This delicious version of an old favorite is full of tomato flavor and is sure to brin gback memories of home. If you have really good flavorful ripe tomatoes, use them in place of canned tomatoes. Otherwise, canned tomatoes offer the best flavor and consistency.

2 tablespoons olive oil
1 1/2 cups onions, chopped
1 tablespoon garlic, chopped
1/4 cup basil, chopped
28 ounces canned plum tomatoes
1 quart vegetable broth
1 cup heavy cream
2 cups cooked rice
1 tablespoon basil, chiffonade (shredded basil)

Steps:

  • Sweat the onions and garlic in a little olive oil until translucent, about 5 to 7 minutes.
  • Add the broth, fresh basil and tomatoes, reserving some of the juice from the tomatoes.
  • simmer until everything is tender, about 20 minutes.
  • Puree the soup with a handheld blender, or in batches in a food processor or countertop blender.
  • Return the pureed soup to a low simmer.
  • Gently simmer the heavy cream before adding it to the soup, then use the reserved tomato juice to adjust the final consistency.
  • Add the rice just before serving.
  • Serve the soup in preheated soup cups or bowls and garnish with the chiffonade of basil.

Steps:

  • I like to make an unfussy rice and tomato soup (for myself, too, sometimes, especially when I'm trying to balance out my characteristic gluttony) by diluting a good, bought tomato sauce with water, adding a handful or so of basmati rice, and cooking until the rice is tender, about 8 to 10 minutes. With children it makes more sense to leave the soup fairly solid, but you can add water from a boiled kettle toward the end of cooking time if you want a thinner soup rather than liquid tomato-rice stew. Grate Parmesan on top and eat - with bibs.

Now I sometimes doctor it up adding garlic, red pepper flakes, or whatever. This soup is very forgiving, so do your own thing! I originally did not add the sugar quantity in the recipe, so have now corrected this.

4 slices bacon, minced
1 small onion, diced
6 ripe tomatoes or 32 ounces canned tomatoes
1 1/2 teaspoons sugar
1 1/2 lbs mild Italian sausage
8 cups beef stock or 8 cups broth
1/2 teaspoon oregano
1 cup uncooked long-grain rice
1/2 cup parmesan cheese
1 tablespoon butter
salt and pepper
fresh parsley, minced

Steps:

  • Saute bacon and onion together until lightly browned. Drain off fat.
  • In soup pot, add peeled and diced fresh tomatoes or break up canned tomatoes. Add sugar, then bacon/onion mixture. Simmer for 10 minutes.
  • Meanwhile, in separate pan cook sausage covered in water for 15 minutes. Drain, then cut into slices.
  • Place sausage in soup pot with bacon/tomato mixture. Add beef stock or broth and oregano, then bring to a rolling boil.
  • Stir in rice. Cook over medium heat uncovered until approximately 10 minutes until rice is tender, adding additional broth if needed.
  • Remove from heat then stir in parmesan cheese and butter. Salt and pepper to taste.
  • Put in serving bowls and sprinkle on minced fresh parsley. Additional parmesan cheese may also be sprinkled on.

2 (15 ounce) cans diced tomatoes
7 cups water or 7 cups broth
2 cups cauliflower florets
1 (15 ounce) can cannellini beans, drained and rinsed
6 fresh garlic cloves, diced

Steps:

  • Melt the butter in a stock pot over medium head and add the onion. Saute for about 5 minutes and then add the herbs, salt, bay leaves and rice. Saute for 2 minutes.
  • Add the tomatoes and water and bring to a boil. Lower the heat to a simmer and simmer for about 20 minutes, stirring occasionally.
  • After 20 minutes add the cauliflower and cook until just tender, about 5 minutes.
  • Add the beans and the garlic and continue cooking for about 5-8 minutes or until the cauliflower is tender and the garlic has lost its rawness.

Steps:

  • Heat a grill until hot. Rub the shrimp with curry powder on both sides. Place the shrimp on metal skewers or wooden ones that have been soaked in water. Grill the shrimp until they turn opaque. Season with 1/4 teaspoon of the salt and pepper to taste. Set aside.
  • Preheat the oven to 450 degrees. Rub the tomatoes with the olive oil and place in a roasting pan. Roast for 30 minutes, turning the tomatoes once. Pass the tomatoes through a food mill. 1 1/4 lbs wild mushrooms, such as shiitake, oyster, chanterelle, morel, chopped (recommend using a mix of mushrooms)
4 celery ribs, with leaves chopped
2 cups sun-dried tomatoes, dry-packed, cut into matchstick size
8 cups nonfat beef broth or 8 cups vegetable broth
1/4 cup no-added-salt tomato paste
1 teaspoon crushed red pepper flakes
salt, to taste
1 pinch cayenne (optional)
1 cup wild rice, uncooked
green onion, finely chopped (optiona)

Steps:

  • In a large pot, heat the oil over medium-high heat. Cook the onions until golden brown, about 8 minutes, stirring occasionally.

I threw this together to use up some leftover cooked wild rice. Be sure to use a good quality paprika -- the one I used was Hungarian sweet paprika, but I already have plans to try with hot or smoked paprika when I make this again. If you try it, let me know how it turns out!

2 tablespoons extra virgin olive oil
1 small onion, finely chopped
4 garlic cloves, minced
4 cups chopped tomatoes, with their juice
2 cups vegetable stock
1 tablespoon sweet Hungarian paprika (or other good quality paprika)
1/2 tablespoon dried thyme
2 cups cooked wild rice
salt
fresh ground black pepper

Steps:

  • Heat the oil over medium heat in a 3-quart soup pot. When hot, add the onion and garlic and cook until softened and translucent, about 3 minutes. Stir frequently If they start to brown, turn the heat down and stir.
  • Add the tomatoes, stock, paprika, and thyme to the pot and mix well. Break up the tomatoes a little bit with a spoon. Bring the mixture to a boil, then turn the heat down to medium-low, cover, and simmer for about 30 minutes, stirring occasionally.
  • If you want a smooth tomato broth with wild rice, let the soup cool and puree in a blender or with an immersion blender. I like it a little chunky, so I just mash up the tomatoes really well with a spoon.
  • Add the wild rice and season to taste with salt and pepper. Let the soup simmer for another 5 minutes or so, and serve. Enjoy!

1 cup long grain rice or brown rice
1 1/2 cups water
1 28-ounce can d8ced tomatoes
1 large yellow onions, roughly chopped
6 cloves garlic, peeled
1/2 teaspoon dried basil
2 tablespoons olive oil
2 sprigs fresh rosemary
Salt and black pepper to taste
1 15-ounce can tomato sauce
1 cup chicken broth
1 tablespoon balsamic vinegar
1 cup fat-free half and half

Steps:

  • Heat the oven to broil. In a small saucepan, combine the rice and water. Bring to a boil, then cover, reduce to simmer and cook for 20 minutes. When the rice is done, remove it from the heat and let stand for 10 minutes. Meanwhile, drain the can of diced tomatoes by pouring them into a mesh strainer set over a medium bowl. Use a silicone spatula to press the tomatoes to extract as much juice as possible. Set the juice aside. Transfer the diced tomatoes to a rimmed baking sheet. Add the onion, garlic, basil and olive oil. Strip the leaves from the rosemary sprigs and add them to the tomatoes and onions. Toss everything to coat well. Season with salt and pepper.
