2-2/3 cups all-purpose flour
1 teaspoon salt
1 cup butter-flavored shortening
6 to 8 tablespoons cold water
FILLING:
2 cups thinly sliced peeled tart apples
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup halved fresh strawberries
1 cup fresh blueberries
1 cup fresh raspberries
1 cup fresh blackberries
1 cup sliced fresh or frozen rhubarb
1/3 cup all-purpose flour
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1-1/2 cups plus 1 teaspoon sugar, divided
2 tablespoons butter
1 tablespoon 2% milk

Steps:

  • In a large bowl, combine flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide dough in half so that 1 portion is slightly larger than the other. Wrap and refrigerate until easy to handle, about 30 minutes., Preheat oven to 400°. On a lightly floured surface, roll out larger portion of dough to fit a 9-in. deep-dish pie plate or cast-iron skillet. Transfer pastry to pie plate., In a large bowl, toss apples with lemon juice and vanilla; add berries and rhubarb. Combine flour, allspice, cinnamon and 1-1/2 cups sugar; add to apple mixture and toss gently to coat. Spoon into crust; dot with butter., Roll out remaining pastry; make a lattice crust. Trim, seal and flute edges. Brush milk over lattice top. Sprinkle with remaining sugar., Bake 15 minutes. Reduce heat to 350°; bake until crust is golden brown and filling is bubbly, 50-60 minutes longer. Cover edges with foil during the last 15 minutes to prevent overbrowning if necessary. Cool on a wire rack.

1 refrigerated pie pastry
FILLING:
5 cups thinly sliced peeled Fuji apples (about 5 medium)
2 cups sliced fresh or frozen rhubarb (1/2 inch thick), thawed
1/2 cup sugar
3 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
TOPPING:
1/3 cup all-purpose flour
1/4 cup sugar
1/4 cup quick-cooking oats
1/8 teaspoon salt
1/8 teaspoon ground cinnamon
2 tablespoons butter

Steps:

  • Preheat oven to 375°. Unroll pastry sheet into a 9-in. pie plate; flute edge. Refrigerate while preparing filling and topping., In a large bowl, combine apples and rhubarb. In a small bowl, mix sugar, flour and cinnamon; add to apple mixture and toss to coat. In a small bowl, mix the first five topping ingredients; cut in butter until crumbly. Transfer filling to crust; sprinkle with topping., Bake 50-60 minutes or until topping is lightly browned and filling is bubbly. Cover edge loosely with foil during the last 20 minutes if needed to prevent overbrowning. Remove foil. Cool on a wire rack.

4 cups sliced rhubarb
1 cup peeled and chopped apple
1 2/3 cups sugar
1/3 cup all-purpose flour
1 dash ground cinnamon
1 tablespoon butter
1 pastry for double-crust pie

Steps:

  • Preheat oven to 400'F.
  • For the filling:.
  • In a large saucepan combine the rhubarb, apple, sugar, flour and cinnamon.
  • Cook and stir over medium heat just until the mixture thickens. Remove from heat and add the butter. Cool.
  • In the meantime, prepare a pastry shell for a double crust pie.
  • To assemble the crust:.
  • On a lightly floured surface, roll one half of the dough from the center out to form a 12 inch circle. Place this into a 9 inch pie dish.
  • Trim to 1/2 inch beyond the edge of the plate.
  • Put the prepared filling into the pie shell.
  • Roll the remaining pie dough out and form it into a 12 inch circle.
  • Cut the pastry (for the lattice) into 3/4 to 1 1 1/4 inch strips.
  • Weave the strips over the filling in a lattice pattern. Press the ends of the strips into the crust edge. Fold the bottom pastry over the ends of the strips; crimp the edge.
  • To prevent the edges of the crust from burning cover with tin foil.
  • You might want to put this on a baking sheet with edges so the bottom of your oven doesn't get any filling on it.
  • Bake the pie for 25 minutes. The remove the foil and bake for an additional 25 minutes or until the center is bubbly and the crust golden.
  • Cool on a wire rack.

I thought I had lost my recipe forever, when while packing to move, I FOUND IT!!!!!!! I was THRILLED!!!!! This is a very SWEET pie, gotta warn ya!!! LOL!!! If you prefer a sweet-tart concoction, you'll want to decrease the amount of sugar, but this is the ONLY way I'll even TOUCH rhubarb! Everyone who has tried my pie absolutely loves it, even the ones that SWEAR they won't eat rhubarb!! (This is my very own recipe.) **I once tried making it with frozen rhubarb and it did NOT work! It came out runny, so I do not recommend using anything but fresh rhubarb! (I don't think frozen strawberries would work, either.Just use fresh only.)Hope you enjoy my pie!!! Really good with vanilla ice cream, too! ;)

1 cup light brown sugar
1/3 cup flour, plus
1 tablespoon flour

3 granny smith apples, peeled and grated

Steps:

