Growing up in Alaska, we had rhubarb growing out of our ears. This recipe is a great way to use it, and people will devour it.

1 cup all-purpose flour
1 cup brown sugar
¾ cup oats
½ cup melted butter
1 teaspoon ground cinnamon
4 cups diced rhubarb
1 cup white sugar
1 cup water
2 tablespoons cornstarch
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix flour, brown sugar, oats, butter, and cinnamon together in a bowl until crumbly. Press 1/2 of the oat mixture into the bottom of prepared baking dish. Sprinkle rhubarb over oat mixture.
  • Combine white sugar, water, cornstarch, and vanilla extract in a saucepan over medium heat; cook and stir until thick and clear, about 5 minutes. Pour sugar mixture over rhubarb. Sprinkle remaining oat mixture over rhubarb.
  • Bake in the preheated oven until crisp is lightly brown and bubbling, about 1 hour.

1 ½ cups all-purpose flour
1 ¼ cups rolled oats
1 cup brown sugar
1 teaspoon ground cinnamon
½ cup melted butter
2 cups chopped rhubarb
2 cups chopped apples
2 tablespoons cornstarch
2 tablespoons water
1 cup white sugar
1 cup water
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Stir flour, oats, brown sugar, and cinnamon together in a bowl. Pour melted butter into oat mixture and stir until crumbly. Pat half the oat mixture into the bottom of a 9x13-inch baking dish.
  • Stir rhubarb and apples together in a bowl; pour on top of oat mixture in baking dish.
  • Stir cornstarch and 2 tablespoons water together in a bowl until cornstarch is dissolved and mixture is smooth.
  • Heat sugar, 1 cup water, and vanilla extract in a saucepan over medium-high heat; bring to a boil, stirring constantly. Pour cornstarch mixture into sugar mixture and continue to boil, stirring constantly, until mixture thickens, 1 to 2 minutes. Drizzle sugar mixture over rhubarb and apples; sprinkle remaining oat mixture over the top.
  • Bake in the preheated oven until hot and bubbly, 35 minutes.

Even if you're not wild about rhubarb, you'll be wild about this! You can make this in advance, refrigerate and heat individual servings in the microwave, if you'd like.

2 cups sugar
1/4 cup flour
5 -6 cups chopped rhubarb
1 package yellow cake mix
3/4 cup butter, melted
chopped nuts, if desired

Steps:

  • Mix flour and sugar together, add rhubarb, tossing well.
  • Place in a 9" x 13" baking dish.
  • Sprinkle dry cake mix and chopped nuts, if using, over rhubarb mixture.
  • Drizzle melted butter over all.
  • Bake at 350 degrees F for 50- 60 minutes.
  • Serve warm topped with vanilla ice cream, if desired.

We had this for dessert last night and so glad I did we had company this gentleman is from India never ever had rhubarb before. He absolutely loved it we love it here and I had no idea he had never had it before so it was a new experience for him

2 cup(s) strawberries
2 cup(s) rhubarb
1 cup(s) sugar
2 tablespoon(s) flour
TOPPING
3/4 cup(s) flour
3/4 cup(s) oatmeal
3/4 cup(s) brown sugar
1/8 teaspoon(s) salt
I/2 cup(s) butter

Steps:

  • Pour boiling water over Rhubarb let sit 10 minutes
  • While rhubarb is sitting clean and slice Strawberrys
  • Drain rhubarb add strawberrys mix sugar and flour together pour over rhubarb and strawberrys mix well pour into baking dish.
  • Mix flour, oatmeal, brown sugar and butter cut in slices and softened. Cut together with pasty cutter.
  • Pour over other mixture. Bake in 350 oven till top is golden and mixture is bubbly. About 35 minutes.
