2 tablespoons olive oil (or clarified butter)
1 cup onion (minced (about 1/2 medium))
1 cup white rice (long-grain, jasmine, or basmati (see note 1))
1 clove garlic (minced)
1 teaspoon lemon zest ((see note 2))
1 tablespoon lemon juice (from 1 lemon)
1 cup chicken broth ( or vegetable broth)
1 bay leaf
1/2 teaspoon Salt

Steps:

  • In a medium saucepan, heat clarified butter or olive oil until shimmering. Add onion and cook until softened and translucent, about 5 minutes.
  • Stir in rice and cook, stirring frequently, until rice is lightly browned, about 7 to 10 minutes.
  • Stir in garlic and lemon zest until fragrant, about 30 seconds. Add lemon juice, broth, bay leaf, and salt, and bring to boil.
  • Cover, reduce heat, and cook until rice is tender and all the liquid has been absorbed, about 15 to 17 minutes. Remove bay leaf and fluff with a fork.

CUMIN RICE

2 tablespoons butter
1/4 cup finely chopped onion
1 teaspoon minced garlic
1 cup converted rice
1/2 teaspoon ground cumin
Salt and freshly ground pepper to taste
1 1/2 cups fresh or canned chicken broth or water
2 sprigs parsley
2 sprigs fresh thyme or 1/2 teaspoon dried
1 bay leaf

Steps:

  • Melt 1 tablespoon of the butter in a heavy saucepan with a tight-fitting lid. Add the onion and garlic and cook, stirring, until wilted. Add the rice, cumin, salt and pepper. Stir briefly over low heat until the grains are coated with butter.
  • Stir in the broth and make sure there are no lumps in the rice. Add the parsley, thyme and bay leaf. Bring to a boil, cover and simmer over low heat. Cook for 17 minutes.
  • Discard the parsley and thyme sprigs and bay leaf. Using a fork, stir in the remaining butter. If the rice is not to be served immediately, keep it warm.

1 ½ cups chicken stock
1 tablespoon vegetable oil
¼ cup finely diced onion
1 bay leaf
1 cup uncooked basmati rice
salt to taste
1 tablespoon unsalted butter

Steps:

  • Heat chicken stock in a saucepan until boiling; keep hot until ready to use.
  • Heat vegetable oil in a 2 quart saucepan over medium-high heat. Cook and stir onion and bay leaf in the hot oil until onion is tender, about 5 minutes.
  • Stir basmati rice into onion mixture until rice is coated with oil.
  • Pour hot chicken stock into the rice mixture. Season with salt; stir.
  • Bring rice mixture to a boil; cover and reduce heat to medium-low. Continue simmering until rice is tender and liquid is absorbed, about 20 minutes.
  • Remove saucepan from heat and discard bay leaf. Add butter and fluff the rice with a fork.

3 Turkish bay leaves or 1 1/2 California
1 tablespoon olive oil
1 garlic clove, finely chopped
1 1/4 cups long-grain white rice
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup water
3/4 cup reduced-sodium chicken broth (6 fl oz)

Steps:

  • Cook bay leaves in oil in a 1 1/2- to 2-quart heavy saucepan over moderate heat, turning over occasionally, until leaves are lightly browned, 2 to 3 minutes. Add garlic and cook, stirring, until pale golden, about 30 seconds. Add rice, salt, and pepper and cook, stirring gently to avoid breaking bay leaves, 1 minute. Add water and broth and bring to a full boil, uncovered, over high heat. Cover with a tight-fitting lid, then reduce heat to low and simmer until water is absorbed and rice is tender, about 15 minutes.
  • Remove from heat and let stand, undisturbed, 5 minutes. Fluff rice with a fork and discard bay leaves.

1 tablespoon unsalted butter
1 medium yellow onion, cut into 1/4-inch dice
1/4 teaspoon ground cloves
1 teaspoon ground cinnamon
1 cup uncooked basmati rice
1 whole bay leaf
1 cinnamon stick
2/3 cup golden raisins
2 cups water
Salt and freshly ground pepper

Steps:

  • Melt butter in a medium high-sided saucepan set over medium heat. Add onion, cloves, and cinnamon; cook until onion becomes translucent and mixture is very fragrant.
  • Place rice in sieve, and rinse under cold running water. Add rice to saucepan, and stir so grains are coated in butter mixture.
  • Add bay leaf, cinnamon stick, raisins, salt, and pepper to saucepan. Stir in 2 cups water. Raise heat, and bring to a boil. Cover, and reduce heat to a simmer. Cook until all water has been absorbed and rice has cooked, 10 to 15 minutes.
  • Remove pan from heat, and let stand, covered, 5 minutes more. Season with salt and pepper, and serve.

3 tablespoons butter
1 clove garlic, finely minced
1/4 cup finely chopped onion
1 teaspoon stem saffron
1 bay leaf
1 1/4 cups rice
2 1/4 cups chicken broth
Salt to taste if desired

Steps:

  • Preheat the oven to 400 degrees.
  • Heat one tablespoon butter in a heavy saucepan with a tightfitting lid. Add the garlic and onion and cook, stirring, until the onion is wilted. Add the saffron, bay leaf and rice and cook, stirring, about 30 seconds.
  • Add the chicken broth and salt. Bring to a good boil.
  • Cover and place the saucepan in the oven. Bake exactly 17 minutes. Remove from the oven and keep covered until ready to serve. When ready to serve, discard the bay leaf. Fluff the rice with a fork and stir in the remaining butter.

1 (4.5 ounce) can mushrooms, with liquid
2 stalks celery, finely chopped
1 red bell pepper, finely chopped
1 (1 ounce) package dry onion soup mix
1 (10.5 ounce) can beef broth
½ cup vegetable oil
1 cup water
3 tablespoons soy sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a 9x13 inch baking dish, combine rice, mushrooms, celery, red bell pepper, onion soup mix, beef broth, oil, water and soy sauce.

1 tablespoon canola oil
2 medium-size onions (8 ounces total), peeled and chopped (1 1/2 cups)
1/2 teaspoon dried thyme
2 bay leaves
2 cups extra-long-grain white rice
4 cups chicken stock, preferably homemade
Salt to taste
1/2 teaspoon freshly ground black pepper

Steps:

  • In a saucepan or sturdy casserole dish, heat the butter and oil. When hot, add the onions, and saute over medium to high heat 2 to 3 minutes. Stir in the thyme, bay leaves and rice, mixing until the rice is coated with butter and oil.
  • Add the chicken stock, salt and pepper. Bring to a strong boil, stirring occasionally, over high heat. Then reduce the heat to very low, cover with a tight-fitting lid and cook about 20 minutes.

10 garlic cloves, peeled
1/2 cup fresh parsley leaves
1/2 cup fresh basil leaf
3 tablespoons corn oil
2 cups long grain rice

3 cups chicken stock

  • Combine the first 4 ingredients in a food processor and puree.
  • Put the oil in a large saucepan over medium heat and add the rice, stirring for a few minutes.
  • Stir in all but 1 tablespoon of the onion mixture, add the salt and pepper, and cook for a couple minutes stirring.
  • Add the stock and bring to a boil.
  • Cover and turn heat to medium/low cooking until liquid is absorbed, about 15-20 minutes.
  • Stir in the reserved tablespoon of the onion mixture and serve.