  • In large mixing bowl, slice strawberries and rhubarb and sprinkle with HALF of the REGULAR (white) sugar, set aside.
  • In medium/small bowl, combine rest of sugars, flour, and cinnamon.
  • In small bowl, grate peeled apples, tossing with lemon juice so they don't turn brown.
  • Pour medium bowl mixture and apple mixture along with vanilla into the large bowl of rhubarb and strawberries and fold well til mixed.
  • Pour mixture into pastry-lined 9" deepdish pie plate.
  • Cut up butter and dot evenly.
  • Cover with second pastry, seal edges well, and flute.
  • Cut slits to vent.
  • Brush top pastry crust with a little milk and sprinkle with sugar.
  • Bake in 375 degree oven for about 50-60 minutes til done. Ovens vary so much that this is the best I can tell ya! *Cover edges with foil if they start to brown too much.
  • ***You may want to set the pie on a foil-lined small cookie sheet to catch any drips if it happens to bubble over a bit. Hot bubbly sugar can create a horrible mess and can really SMOKE! LOL! Best to prevent the fire department coming when the neighbors see smoke coming out the kitchen window! ;).
  • ***If you prefer, you can also use less cinnamon and vanilla -- but we really enjoy a WOW kinda pie ourselves! ;).

Basic Sweet Piecrust, recipe follows
2 pounds fresh rhubarb, trimmed and cut into 1-inch thick pieces
2 pounds McIntosh apples (6 to 8 apples), cored, peeled, and each cut into 12 equal slices
1 cup granulated sugar
1 cup packed light brown sugar
1/4 cup cornstarch
2 tablespoons fresh lemon juice
2 tablespoons apple, cherry, or grape brandy
1 cup bleached all-purpose flour
1 cup chopped walnuts
4 tablespoons unsalted butter, cut into 1/2-inch pieces and chilled
1 teaspoon ground cinnamon
Pinch freshly grated nutmeg
2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
3/4 cup solid vegetable shortening
6 to 7 tablespoons ice cold water

Steps:

  • Preheat the oven to 370 degrees F.
  • Roll out the dough on a lightly floured work surface into an 11-inch round about 1/8-inch thick. Transfer the dough to a 9-inch pie pan. Trim off any overhanging dough to make a 1/2-inch wide overhang around the edge of the pan. Flute the edges of the dough with your fingertips.
  • In a large bowl, mix the rhubarb, apples, sugar, 1/2 cup of the brown sugar, the cornstarch, lemon juice, and brandy, and toss to coat the fruit evenly. Pour the mixture into the piecrust.
  • In a medium bowl, combine the flour, walnuts, remaining 1/2 cup brown sugar, butter, cinnamon and nutmeg and mix well with your fingertips until the mixture resembles coarse crumbs. Sprinkle evenly over the filling.
  • Bake until the top is golden brown and the juices are bubbling, 40 to 45 minutes. Cool on a wire rack for at least 15 minutes before serving.
  • In a mixing bowl, combine the flour, sugar, and salt. Mix well. Add the shortening and mix until the mixture resembles coarse crumbs. Add the water and let sit 1 minute. Using either a fork or your hands, carefully press the mixture together to form a soft ball. Wrap in plastic wrap and refrigerate at least 30 minutes.
  • Preheat oven to 350 degrees F.
  • Remove the dough from the refrigerator and place it on a lightly floured surface. Roll out the dough on the floured surface into a circle about 12-inches in diameter and 1/8-inch thick. Gently fold the circle of dough in half and then in half again so that you can lift it without tearing it, and unfold into a 9-inch by 2-inch deep-dish pie pan. Crimp the edges and place in the oven.
  • Bake until golden, about 15 to 20 minutes. Remove from the oven and cool completely.

2 cups all-purpose flour
1/2 teaspoon salt
2/3 cup shortening
6 -7 tablespoons cold water
1 1/4 cups sugar

2 cups fresh raspberries (or frozen, partially defrosted)
1 medium cooking apple, peeled and shredded (about 3/4 cup)

  • In a medium bowl stir together the 2 cups all-purpose flour and salt. Using a pastry blender or two knives, cut in the shortening until pieces are pea-size.
  • Sprinkle 1 tablespoon cold water over part of the mixture; gently toss with a fork. Push moistened dough to sides of bowl. Repeat, using 1 tablespoon cold water at a time, until all of the dough is moistened.
  • Divide dough in half. Form each half into a ball.

Use your own pastry, store bought pie shells or my recipe for pastry with no trans fat or whole wheat canola oil pastry for a healthier pie! Cover the fruit mixture with a full crust, pastry lattice or the topping from my rhubarb crumble pie (recipe#91390).

- i froze a 1 qrt bag of apples last year and used that. u may use fresh if u like

6 apple - peeled, cored, and chopped
3 rhubarb, diced
1 cup white sugar
2 teaspoons ground cinnamon

  • Preheat oven to 440 degrees F (220 degrees C).
  • Combine apples and rhubarb in a large bowl. Mix together sugar and cinnamon in a small bowl, then sprinkle over fruit. Toss until fruit is thoroughly coated. Spoon mixture into pastry shell.

