3/4 cups all-purpose flour
2/3 cup packed light brown sugar
1/3 cup old-fashioned oats
1/4 teaspoon ground ginger
1/4 teaspoon kosher salt
Pinch of ground nutmeg
8 tablespoons (1 stick) unsalted butter, at room temperature
8 tablespoons (1 stick) unsalted butter, at room temperature, plus more for greasing the pan
2 cups all-purpose flour (see Cook's Note)
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup granulated sugar
3 large eggs
1 tablespoon pure vanilla extract
1 cup plain whole-milk Greek yogurt
3 stalks rhubarb (about 7 1/2 ounces), sliced 1/8 inch thick (about 3 cups)

Steps:

  • For the crumb topping: Combined the flour, brown sugar, oats, ginger, salt and nutmeg in a small bowl. Add the butter and mix thoroughly with your fingers or a fork until all the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers. Set aside.
  • For the cake: Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk together the flour, baking powder, baking soda and salt in a medium bowl.
  • Beat the butter and granulated sugar together in a large bowl with an electric mixer (or using a stand mixer fitted with a paddle attachment) on medium-high speed until light and fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition. Beat in the vanilla.
  • Reduce the mixer speed to low and mix the flour mixture in 3 parts, alternating with the Greek yogurt in 2 parts, beginning and ending with the flour and beating until just incorporated. Fold in the rhubarb using a rubber spatula. Take care not to overmix the batter.
  • Spoon the batter (it will be thick) into the prepared pan and smooth with an offset spatula. Sprinkle on the crumb topping, distributing it evenly.
  • Bake until the topping is golden brown and a toothpick inserted into the center of the cake comes out with just a few moist crumbs, 1 hour to 1 hour 10 minutes. Let the cake cool completely in the pan on a wire rack, about 1 hour.

Combine buttermilk and vanilla; set aside. , Combine flour, baking soda and salt; add alternately with buttermilk/vanilla to the creamed mixture. Stir in rhubarb. Spread in a greased 13x9-in. baking pan. , Combine the remaining sugar with cinnamon; sprinkle over batter. I got this great recipe from my mother-in-law who's been making it for years! It doesn't have a strong rhubarb taste. It's sweet and moist. I hope you enjoy making it as much as I do. I always try to use fresh rhubarb, never frozen and then thawed because it doesn't work well.

1 c milk
1 Tbsp vinegar
1 1/2 c brown sugar
1/2 c butter
1 egg
1 tsp baking soda
2 c flour
1 tsp vanilla
2 c raw rhubarb (cut into chunks)
TOPPING
1/3 c sugar
1/2 tsp cinnamon

Steps:

  • 1. First, mix milk with vinegar and set aside.
  • 2. Next, blend brown sugar, butter and egg.
  • 3. Add and stir baking soda into the milk/vinegar mixture.
  • 4. Pour milk mixture into the brown sugar, butter and egg mix and blend.
  • 5. Next, add flour and vanilla and mix well.
  • 6. Then add the Rhubarb chunks.
  • 7. Pour batter into well-greased 9x13 pan.
  • 8. Mix up the topping ingredients and sprinkle on top of the cake batter.

1/4 teaspoon ground cinnamon

2 1/2 cups rhubarb (fresh or thawed frozen)
3 -4 drops red food coloring
2 1/4 cups flour
3/4 cup sugar
3/4 cup cold butter
1/2 teaspoon baking powder

1 egg, beaten
1 (6 ounce) carton vanilla yogurt
1 teaspoon vanilla
1 egg, beaten
8 ounces mascarpone cheese
1/4 cup sugar
1/2 cup chopped pecans
1/4 cup flaked coconut

Steps:

  • Rhubarb layer: In a large saucepan, combine the first five ingredients. Mix until smooth and then add the rhubarb. Bring to a boil, cook and stir for 2 minutes or until thickened. Remove from heat, add the food coloring and set aside.
  • Batter: In a bowl, combine flour and sugar; cut in butter until mixture resembles coarse crumbs. Set aside 1 c for topping. Add baking powder, baking soda, and salt to remaining crumb mixture. Combine egg, yogurt and vanilla; stir into batter until smooth. Spread into a greased 9 inch springform pan.
  • Topping: Combine the egg, Mascarpone cheese and sugar; spoon over batter. Top with rhubarb mixture. Add pecans and coconut to the reserved crumble mixture; sprinkle over top.

  • Cool on wire rack for 20 minutes; remove sides of pan. Cool completely.
