rice into vegetables. Top with Parmesan cheese before serving.

I grew up eating rice almost every day. This grain, along with beans and tortillas, make up the most of the Mexican diet. We eat so much of it that we've found different ways to prepare it. My mom generally served it white or Mexican style with tomato broth. On special occasions we liked to vary it a bit, for example, in September we celebrate independence, so we like to prepare white, red and green rice to resemble the Mexican flag. During Easter, we always prepare rice to be combined with all the other dishes our family prepares for this celebration. The recipe I share with you today has a white rice base, but its flavor changes the moment you add the poblano peppers and corn.

2 tablespoons of olive oil
1/2 white onion cut into slices
1 cup of rice, washed and strained
3 cups of water
1 poblano pepper peeled, deveined and finely chopped
2 cans (11 oz each) canned corn with peppers, opened and strained
1/2 teaspoon of garlic pepper
1 cube of chicken consommé

Steps:

  • Put a pot on high heat with the olive oil. When the oil is hot, add the onions and cook, constantly moving, until they're very soft. Approximately 3 minutes.
  • Add the rice and let fry in the oil for 5 minutes. Pour the water and add the pepper, mexicorn, garlic salt and consommé, stir well. When the water has boiled, lower the heat, cover the rice and let cook for approximately 20 minutes.
  • I recommend checking on it after 18 minutes to make sure the water has not entirely evaporated, this way you'll avoid having the rice stick to the walls of the pot. Just be sure not to mix the rice with a spoon, as this will only weigh it down. If you need to see the bottom of the pot simply insert a spoon in the middle and move to the side.
  • If you note that the water has evaporated, but the grains of rice have not fully cooked, add a quarter cup of water, cover and check again in 5 minutes.

1/2 cup finely chopped onion
1/2 cup diced sweet red pepper
1/4 teaspoon stem saffron, optional
1 cup rice
Salt to taste if desired
Freshly ground pepper to taste
1 1/2 cups fresh or canned chicken broth
1 medium-size ear of corn, shucked

Steps:

  • Heat butter in a saucepan and add onion, sweet pepper and saffron.
  • Add rice, salt, pepper and broth and bring to boil. Cover and cook 15 minutes.
  • Meanwhile, cut and scrape kernels from ear of corn. There should be about 3/4 cup. Stir corn into the rice mixture and cover. Cook about 2 minutes longer and serve

Raised in a Filipino household, I never knew there was such a thing as brown rice - brown? REALLY? - until I was married and on my own. I still love jasmine rice - but I really like that chewy, nutty thing going on with brown rice, too. This recipe is from Cook's Illustrated.

6 ounces andouille sausages, cut into 1/2-inch pieces
1 tablespoon olive oil
1 medium onion, chopped fine (about 1 cup)
1 red bell pepper, chopped fine (about 1 cup)
3 medium garlic cloves, minced
1 cup low sodium chicken broth
2 1/4 cups water
1 1/2 cups long grain brown rice
1 teaspoon table salt
1/2 cup frozen corn, thawed
1/4 cup roughly chopped fresh basil
1/4 teaspoon ground black pepper
1 lemon, cut into wedges

Steps:

  • Adjust oven rack to middle position; heat oven to 375 degrees. Cook sausage in Dutch oven over medium heat until lightly browned, 4 to 6 minutes. Using slotted spoon, transfer sausage to paper towel-lined plate; set aside. Add onion and pepper and cook, stirring occasionally, until well-browned, 12 to 14 minutes. Add garlic and cook until fragrant, about 30 seconds.
  • Add chicken broth and water; cover and bring to boil. Remove pan from heat, stir in rice and salt. Cover pot with lid and bake rice until tender, 65 to 70 minutes.
  • Remove pan from oven; uncover and discard foil. Fluff rice with dinner fork, stir in corn and reserved sausage, then replace lid. Let rice stand 5 minutes. Stir in basil and black pepper; serve, passing lemon wedges separately.

1 pound spicy or sweet Italian sausage
3 tablespoons extra-virgin olive oil
1 small onion, thinly sliced
1 tablespoon minced garlic (from 3 cloves)
1 large orange or red bell pepper, ribs and seeds removed, cut into 1/4-inch slices
1 1/2 cups Arborio rice
3 cups low-sodium chicken broth
Coarse salt and freshly ground pepper
2 small ears fresh corn, husks and silks removed, cut into 1-inch rounds
Cilantro leaves, for serving

Steps:

  • Preheat oven to 375 degrees. Pierce sausage all over with the tip of a paring knife. In a large straight-sided ovenproof skillet, heat 1 tablespoon oil over medium-high. Add sausage and cook, turning occasionally, until browned, about 3 minutes. Transfer to a plate.
  • Add remaining 2 tablespoons oil to skillet along with onion, garlic, and bell pepper. Cook, stirring occasionally, until onion is translucent, about 3 minutes. ½ onion, chopped
¼ green bell pepper, chopped
½ teaspoon chopped fresh thyme
½ cup tomato sauce
1 teaspoon browning sauce

2 (14 ounce) cans whole kernel corn, drained
3 ½ cups water
2 cups white rice

  • Cook the bacon in a large saucepan over medium heat until the grease begins to render. Stir in the onion, bell pepper, and thyme; cook until the onion is nearly translucent. 1/2 cup diced red pepper
1/2 cup diced onion
1 clove garlic, minced
3 chipotle chiles, seeded and diced
1 cup uncooked rice
3 cups fresh corn kernels
1 1/2 cups chicken stock or 1 1/2 cups water
1/2 cup cream
salt and pepper
1 scallion, sliced thin garnish

Steps:

  • Melt butter in large pan.
  • Saute onions, peppers, and garlic in butter.
  • Add rice stir to coat with the butter.
  • Add corn, chipotles, and stock bring to a boil add cream (Liquid should cover all ingredients) and reduce heat to simmer and cook for 20 minute till rice is tender.
  • Add more liquid if necessary.
  • Plate and garnish with scallions.