A cheat's fruit pie for a family dessert, especially after the Sunday roast

375g pack ready-rolled shortcrust pastry
400g Bramley apple , sliced
400g pack rhubarb , cut into lengths
2 tbsp cornflour
milk , for brushing
100g demerara sugar plus extra for sprinkling
2knobs stem ginger chopped

Steps:

  • Heat oven to 180C/fan 160/gas 4 and grease a large baking sheet. Unravel the pastry and place on the baking sheet. Mix the sliced apple and rhubarb with the sugar, ginger and cornflour then pile into the centre of the pastry. Gather up the sides of the pastry to enclose the fruit so that the pie looks like a rough tart - you need to work with the size of the pastry so it will be more of an oblong shape than round.
  • Brush the pastry with milk and scatter with demerara. Bake for 35 mins until the pastry is golden and the fruit is tender. Cut into slices and serve with custard.

1 package (14 oz.) frozen rhubarb slices-defrosted
6 granny smith apples, peeled and sliced thin
1 cup raisins
1 tablespoon lemon juice
1 teaspoon cinnamon
1 teaspoon ginger
1 teaspoon nutmeg
1 teaspoon allspice
2 cups sugar
1/4 cup flour
1 pre-made deep-dish pie crust
1/4 cup sugar
1/2 cup flour
1/4 cup butter

Steps:

  • Preheat oven to 400 degrees F. Place rhubarb, apple slices, and raisins in bowl. Add lemon juice and spices. Allow to sit for 10 minutes. Then, add sugar and mix thoroughly. Add 1/4 cup flour and mix well. Ingredients make be a little juice, but that's okay. Add to pie shell.
  • In separate bowl, add 1/4 cup sugar and 1/2 cup flour. Mix well. Using a fork, cut in the 1/4 cup butter. Mix well; until crumbly. Add to top of pie mixture.
  • Bake in oven until crust is golden brown, about 1 hour. Serves with Cool Whip or ice cream. Enjoy.

6 cups sliced apples
1 1/2 cups diced rhubarb
1 tablespoon lemon juice
1 1/2 cups sugar
1/2 cup flour
1 teaspoon cinnamon
1/3 teaspoon nutmeg
1/4 teaspoon salt
2 tablespoons butter
2 pie crusts

Steps:

  • ~ Preheat oven to 450 degrees. Place one of the prepared pie crusts in a deep pie dish. Toss sliced apples and rhubarb with lemon juice. In a large ziplock bag combine sugar, flour, cinnamon, nutmeg, and salt and mix together in bag. Add apples and rhubarb and seal bag. Toss to distribute sugar mixture. Place in prepared pie dish. Distribute the 2 tablespoons of butter over the apples and rhubarb. Roll out the remaining pie crust and place over the apples. Crimp edges and prick top with a fork. Bake at 450 degrees for 10 minutes then reduce heat to 350 and bake for an additional 40 minutes. Remove from oven and let cool.

I just found a lovely bunch of rhubarb at my local health food market and had to get some. I really like this sort of pie, it's always yummy a la cart or with some whipped topping. I used my Easy Spelt Pie Crust for this recipe.

1/2 cup(s) white spelt flour
3/4 cup(s) cane sugar
3/4 cup(s) xylitol
1/2 teaspoon(s) salt
4 cup(s) sliced red rhubarb
3 cup(s) sliced apple
2 tablespoon(s) vegan margarine

Steps:

  • Combine the flour, salt, sugar and xylitol. You can also use all sugar here if you don't have xylitol.
  • Cut up the fruit and put it into a large bowl and add the flour mixture.
  • Let it sit for 20 minutes. Preheat your oven at this point to 400'F.
  • Make your pie crust. I used my Easy Spelt Pie Crust. It makes 2-9" pie shells.
  • Put the bottom pie crust into your pie dish. Add the fruit and dot with the vegan margarine and cover with the top crust. I fluted and decorated mine with a flower and some leaves. I like using up the remnants of pie crust I have. Brush the pie with some beaten egg and sprinkle with a little sugar. This will make the crust crispy. Cut steam holes in the top crust.
  • Put the pie on a cookie sheet. Bake the pie for 15 minutes at 400'F, then turn the heat down to 350'F and bake for an additional 35-40 minutes. At this point check the edges, if they're getting brown cover the edges with an aluminum foil protector or make your own. I have a metal one that just fits on top of a 9" pie perfectly.
  • When the pie is done, it should be bubbling when you remove it from the oven. If you aren't sure if it's done, insert a knife into one of the steam holes, the fruit should be soft.
  • Let it cool on a rack for a 15 minutes. Serve warm with vanilla ice cream or whipped topping.
