A wonderful bread for snacking or an afternoon pick-me-up with coffee. Originally from Kitchen Keepsakes by Bonnie Welch and Deanna White.

Number Of Ingredients 13

3 eggs
1 cup oil
2 cups brown sugar
2 teaspoons vanilla
2 1/2 cups rhubarb, chopped
1/2 cup walnuts or 1/2 cup pecans, chopped
3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon nutmeg
1/2 teaspoon allspice

Steps:

  • Beat eggs until thick and foamy.
  • Add oil, brown sugar, vanilla.
  • Beat well.
  • Stir in rhubarb, nuts.
  • Add remaining ingredients.
  • Mix well.
  • Pour into two greased and floured loaf pans.
  • Bake at 350° for one hour.
