1/2 cup butter, cubed
2 cups uncooked long grain rice
1/2 pound sliced fresh mushrooms
8 green onions, chopped
2 teaspoons dried oregano
2 cans (10-1/2 ounces each) condensed beef broth, undiluted
1-1/2 cups water

Steps:

  • In a large saucepan, heat butter over medium heat. Add rice; cook and stir until lightly browned, 5-6 minutes. Transfer to a 3-qt. slow cooker. Add mushrooms, green onions and oregano. Stir in broth and water. Cook, covered, on low until rice is tender and liquid is absorbed, 3-4 hours.

1 tablespoon butter
¾ cup chopped yellow onion
1 (10.5 ounce) can condensed beef consomme
1 (7 ounce) can mushroom stems and pieces
1 ¼ cups instant white rice (such as Minute®)

Steps:

  • Melt butter in a skillet over medium heat. Add onion and saute until the onion has softened and turned golden brown, 5 to 8 minutes.
  • Add consomme and mushrooms; bring to a boil.
  • Remove from heat and stir in rice. Cover and let sit until rice has absorbed all liquid, about 5 minutes.

1 (8 ounce) package sliced fresh mushrooms
¼ cup chopped green pepper
2 tablespoons chopped onion
1 ⅓ cups water
⅔ cup white rice
1 teaspoon chicken bouillon granules
⅛ teaspoon salt
1 pinch garlic powder
1 pinch ground black pepper

Steps:

  • Melt butter in a saucepan over medium heat; cook and stir mushrooms, bell pepper, and onion until tender, about 5 minutes. Stir in water, rice, bouillon granules, salt, garlic powder, and black pepper. Bring to a boil; reduce heat to medium-low, cover, and simmer until liquid is absorbed and rice is tender, 14 to 16 minutes.

4 tablespoons butter
3 cloves garlic, finely minced
2 medium onions, chopped
1 pound cremini mushrooms, roughly chopped
1 pound white mushrooms, roughly chopped
8 ounces shiitake mushrooms, stems removed, roughly chopped
2 cups long-grain rice
1/2 cup white wine
3 cups chicken stock
1/4 teaspoon turmeric
Salt and freshly ground black pepper
2 tablespoons chopped fresh parsley

Steps:

  • In a medium pan, melt the butter. Add the garlic and onions and cook for 2 minutes. Add the cremini, white mushrooms and shiitakes and cook until most of the liquid has reduced, about 5 minutes. Add the rice and stir to coat. Deglaze with the wine. Add the chicken stock, turmeric and salt and pepper and stir. Bring to a simmer and simmer with the lid on until the liquid is absorbed and the rice is tender, 15 to 20 minutes.
  • When it's done, sprinkle over some chopped parsley and serve.

Steps:

  • In a heavy saucepan, heat the oil and butter, add the onion and mushrooms and sauteed until soft and translucent.
  • Pour in the rice and stir to coat the granules well. Cook until the edges of the rice grains have turned translucent, but not toasted.
  • Add the stock and salt. Cover the pan tightly, placing a sheet or two of paper toweling under the lid, reduce the heat to low and cook until all the liquid has evaporated and grains are tender.
  • Correct the seasonings. Toss the rice with a fork and fold in the sauteed almonds and parsley.

1/4 cup butter
1 medium onion, minced
1 cup mushroom, thickly sliced
1 small green pepper
1 medium tomatoes, peeled,seeded and chopped
1 clove garlic, crushed
1 cup basmati rice, uncooked
1/4 teaspoon turmeric or 1/4 teaspoon saffron
1 3/4 cups vegetable broth or 1 3/4 cups stock
salt and pepper, to taste
2 tablespoons finely chopped parsley, , for garnish (optional)

Steps:

  • In a heavy saucepan or casserole, melt the butter over moderate heat.
  • Add the onion, mushrooms and sliced green pepper and cook gently until they begin to soften.
  • Stir in the tomato together with the garlic and cook for 2 minutes.
  • Now add the rice and the turmeric or powdered saffron, and cook 2 minutes until grains are thoroughly coated with butter but not browned, stirring constantly.
  • Pour in the broth (stock), sprinkle with salt and bring to a boil, stirring.
  • Reduce the heat to low.
  • Cover and simmer for approximately 20 minutes or until all the liquid has been absorbed and the rice is tender but still firm to the bite-- not mushy.
  • Gently fluff the rice with a fork.
  • Spoon onto a heated serving platter, being careful not to mash it, and sprinkle with chopped parsley.

1 leek, white and green parts thinly sliced (about 1 cup)
10 ounces sliced mushrooms (about 3 1/2 cups)
2 garlic cloves, minced (about 2 tsp)
1 teaspoon chopped fresh thyme
1 1/2 cups wild rice
1/4 cup madeira wine
1 tablespoon low sodium soy sauce
3 cups low sodium vegetable broth
1/2 cup frozen peas
1/4 cup pine nuts

Steps:

  • Preheat oven to 375 degrees.
  • Heat oil in a large dutch oven over medium heat. Add leeks and cook for 5 minutes or unil soft, stirring often.
  • Raise heat to medium, add mushrooms and cook for 7 minutes, or until liquid has evaporated and mushrooms begin to brown.
  • Srir in garlic and thyme, and cook 1 minute or until fragrant.
  • Stir in rice. Add wine and soy sauce, simmer 2 minutes or until almost all of the liquid has been absorbed. Add broth and 1 cup of water and return to a simmer.
  • Place lid on Dutch oven and bake 45 minutes. Remove lid, and bake 30 minutes more or until most of the liquid has been absorbed.
  • Remove from oven, cover and let stand 5 minutes.
  • Fold in peas and pine nuts. Season with salt and pepper and serve.

5 tablespoons butter
1 medium onion, chopped
1 lb mushroom, thinly sliced
salt & freshly ground black pepper, to taste
3 1/2 cups long-grain white rice
7 cups low sodium chicken broth (or 3 cups low-sodium chicken stock mixed with 4 cups water)

Steps:

  • Melt butter in a large flameproof casserole and cook the onion over low heat for 5 minutes.
  • Add the mushrooms, salt and pepper and continue cooking 5 minutes longer or until the mushrooms release their liquid.
  • Turn up the heat and cook, stirring constantly, until the moisture in the mushrooms evaporates.
  • Add the rice and stir it for a few minutes or until the grains are transparent.
  • Pour in the stock or stock mixed with water and bring to a boil.
  • Lower the heat, cover the pan and cook the rice for 20 minutes or until all the liquid is absorbed (If you have a heat diffuser, set the pan on it to prevent the bottom from scorching).
  • Transfer half the rice to a plastic container (save for making turkey fried rice).
  • Serve remaining rice at once.
