I got this recipe from the Paula Dean show. It is soooo yummy and the ribs and potatoes come out perfect. I hope you enjoy this - my family loves it. This recipe makes a lot. It's great for nights when you are going to have company. I served 8 people easily. The one pot meal appeal makes it an easy fix. Be sure to use the baby back ribs as I have listed in the recipe. I put this in there rather than saying ribs because these work the best with this recipe..

2 lbs baby back ribs
2 tablespoons extra virgin olive oil (or whatever you use to cook with)
4 lbs red potatoes, halved
3/4 cup onion, chopped
1 (32 ounce) can sauerkraut
salt and pepper
1 cup water

Steps:

  • put oil in a large oven proof pot (I use cast iron).
  • brown ribs in the bottom of the heated pot.
  • Remove ribs from pot.
  • Cook onion in pot just until they start to turn brown.
  • Add the potato halves.
  • Put ribs in pot over onions and potatoes.
  • Pour sourkraut in pot on top of onions, ribs and potatoes.
  • Pour water over kraut.
  • Put lid on pot and put in oven at 350 degrees for 3 hours.
  • Remove and enjoy!

Grilled Pork Ribs and Sour Kraut image

This is a dish that I've been making for 20 years. When I was in grade school I used to think I didn't like ribs, mainly because my dad just couldn't cook them properly. The secret is the marinating (something dad didn't do). It takes time but it is worth the effort. I use 2 BBQ grills when I do this. One to grill the meat on and the second to start and add fresh coals as needed.

1 cup white vinegar
2 cups water
1 cup kosher salt or 1 cup sea salt
1 tablespoon dried thyme
1/2 tablespoon dried rosemary
1 cup apple cider vinegar or 1 cup white vinegar
1 cup water
2 cups apple cider (filtered)
1 tablespoon dried thyme
1/2 tablespoon dried rosemary
2 teaspoons black pepper (more or less for personal taste)
5 lbs pork ribs (don't trim the excess fat)
4 (32 ounce) jars sauerkraut (home made is best but that's another recipe.)

Steps:

  • Mix brine solution and marinate ribs overnight in covered non reactive container. You will need to make enough brine to completely immerse ribs so I kept the math simple.
  • In BBQ grill start coals about 1 1/2 to 2 hrs before cooking. You want a nice medium to medium/low heat on the coals. When the coals are ready, use tongs to move coals to outer edges of grill. This is making room for the steaming pan. (I use a 9x12 pan.).
  • Mix steaming solution and fill pan 1/2 way. Place pan in center of grill and move coals so that they coat evenly from the edge of BBQ to the pan. (You will need to keep an eye on the steaming solution as it will evaporate away) Keep the pan filled during the grilling process.
  • Spray grill with non stick olive oil spray and place on BBQ.
  • remove ribs from brine solution and place on grill fat side down. Close lid.
  • Mop ribs with mopping solution every 20 minutes or so turning each time you mop.
  • If ribs start to cook to fast open lid vents to let some heat out. (cooking to fast will result in tough ribs and no one likes that.).
  • Depending on size of grill and amount of ribs this will from 5 to 10 hours.
  • I prefer a slightly crispy outside to my ribs so I stop mopping in the last hour of grilling. But do continue to turn every 20 minutes or so.
  • Test ribs for tenderness with meat fork. (I like my ribs to almost fall off of the bone.).
  • 30 Minutes before ribs are done cooking place sour kraut in cast iron dutch oven and place ribs in pot to simmer. (This will finish the ribs to desired tenderness and share flavors between the meat and the sour kraut.).
  • Serve with your favorite side dishes and salads.

I had a 1/2 slab of ribs. So I took them with sauerkraut and potatoes and made a New Years tradition --- PORK AND SAUERKRAUT. NOTE: In the getting ingredients ready, I had vegetables broth in picture. The vegetables broth didn't taste right, so I used beef broth. Lets go to the KITCHEN!!!

1/2 slab st. louis ribs,
1 can(s) (14.5oz) sauerkraut, washed - well drained
4-5 medium red potatoes, washed and quartered
1 cup(s) beef broth
1 small green bell pepper, seeded and chopped
1-2 medium jalapeno peppers, seeded and chopped
1/2 teaspoon(s) red pepper flakes
1 teaspoon(s) sea salt
1/2 teaspoon(s) coarse black pepper

Steps:

  • Let's get all ingredients together!
  • Take the 1/2 slab of ribs, and put the red pepper flakes, sea salt and pepper into a small bowl, mix well, and put on ribs.
  • Place in refrigerate for 2 hours. Take out and let rest for 1/2 to 1 hour. After ribs have been out and ready to go in crock pot....
  • Cut ribs between each rib.
  • Wash red potatoes and quarter potatoes. You may have to cut in half to equal potatoes in size to make sure they cook the same.
  • Take 1 cup of beef broth and put in a 4 or 5 qt. crock pot. Turn crock pot on low!
  • Take sauerkraut and wash and drain well.
  • Cut up green bell pepper...
  • Cut up jalapeno pepper
  • Take cut up ribs and place in crock pot in the beef broth.
  • Add potatoes and place on top of ribs.
  • Add bell pepper and jalapeno pepper and place on top of potatoes.
  • Take sauerkraut and place on top of peppers.
  • Put lid on crock pot and make sure it is on low! Let it cook on low for 7 hours.
  • At 7 hours, check to see if potatoes are fork tender.
  • If potatoes are fork tender, stir and check the ribs and peppers. Add more salt and black pepper if needed...
  • Put lid back on crock pot for about 1/2 to1 hour.
  • This recipe is not to spicy! But you could make it more spicy by putting more red peppers flakes. ENJOY with applesauce and garlic toast with a glass of wine!!!
